This week's video is all about my love for Pan Mee Soup. I love a good delicious hot bowl of Pan Mee Soup serve with minced pork and mushroom, fried anchovies, and fried shallot. Cooking Pan Mee Soup at home can be a little messy and hard work, but the rewards are worth it.
When I was a kid, I think about 7-8 years. My Parents always bring me to Hankyu Jaya or Batu Road in Chow Kit Kuala Lumpur to buy my school uniform.
Both shopping mall Hankyu Jaya and Batu Road no longer around, but I have many memories growing up and shopping for my stuff there.
After shopping, we will go to a hawker stall behind Hankyu Jaya and grab a bowl of delicious Pan Mee Soup. Call me crazy, I still vividly remember the taste of the Pan Mee Soup. The place always packs with patrons, but anyhow we managed to sneak in.
The hawker stall still around these days, but it doesn't taste the same anymore. And the service isn't that great.
Anyway, this is my recipe to break my craving for Pan Mee Soup at home. Normally, My hubby and I will make it together. He will be the one to clean and wash. But it is a fun activity that we enjoy together.

Pan Mee Soup - How To Make Pan Mee Soup Recipe
Soup Base ingredients:
50g Dried anchovies
1 tsp White pepper
2 cubes anchovies stock
150g chicken parts
2 litre water.
Seasoning:
salt to taste
sugar to taste
white pepper
Minced Pork with mushroom ingredients:
a. Marinate minced pork:
160g minced pork
1/2 tbsp shaoxing wine
1/2 tbsp oyster sauce
b. 3 x Dried shitake mushrooms
- Wash the dried mushroom & soak until soften.
- Once soften remove the stem and squeeze out the excess water.
- Slice thinly the mushroom.
c. Seasoning:
1 tsp dark soy sauce
1/4 tsp salt
1 tbsp oyster sauce
1/2 tsp sugar
A few dashes white pepper
d. Other ingredients
2 tbsp cooking oil
1 tbsp minced garlic
Pan Mee Noodle:
200g-250g all purpose flour
1/2 tbsp tapioca flour
1/2 tsp salt
½ cup water
1 egg
Some all purpose flour
Toppings:
fried ikan bilis
fried shallots
some spinach
