Ingredients
2 eggs
a pinch of salt
70 g (4 tbsp / 2.5 oz) sugar
50 g (1/2 stick) melted butter
300 g (2 heaped cups / 10.5 oz) flour
7 g (1 1/2 tsp) baking powder
Lemon peel
Place the dough in the fridge while you prepare the filling
Filling:
400 g (2 cups / 14 oz) ricotta
2 egg yolks
70 g (4 tbsp / 2.5 oz) sugar
Lemon peel
Juice of 1/2 lemon
Mix well
2 egg whites
a pinch of salt
Beat until firm peaks form
Add egg whites to the ricotta mixture, fold in and mix well
Roll out the dough
Cut out 12 round pieces and roll them out
Assembly as in the video
Bake in a preheated oven for 30 minutes at 170 °C / 350 °F
Powdered sugar (optional)
