May I suggest the AgonLight2 and the Neo6502, they're ridiculously inexpensive as pseudo-retrocomputers go and there's plenty of stock. The only drawback is their smaller community and not-so-polished software offerings.
You nailed it with the NABU for Christmas - i never considered that before. Because they're new old stock, it would be like reliving a childhood experience! Opening your NABU on Christmas morning in front of the heat from the CRT TV with the fireplace channel :D
