Your comment about sugar reminded me of some old family stories about sugar. I am 70 and remember at 5 years old raised on a dairy farm my mother had her fall apple canning with two neighbor moms. All three farms had 3 to 4 apple trees. (Literally the Johnny Appleseed story) We had large copper cook pot overa fire. Everyone brought apple harvest. Crank apple peelers, cook down and can the applesauce. Over 150 quarts. This was primarily the source for sweetened recipes . My Grandmother made wine which takes a lot of sugar. She. Would barter bouquets of flowers and the promise of a bottle of wine with the city women to get enough sugar.

Awesome video. The struggles with your garden could be resolved with locating some more attachments for your tractor. Not having the time and not a lot man/woman power and having very small children , the Farmall Cub tractor was developed for that exact reason. I have the same struggles on my place, minus all the help. With the proper tractor attachments most of the planting , weeding, and harvesting task can be accomplished with less sweat and stress. There are some small two wheel tractors such David Bradley’s and even single wheel power driven equipment that can be acquired and restored and and those of us that follow you know you are quite skilled at repairing and restoring farm equipment. I was raised and farmed with Farmall tractors and currently trying to acquire 3 of them. I currently own 7 David Bradley’s and quite a few implements and a couple single wheel powered equipment. Great video thoroughly enjoyed.

You dont need sugar or oregano the sweetness comes from the carrot and celery and olive oil. Also the bechemel will bring a mild sweetnes but all together it will cut the acidity. In italy they dont use ricotta either thats what the bechemel is for it would be better to put mozarella and bechemel instead. It was impractical because there are so many ingredients but it could be done if thats all you do all the time. Alot of these folks make and store cheese or hams or tomato sauce. They barter for the items thay cant make or grow like salt or flour but it can be done my friend. I wish i could invite you guys to oaxaca mexico where they still do this. You think there was a lot of ingredients in a lasagna imagine a mole negro and some people still dont use a blender or appliances.
