Meats & Proteins:
2 packs chicken leg quarters
1 pound sausage
Dozen eggs
Vegetables:
5 pounds potatoes
1 head cabbage
2 pounds onions
5 Roma tomatoes
1 avocado
Canned & Packaged Goods:
Large can of crushed tomatoes
2 pounds dried beans
2 pounds rice
1 pound pasta
Tortillas (pack of 20)
Basil pesto
Organic ketchup
Dairy:
8 ounces mozzarella cheese
8 ounces cheddar cheese
Fruits:
Bananas
Apples
Snacks & Miscellaneous:
Small pack of raisins
Oatmeal
Peanut butter
Roasted Chicken Leg Quarters with Potatoes, Onions, and Cabbage
Ingredients:
1 pack chicken leg quarters
5 potatoes, cut into chunks
2 onions, sliced
1 head cabbage, cut into wedges
3 tablespoons olive oil
Salt and pepper to taste
Preheat your oven to 400°F (200°C).
In a large roasting pan, combine the potato chunks, sliced onions, and cabbage wedges.
Drizzle with a bit of olive oil and season with salt and pepper. Toss to coat evenly.
Place the chicken leg quarters on top of the vegetables in the roasting pan (or in another pan if too full)
Roast in the preheated oven for about 45-55 minutes, or until the chicken is cooked through and the skin is crispy. The internal temperature of the chicken should reach 165°F (74°C).
Remove from the oven and let rest for a few minutes.
Bbq sauce
2 C Ketchup
1/2 C ACV
1/2 C brown sugar
1tsp garlic powder
1 tsp onion powder
1 tsp salt
Combine all ingredients and stir well. Cook on stove top for 30 minutes to 1 hour, stirring occasionally.
Oven-Roasted BBQ Chicken Leg Quarters
1 pack chicken leg quarters
1 cup BBQ sauce (your favorite brand or homemade)
Preheat your oven to 375°F (190°C).
Place the chicken leg quarters on a baking sheet. Baste each leg quarter with sauce
Bake in the preheated oven for 35-40 minutes or until the chicken is cooked through and the internal temperature reaches 165°F (74°C).
Remove from the oven and let rest for a few minutes.
Breakfast Tacos
8 eggs, scrambled
1 pound sausage
8 Small tortillas
1 tomato, diced
1 avocado, sliced
Salt and pepper to taste
In a large skillet over medium heat, cook the sausage until browned and fully cooked, breaking it into crumbles as it cooks.
Once cooked, remove the sausage from the skillet and set aside. Drain any excess fat if necessary.
In a bowl, whisk the 8 eggs with a pinch of salt and pepper.
In the same skillet used for the sausage, add a bit of oil or butter if needed, and pour in the whisked eggs.
Cook the eggs over medium-low heat, stirring gently until they are fully scrambled and cooked through.
While the eggs are cooking, warm the small tortillas in a separate skillet over medium heat for about 30 seconds on each side, or until they are soft and pliable. You can also warm them in the microwave wrapped in a damp paper towel for about 20-30 seconds.
Evenly distribute the scrambled eggs and cooked sausage onto each tortilla.
Top with diced tomato and sliced avocado.
Enchilada sauce
1 TBS olive oil
1 TBS flour
Heat oil in pan. Add flour and stir well for 1-2 minutes.
Add 2 TBS chili powder
1 tsp cumin
1 tsp garlic powder
1 tsp salt
Stir well and cook for 1-2 minutes.
Add 1 C chicken broth.
Whisk to remove clumps. Cook for 10 minutes, until thickened.
Mix 1/2 of sauce to 2 C rice and 2 C beans (prepared). Stir well to combine. Add mixture into tortillas. Top with remaining sauce. Top with shredded cheese. Bake at 400 for 25-30 minutes.

Here’s the rest of the recipes that wouldn’t fit in the description! ❤️ Chili 1 lg can crushed tomatoes 2 onion 2 TBS oil 2 C beans 1 C chicken (optional) 2 TBS chili powder 1 TBS cumin Sauté onions in oil. Add spices. Cook for 2 minutes. Add additional ingredients and simmer for 20 minutes. Caprise Pasta Salad 1 pound pasta, cooked, drained, and cooled Basil pesto prepared 2 Roma tomatoes, diced 4 ounces mozzarella cheese, cubed 1 cup chicken, diced Combine all ingredients. Serve chilled. Bone Broth Remove all meat from a chicken. Place all bones, skin and juices from chicken into instant pot. Add 9-12 C water. Cook on high pressure for 3 hours. Store in airtight container in refrigerator. Rice and Bean Bowls 2 cups cooked rice 2 cups cooked beans 1 cup shredded cheese 2 tomatoes, diced 1 onion, diced Salt and pepper to taste Cook the rice according to the package instructions. If using dried beans, cook them according to the package instructions. Dice the tomatoes and onions. Set aside. Divide the cooked rice into serving bowls. Top each bowl with a generous portion of the seasoned beans. Sprinkle shredded cheese over the beans. Add diced tomatoes and onions on top. Oat Flour Bread Recipe 2 cups oat flour 1 cup rolled oats 1 1/2 teaspoons baking powder 1/2 teaspoon baking soda 1/2 teaspoon salt 1 cup plain yogurt (or a dairy-free alternative) 2 large eggs 1/4 cup honey or maple syrup 1/4 cup melted coconut oil or olive oil 1 teaspoon vanilla extract Instructions: Preheat your oven to 350°F (175°C). Grease a loaf pan or line it with parchment paper. In a large bowl, combine the oat flour, rolled oats, baking powder, baking soda, and salt. In another bowl, whisk together the yogurt, eggs, honey (or maple syrup), melted oil, and vanilla extract. Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix. Transfer the batter to the prepared loaf pan and smooth the top. Bake: Bake for 40-45 minutes, or until a toothpick inserted into the center comes out clean. Let the bread cool in the pan for about 10 minutes, then transfer it to a wire rack to cool completely.

I think it’s important to take a picture of your grocery list when it’s completed. I don’t know how many times I’ve left the actual list at home and been saved by having a picture of it on my phone video. Another good video Lori.!!

No one realizes how difficult it is to run a household, care for kids, and constantly be cooking and planning meals and budgeting and doing what's best for you family! You do this with such grace, thanks for sharing your content with us. In NYC, 60 dollars barely gets you some cooking spices maybe some snacks for the pantry, but if you shop to make an actual meal aka the basics (rice, pasta, deli meats, ground chicken, milk), you're looking at 200 dollars a week.

So refreshing to find your channel and know you are not using processed foods. I'm retired and have two grown children, so only cooking for me, but have to budget my $100 month, which is very challenging, but doable. Your helper is adorable ❤ I also taught myself how to cook 😊

When I hear that song early in the video I always think of content creator Andrea Mills. She was a mama to many, but died an untimely death from a quick cancer...it was horrifically sad. I still watch her videos for remembrance of her love for Mama's.

@berrypatch5583 I remember her fondly. It was so shocking when she passed so suddenly. The world lost a very special lady that week. Her husband seems to be doing a wonderful job in her absence. I still often watch his videos. I hope he is eventually able to find love again as Andrea wanted so badly for him to do. I don't know if he will ever be able to find a lady who can even come close to filling Andreas shoes, though. She was truly someone special

@jencash9595 one of my daughters suffered a serious trauma while very young and, as a result developed a serious problem speaking. We eventually accepted help from a talented speech therapist who worked with her and one other child, intensively for two hours a day for a few weeks. She went from being virtually unable to communicate with anyone outside our immediate family to never having another problem communicating verbally. She is pushing 40 now and still going strong with a very successful and satisfying career.

@@jencash9595 lane has been improving so much! His speech teacher told us last month that he has actually gotten back on track and is hitting all age appropriate speech milestones. I’m so grateful. The speech has helped him, but we also did some intensive work with the chiropractor on his reflexes. It’s called brain balance therapy and I would highly recommend you look into it. I think it really helped Lane.

I have used a coffee grinder/herb grinder to grind the oats to make oat flour. These are great recipes! Save the bean broth to make a vegetable soup or chili. I add chopped onions, cilantro (dried), and cumin to beans.

@@homemadesimplewithlori I don't think the broth will make the meals gassy- I think the actual beans in general is what causes the gas. I have used both instant pot and a slow crock to make beans ( I cook my beans overnight in slow cooker) and they are ready in the morning- kids love to eat a hot/warm bowl of beans with cheese on top. I enjoy watching your videos and being real.

Praying for Chris. Also, Barbara O'Neal talks about putting castor oil on the liver. Put the oil on a castor oil pad. Since it's so thick, let the oil penetrate in the pad. It should take around 30 minutes. Just let it sit. I really hope that helps. Or you may can just type castor oil on the liver. Have a blessed weekend ❤

Save about $2 by making the flour tortillas. A dozen costs less than 25 cents. 2 C AP flour, 2T any fat, 2/3 C warm water. Salt optional. No need for baking powder as some recipes call for - hey, they are flat breads. Make 12 balls, let rest 20 mins. and roll out on floured surface. Fry in a dry skillet quick assembly line style by rolling out as the previous one cooks a few seconds on each side. Hang a tea towel on the drawer beneath and let it hang down the cabinet where you're rolling out the dough to catch the flying flour so no cleaning the cabinet after.

For your breakfast tacos you can add the eggs directly to the sausage after it is cooked and mix them together. You can also add tomatoes and onions to the mixture and you only dirty one skillet then too.

I loved how you made chipotle bowls! I’ve been doing that for a few years for the same reason lol. Sometimes I layer them into individual containers and freeze for lunches. Other times we have it for a big family meal where everyone makes their own bowls. Also loved seeing the salad shooter. I have an ancient one that I use to shred all of our cheese, zucchini, and other things. 😊

I enjoyed that you didn’t use processed food! So much better for you! You can stretch basil pesto by mixing it with spinach and or garbanzo beans. You can even make your own with spinach, dried basil and cashews and or garbanzo beans to make it creamy:)

Maybe consider making a quick bread such as bannana bread for breakfasts. You can also substitute oat flour for up to half of the ap flour called for in any recipe. It helps to allow the batter to rest in the refrigerator for a few hours or overnight before baking. That helps to avoid under hydrated oat flour, which can cause an unpleasant texture in the finished product. Start out small and slowly work your way up to the maximum amount of oat flour that your family will still enjoy eating.

My chickens have picked back up laying i love the idea of the breakfast tacos . My boys would pick sausage gravy and biscuits . I love a good chili even just beans and no meat i dont miss it with all the beans. I hope you have a great week.

When I was a kid in the 1980’s, our family of 4 had a food budget of $40 a week. By Friday every week, we were out of food. You’re doing a great job.

Good job Lori. Every meal look delicious. I love that you used all Whole Foods. I live in Idaho, and our grocery prices are not your grocery prices. Apparently living in Idaho means that you will pay more for everything since we are at the top of the Pacific Northwest. Our sausage is more like six dollars as an example. Knowing that, it does not stop me from believing this would be a great option for our family.

All the meals look really good I am currently on the autoimmune protocal diet and there is not much that I get to eat I get meat, some veg and fruit. I am currently free of gluten, dairy, soy, eggs, nuts, corn, potatoes, rice, beans, sugar, and all nightshade vegetables, and oats it has been rough but soon I will start adding a couple things back I will start with eggs, rice and potatoes once I have rice back in I can have all the gluten free things in my diet so I am excited for that day to come and I did buy a bag of gluten free flour so I will be glad to give bread a try. Hang in there. I did the AIP diet for my autoimmune disease. So worth it! After adding back foods, the main things I cannot have are gluten, refined sugar, and dairy. I eat mainly Paleo now. You can do this!!! 🙏🤗

My family loves a nice rice and bean bowl. We season our rice to take it up a notch. We'll usually add seasonings to make a Mexican rice, a Spanish rice, or just a taco rice. We just add it to the water when cooking the rice... no additional effort needed.

I love that you show and talk about your hits and misses, so relatable! Some of my favorite dishes are the surprise hits, something I just sort of throw together without following a recipe and the whole family loves it. Like a couple weeks ago I made a side dish of orzo with roasted chickpeas, lemon and garlic, and even my somewhat picky wife and very picky kids went crazy for it. The issue then is trying to remember what all I put into it. 🤣🤣 I've tried making a few homemade BBQ sauces but the picky eaters never go for them...they'd rather have their Sweet Baby Ray's original, or the Aldi brand knock off. Same with baked beans, too. I think my homemade versions taste great, but nobody else does except my teenaged son who will eat just about anything. 😭 We do have a recipe we call "Grandpa Don's steak sauce" (my grandfather's recipe) that we make on occasion for more than just steaks, though, and my wife does really love that. I don't have the recipe handy at the moment, but it's a pretty unusual combination of Italian dressing, ketchup, Worcestershire sauce, brown sugar, and ground mustard, plus a smattering of other ingredients as well. It makes a very thin marinade but we reduce it down and it makes an amazing sauce as well.

Our favorite BBQ sauce is Stubbs. During the summer months, you can usually get it on a good sale. No HFCS! We love the sweet heat one!

Aldi's gluten free pasta is the best. My whole familyeats it and no one has said a thing or knew when I switched over. It also holds up in pasta salad unlike the chikpea kind. I add some unflavored protein powder to my dressing to help boost the protein.

If you need gluten free pasta for pasta salad, use Tinkyada brand brown rice pasta. That's the only brand I've found that works. It is more expensive, but the extra cost is worth it for pasta salad (the less expensive brands work fine if you’re serving it hot). And be sure to overcook the rice pasta by a few minutes, because once it's cool it will be firmer than it was when it was hot.

Two cheaper recipes....1. Hamburger and small pieces of bread that is going stale make a really good crockpot meal. Put six boullion cubes in 2 cups of hot water to dissolve and a couple of teaspoons of cornstarch. Bake meatballs in oven first then put it all in crockpot over onions for all day. Pour over mashed potatoes. So good. 2. Taco packet from Aldi, salsa from Aldi, kidney beans, corn, put in crockpot all day. Use as a dip by adding cheese, or make into burritos, tacos, coney dogs. Very filling too.

Aldi oats aren't gluten free. If you want it to be gluten-free make sure you specifically use gluten-free oats. It has to do with how oats get harvested. At least I'm pretty sure that all the oats aren't gluten-free trader Joe's does have an affordable gluten-free option.... Compared to other gluten free oat brands. Just mentioning for anybody that happens to need to be very careful. I will say though that aldi crispy rice cereal are gluten-free but the regular rice krispies brand cereal is not gluten free.

This is Awesome! This is my type meal! Realistic meals! This week I am cooking a 1/4 of a HUGE ham that my husband received at Christmas time from his boss I’m cutting some off on the side of the ham and save for red beans and ham, we will have baked ham slices today with Mac n cheese, broccoli rice casserole, bread and yams Tomorrow, leftover ham slices with green beans and rice dressing, green salad. (For 6 Romain lettuce I paid $3.96) Tuesday, Baked potatoes with cooked diced ham and toppings. 🥗 side salad. Thursday: red beans and rice with ham (Cooked in the bean) 🫘 Ham and potato soup on another night if we have any ham left.
