I started making this recipe a few months ago to prepare for summer and it has easily landed in my top 2. I've literally made 9 gallons of it because it's been so popular with friends even at a young age. I can only imagine how the 1 year tasting will go for the 2 bottles I've tucked away.

Have made a jalapeno mead and found it way too hot and also don't like the "vegetal" taste it can impart. Part of the problem is that these and other hot peppers vary in scoville units making it very difficult to predict final level of heat. Also, I have made a "plain mead" and added one of my own smoked chipotles to a bottle for several days and found the heat level more controllable and love the smokiness of the chipotle pepper. Going forward, my future plan is to make a batch of plain mead and at bottling time, spike one 12 oz. bottle with a few chipotle peppers and allow to sit for a week before removing them. Will then use this "HOT" bottle to add to the plain mead at serving time; or any other mead with fruit etc.. incrementally to get the desired effect. Since everybody has their own preference to heat level, just the right amount can be added to their liking. Sounds like a good experiment anyway.

Watching this for the 2nd time and I completely forgot to share something interesting! I've been using 3 gallon fermenters to make my delicious/popular meads, and I sometimes try different things when I rack to 1 gallon fermenters in secondary. I put a cinnamon stick in a plain pineapple mead in secondary and COMPLETELY FORGOT to take it out when I pasteurized because it was a little cloudy. It is absolutely delicious and tastes like grilled pineapple dusted with cinnamon sugar that you can sometimes get at Brazilian restaurants. It's sooooo good!

Oh! Good news! I was wondering about this batch. I would love a tasting over ice in the future. I'm okay with a chilled mead, likewise, chilled stones, or just chilled in the frig! I'm obsessed with this recipe and was waiting for this review to try it. Really looks beautiful.
