Recipes:
Millet in the Instant Pot
1:2 ratio grain to water (i.e. 2 cups millet + 4 cups water), high pressure 10 mins. & natural release
Lentils loosely based on this recipe: www.foragerproject.com/recipe...
1 onion
3-4 cloves garlic
1 cup brown or green lentils
2 cups veggie broth
1 tsp. garam masala
1/2 tsp. turmeric
1 tsp. kashmiri chili powder (or omit if you don't like spice)
2 tsp. mushroom powder
2 TBL tomato paste
1 cup soy milk or coconut milk
Saute onion & garlic before adding lentils & veggie broth. Add spices and let simmer for 30 mins. Check to see if lentils are nearly done cooking. Once they are nearly done, add in soy milk and let cook 5 mins more. Serve with a fresh cilantro and a squeeze of lemon.

Cashew cream:
1 cup cashews
1-1 1/2 cups water (I used 1 1/2)
Soak cashews for 10-15 mins. in boiling water until softened. Drain and add to blender with fresh water. Blend until smooth.
Cashew Ranch:
1 cup cashew cream (from above)
1-2 TBL apple cider vinegar (or white vinegar)
1/2 tsp dill
1/2 tsp dried parsley
1/2 tsp garlic powder
1/2 tsp onion powder
+ pinch of salt
Stir thoroughly until combined, taste, and adjust seasonings if needed.

3:30 You can absolutely regrow that lettuce! We do it all the time. Put the roots in water or you can even just straight up plant it. We usually peel off and eat most of the leaves saving a small inner portion, put it in water till you see it growing than in dirt if you like. You can easily double your return on the cost of that lettuce. Also, When you trim the ends of your bok choy you can put that root end in water and it will sprout as well. You get more of bok choy greens growing from it than a whole new bok choy. Even cut herbs can sprout and be regrown and planted. Plants just want to grow and treated right you can stretch your dollar.

Maddie, love the straightforward system, and the "have a meal ready by the end" is now that you've said it, I'm flabbergasted I haven't been. So many times after a prep I'm tired (and a bit hangry) -- right when the fam starts nosing around "You've been in the kitchen so long what's to eat?" Aaaah. As always great info and tips!

My little trick to make the cashew ranch even better is to use black salt in place of plain salt. Just like in tofu scrambles, it adds that little bit of egg-i-ness that you get from the mayonnaise in regular ranch. Also, this is about the most helpful video I've ever watched. Everything in here was super helpful to this overwhelmed mom just trying to eat healthier.

You're welcome! Let me know how it goes for you. 😃🌱 I do think it's helpful to plan a couple meal ideas when choosing what to batch prep. (Unless you're really good at looking at the fridge and whipping something up based on ingredients!) So I try and choose a couple recipes that use the same ingredients... i.e. like the millet I knew I would use for breakfast and then could also be used as the base of salads or in buddha bowls... then it really helps to narrow down what to prep. It's my absolute fave!! I use it on so many things. Add a pinch of salt and it's ready for any savory dish. Add a splash of maple syrup and it's perfect for something sweet. Nutritional yeast will make it cheesy... the possibilities with that sauce alone are endless. 😅😅

This is such a good meal prep video! I like the variety. The idea of cooking some veggies before hand so you can just toss it in a pasta like that is so good!! I'm definitely going to try that. Also going to try cooking the pasta in the instant pot. The cashew cream is next on my to do list! Yum!

So glad you enjoyed!! 😃 Just as a note with the IP pasta... it can get kind of messy with the spray (and of course, be careful as the steam/spray is quite hot), but I just stopped worrying so much about the mess and let it spray a bit, and then do a clean up after. I still think even with all that it's easier than stovetop. 😆😆

Can't believe I forgot to add that one to the description box! 🙈 No link, but here's what I used for mine: 1 cup cashew cream + 1-2 TBL ACV, 1/2 tsp dill, 1/2 tsp dried parsley, 1/2 tsp garlic powder, 1/2 tsp onion powder & pinch of salt. Yay! So glad you enjoyed. 🤗 For this cream in particular I wouldn’t use plain white beans. I mean technically you could, but the flavor and texture wouldn’t be very good! Perhaps half white beans and half cashews if you’re trying to cut back on fats would be better. 😊😊

Hi Maddie! I tried to regrow a lettuce once or twice but it grew so slow haha but more importantly, the taste was so bitter. I have no idea why. Thanks for your videos, they are so satisfying to watch and so useful, great suggestions always!

recipe I use for vegan ranch: 1/2 c vegan mayo garlic powder and/or fresh minced garlic onion powder dry mustard dried oregano nutritional yeast dried dill dried basil dried parsley s & p paprika or smoked paprika a small cupful of apple cider vinegar vegan milk

We've had great sales on red peppers & I stocked up big-time. Your video inspired me to prep 4 of them by roasting as you did, they're just like the expensive ones that come jarred! I did the same to some green peppers, but the skins didn't come off as easily so I just gave up on removing. That's ok, I'm freezing them for future recipes. BTW, I also freeze diced or wedges (like for fajitas) of green & red peppers, as well as onions, raw. I figured if the frozen food section can do it, so can I! Saves a lot of time & money so the peppers don't get old I love your channel, stumbled across it few weeks back. I hear you on the I-pot, I have two of them & can't live w/o them! Before they were invented I had a stove-top pressure cooker. Hoping to catch your next meal prep course!

I am enjoying this meal prep. I like that you showed the different ways to use the prep. I made the cashew cream with half cashew and half cannellini beans but it was not creamy 😢

So glad, Terry! Oh no that’s too bad about the cashew/ bean sauce. Yea I do think it’s much better with only cashews. Can you add the sauce to a cream soup (like butternut squash soup or tomato soup) so that it doesn’t go to waste? It will be well hidden in a soup. 😊😊

You make cooking seem so easy, will definetly gonna steal your batch cooking formula. Can you tell us how many minutes you cook the pasta in the instant pot? I bought that at Costco and it definetly cooks slower on the stove compared to spaghetti type of pasta.

Yay! That’s great to hear. 🤗 I did 2 minutes high pressure for this brand, and then a quick release pretty much right when it’s done (I wait maybe 3-4 mins after you hear the “off” beeps). It can get kind of messy with a quick release so if you can do it near a vent, and then I just let it spray a bit knowing I’m going to have to clean it up after. 😂

Forgot to add… once it’s done I drain the water and do a cold rinse. That will stop the pasta from cooking further. It’s slightly al dente when it’s done, which makes it perfect for reheating because then it won’t get mushy. 🤗

This is so great, different cuisines, small list of ingredients we can reuse entire week, simple recipes. Could you please make similar one with all 3 meals for the entire week ? I have a hard time grocery shopping and planning meals without wasting both food and money. This is so very good and I am getting greedy 😂

We’re not vegetarian or vegan, but love the many ideas and we do eat meat free a lot. Keep up the good videos Maddie. I wondered if you use an air fryer. I’ve discovered this a great way to get tofu crispy and it doesn’t heat up the kitchen.

I always thought they looked too small for me. 😂 But I have been interested ever since seeing ones that are multi-function toaster/ mini oven/ air fryer. Would help if I could replace one of our appliances and our toaster really isn't that great. 😋

@@LetsEatPlants I actually have an Instant Pot Duo Crisp, so it is my IP and air fryer all in one. It came with two lids, one for IP and the other is the air fryer lid. The only drawback is it’s smaller size, but I make it work for us.

@@LetsEatPlants I bought it when I fried my old IP with overflow of hot chocolate.🥹 When I looked up a new one, the Due Crisp wasn’t much more than the regular IP, so I got it. This air fryer lid fits right on top of the instant pot. My main pot has an air fryer button that when pressed, I can adjust the temperature and time for frying. I’ve found the best results using a silicone air fryer basket sitting on top of a metal rack inside the stainless steel pot. This raises it closer to the coils. Silicone has ridges in it, so I’m having good crisping results. The silicone is 8.5 inches diameter, so that’s my surface. I do have to make things in batches, but as I said it works for us. Tonight I’m making Buffalo cauliflower that I use thick sourdough spiked with hot sauce for a batter on it. I put it in a bag, then after coating, add panko bread crumbs to make it crispy. This s also easy to make in oven. There are many recipes out there.

We are so lucky they are available by the case at a lot of stores near us. Last one had 18 mangoes for $12 CAD. Usually we split the case with my in-laws. 🤗🤗 I would check Asian markets if there are any near you!

@@LetsEatPlants I grew up eating diff millet's & I was told "Sorghum" is the "king of Millet's." I personally like Amaranth & Kodo the most! Here in California I buy them in bulk at Rainbow grocery store. Thanks for the article it's very informative, thank U for sharing:) Diff grains that I know off are wheat, rice, oats, rye, corn, quinoa, bulgur, Farro, Freekah, Spelt, Buckwheat & Khorasan. Diff Millet's are Sorghum, Pearl millet, Foxtail millet, Finger millet, Fonio millet, Browntop millet, Little millet, Buckwheat millet. Amaranth & Kodo millet.

This was really inspiring! I make the cashew cream with the rest of the ingredients for a ranch salad dressing but from your video I learned it’s better to just make the basic cream because it’s so much more versatile! Loved the pasta sauce idea!

Great question! If it's sliced small (bite sized pieces), I noticed it's really only good for 2-3 days. These spears are good for 4-5 days, so that's why I keep them larger and cut them into salads the day I want to eat them. (Also side note, I think if you leave the skin on it lasts just a bit longer.) 😊😊

Thank you! Interestingly, I didn't grow up with a microwave and have always been very anti. However I do trust Dr. Greger's scientific-based info and he has said they are perfectly safe to use. nutritionfacts.org/video/are-microwaves-safe/ You can always reheat things on the stove-top/ toaster oven if you prefer! That's how I used to do it. 😊

Good question! It’s only because I don’t often buy organic squash/ zucchini, so I feel peeling it helps remove some pesticides. I don’t always peel it, there’s definitely a lot of nutrients in there! 😊😊

Oh no! 😂😂 No worries.. I would just leave it out of this prep and use another veggie for the nourish bowls. If you're talking specifically about the sweet potato dessert ideas, avocado makes a good substitute! Check out this recipe: detoxinista.com/healthy-fudgsicles-dairy-free-soy-free/ I would sub the water with soy milk (or another plant milk of your choice) for extra creaminess. 😋😋

@@astrochakrasynergysystem1480 Ahh ok, thanks for clarifying that! 😃 For the main meals, yes I would do something like potato if you want another starch, or you could just skip it completely since you have the millet as a starch. So like in the bowl example I gave for the first meal, I would just leave it out and have the lentils, millet, zucchini & prob would add broccoli there instead of the sweet potato. 😊😊😊 Potato does make a great substitute though, so if your husband likes those, I’d roast some the same way! Super easy to bake a few and eat them throughout the week. 🤗

Hey there! I did read it a long time ago (How Not to Diet more recently) but tbh I clearly don’t do all of the things that Dr. Greger recommends, even just with food recommendations. Some things are simply because it’s not always practical. I try to incorporate things that I know are healthy based on his findings, but this channel is definitely not 100% Dr. Greger compliant! I’m sure I’ll be making more daily dozen videos in the future but it’s not the sole focus of this channel. Hope that makes sense!
