This vegan bacon is based off the classic seitan (washed flour method) plant-based meat substitute recipe, and is made of the starchy water from the washed wheat flour. Vegan Bacon Recipe:
Ingredients:
4 cups bread flour (strong wheat flour)
1 cup water
2 tbsp vegetable bullion/vegan chicken stock
2 tbsp mushroom seasoning
2 tsp garlic powder
2 tsp onion powder
2 tsp smoke powder/liquid smoke
2 tbsp oil (extra virgin olive oil)
1 tbsp tomato paste/puree or marmite/red miso paste
1 tbsp red wine (optional)
1 tbsp soy sauce
2 tbsp smoked paprika
Sriracha (optional)
1 tbsp maple syrup/Worcestershire sauce
1 tsp salt
Methods:
1. Form a wheat flour dough ball, rest it under cold water for an hour.
2. Knead the dough under water until you have a seitan dough. Set it aside.
3. Rest the water until all the starch sinks to the bottom. Remove excess water on top.
4. Stir, and transfer 2/3 of the starchy water to another bowl. Season them accordingly.
5. Make a crepe. A. Pan fry until golden brown B: If it broke, take it out, cut it into pieces and fry until golden brown.
