My family, being from Vietnam, adds fish sauce to these omelets. Would highly recommend trying it, the flavors are exceptional. You can taste for seasoning by cooking a small amount of the egg and seafood and adjust before cooking the big omelet.

OMG! I made this dish, Daddy Lau’s Spareribs and Black bean sauce and his boiled gai lan tonight! This was great. I used Chilean Sea-bass for the fish and we couldn’t stop eating it. Thank you for sharing, Randy. We always look forward to this show. 好食!

i think to flip the egg nicely you can try the following: 1) Put the egg on the plate(like what he did at first) 2) Flip the empty pan upside down, and put it over the plate with egg 3) Press them together with one hand holding the bottom of the plate, and the other holding the pan 4) With the hand still pressing the plate and pan together, flip the pan back to upright 5) Remove plate

This is pretty good but pops puts oil in the pan before flipping.

@@Dudeofcheese one option is to use cooking spray or an oil sprayer (I found mine in dollar store) so they don't pool together and drip. Another way is to use the pan/wok to toss a flip and add oil when lifting it, but afterall, quick motion is the key.

I use a pan lid for flipping instead of a plate, the handle of the lid makes it so much easier.

@daddy Lau on flipping the egg 😁 movie magic made us believe that pros do it best, but they just as human as anyone else! I love the authenticity. Food is very forgiving especially when it’s delicious 😋 I don’t mind forgoing looks for taste, but to picky eaters, it helps!

it's fascinating that in chinese cuisine there is a difference between stir-fry and pan-fry! when I cook it's just "don't burn the food"!!! :D :D :D I made daddy lau's stir-fried green beans and eggplant with garlic sauce and my family loved them! even my eggplant squeamish nephew approved. thank you!

Our fams usually use oyster but nowadays there's an issued that mercury / heavy metal can be easily found inside oyster, so we no longer eat it as often as used to be. it's good to know that we can change it to fish. Btw can your dad teach us how to cook fried hor fun? Please..

i always add salt, pepper, oil, light soy sauce and a bit of water to my egg for pan frying. it makes the egg fluffy and beautiful! i think the most common ingredients for this kind of eggs are prawns (fu yong dan), or minced pork meat (rou cuo dan).

Thanks again for sharing your recipe. What I did was put the pan on top of the plated omelette (1st) then flip it hence the omelette did not break. Again, many thanks.

woww this reminds me so much of my mums cooking! Definitely going to make this soon. Also, you are having homegrown goji berry soup!? Would you be able to do a video on that (preferably with a veggie option). My mum used to make it all the time when I was a kid. Now I live 6000 miles away from her and haven't seen my family for two years because of the pandemic... :/

in order to get this to work, fluff the eggs in the bowl adding all the items (ingredients) you want in the bowl for the omelet. The trick is in the number of eggs used for the number of guests and making smaller omelets. A wok works much better but only pour a little oil and make sure the sides of the wok have oil as well. It helps when flipping.

The oyster one in Taiwan would be 蚵仔煎 (oyster-fry), but there are similar ones in mainland as well. 厦门 (Xiamen), a port city almost exactly a thin straight across 金门 (the Jinmen Islands) of Taiwan, cooks the same type of thing.

Wow, the omelette is so beautifully done! This one really not easy and need to use skills. This is the 1st time that I know can use fish to cook an omelette. I always have a problem cooking the whitefish as it always does not taste nice. Now I can try to use it to cook an omelette. Thanks, Senior and Junior Lau for sharing. Mm kor sai! For the question about getting the omelet nice and fluffy, besides beating the eggs until you see some biggish bubbles, you should also add milk (or water, if no milk). Not so much that the eggs lose the goopiness lol, but enough that you see the yellow get paler. After pan-frying, the surface of the omelet should have a bit of bite while the insides are fluffy.

You know what would be great? Recipes for traditional Chinese soup! The language barrier really prevents most ABCs (like me unfortunately) from learning what ingredients to use. I've only been able to discern a few ingredients like goji berry, chinese round almonds, buckwheat, and a few others. Please ask Mr. Lau to teach us! Thank you!

You can get fluffed up omlettes if you cover up the pan for 30-60seconds before the flip....the top also gets cooked a bit more like that ....

Have to try this one. I have tasted all sorts of omelettes like oyster, ham, chorizo but never fish. My mom also cooked something like pickled radish omelette that goes well with plain congee. Omelettes are great, no matter the aesthetic outcome is.

We always use frozen silver fish found in the freezer section in asian grocery. That's the traditional fish to use in HK. Its good that daddy lau is giving an option, but cantonese egg omelet is also tasty with shrimp or char shu. A quick dish on a weekday

Love how this video features Chinese cooking alchemy: eg. coating the fish with cornstarch and poaching in water. Question: instead of flipping such a big omelette, could you instead drop some water at edges of the omelette to create steam and then cover the pan so that the top cooks with steam while the bottom continues to fry?

Please share the gojiberry soup. 🤤Didn't know kau kei = gojiberry. Yeah in Malaysia my mum typically cooks either with onions or long beans. At times we add Chinese sausage! Super yummy!

Position the pan on top of the omelette, then together flip quickly. This will not break the omelette :)

Wise Shifu Lau, I recently found your channel, since my grandparents pass away before I was born, some of this recipes are food I enjoyed but did not knew how to cook. My uncles and aunts know to cook then but did not have the exact recipes. Any plans to cook Xiao Long Bao? Best wishes and Success.
