When you first get a new wood fired pizza oven - there are some important steps to caring for it, before you cook your first pizza. You need to burn a number of small fire for longer periods in order to cure the bricks and mortar. This prevents damage from thermal shock and any water that may be trapped deep in the mortar.

Curing simply means removing the moisture in the mortar. Curing will significantly help to protect the cooking ability and the life of your oven. You will be starting small fires and repeating daily for 5 days.
Start a small fire and let it burn throughout the day (4-5 hours) maintaining temperature:
Day1. 140F/60C
Day 2. Repeat 215F/100C
Day 3. Repeat 300F/ 150C
Day 4. Repeat 400F/200C
Day 5. Repeat 480F/250C

The hardest part would be having the patience to wait 6 days to start cooking. I love how you make air passages and space between the logs to get the fire going. It amazes me how many people I've been around who don't get that concept 😊

Yes we ditched the metal one - this brick oven is so much better. New videos with it coming soon.

What kind of wood you have to use for cure ? I just purchased the same oven yesterday and what kind of wood you need to use for make pizza ? Thank you

Maria Granata He said birch, with pine and cedar kindling.

@@mjrussell414 wouldn't recommend any of those, you want a slow burn to dry out the structure of the oven. You also don't use pine as it produces a lot of creosote, toxic for cooking.
