The audio portion is in Cantonese, my mother tongue, with English subtitles. "Dou Ban Jiang" is fermented soy bean sauce, kin to the Japanese Miso paste. It comes in spicy-hot, regular, or sweet varieties. I use miso paste interchangeably, adding "heat" or sugar as needed. Marinating the meat takes minutes to hours, depending on the size of the meat pieces. The actual cooking is done quickly in a flash. If you're a newcomer to Chinese cuisine, you'll find it easy and exhilarating!
