10-Minute Thermos Kitchari Recipe

Welcome to Hot Lunch America, I'm Kalpana Shere-Wolfe, an Integrative Physician, and Ayurvedic Practitioner. I am delighted to have this opportunity to share this wonderful recipe with you for an Indian staple called Kitchari. The dish consists of rice and lentils and the twist is that we're going to be cooking it in just 10 minutes, and we're going to use a thermos.
When I first heard of this method and I tried it myself I immediately thought, "This is genius! Everyone should know about it!". I've cooked it myself about 100 times and every time I open the thermos lid, I smile, it smells and it tastes like it just came off the stove!
The recipe itself calls for Mung Dahl, which is, of all of the lentils that most easy to digest. In fact, in India, parents will often give it to their infants and toddlers as their first solid foods. The spices that we use in the recipe not only taste great but also have a lot of health benefits. For example, ginger tastes great, but it also has significant anti-inflammatory and digestive properties. Turmeric is also well known as an anti-inflammatory. And cumin works as digestive aid. And finally, ghee clarified butter, which is basically butter minus the milk, solids, and water; is revered in many cultures for its health benefits. As it turns out, ghee is one of the richest sources of butyrate, a short chain fatty acid which has been shown to be important in various aspects of digestive health. The original idea for using a thermos to cook Kitchari came from Dr. Stuart Rothenburg and the Vaidyas at Maharishi Ayurveda.
You'll be amazing at how easy it is to cook a hot nutritious lunch, not only for yourself but for your whole family. Be prepared to be amazed, this recipe is a keeper!
10 Minute Ayurvedic Lunch: Thermos Kitchari Recipe
Yields: two 12-oz. thermos meals
Prep Time: 10 minutes
Ingredients
¼ cup yellow mung dhal (washed and soaked)
¼ cup basmati rice (washed and soaked)
(Tip: soak the rice and dhal overnight in warm water and one tsp. of yogurt, which makes it a bit easier to cook and digest.)
1-1.5 cup of fresh vegetables
Try green beans or zucchini and carrots, but any seasonal vegetable will do as long as it is fresh.
½ inch piece ginger root, finely shredded
¼ tsp. turmeric powder
½ tsp. cumin seeds
2 tsp. ghee
Salt and black pepper to taste
2¼ cups water
Add more water for soupy kitchari.
Insulated stainless steel thermos, 12 oz. or larger
Directions
Strain and rinse rice and dhal.
Melt the ghee in a large saucepan on medium heat. When it is hot but not smoking, add the cumin seeds.
After the cumin seeds turn brown, add the shredded ginger. Add the turmeric and some freshly-ground black pepper. Stir quickly.
Add the rice and mung dhal. Add the water and bring to a boil.
Boil vigorously uncovered, for 5 minutes.
Add the vegetables to the mixture. Boil uncovered for an additional 2.5 minutes.
Add salt to taste.
Using a large serving spoon, pour the entire mixture into an insulated thermos and quickly close the lid. (Tip: pour the mixture into the thermos over the sink, as turmeric will stain.)
Pack the thermos lunch, allow the Kitchari to continue cooking for about four hours. Enjoy your freshly-cooked hot meal - it will taste like it just came off your stove!

Should the thermos be smaller because like sometimes I’ll put oatmeal in there but it’s not hot for hours I’m wondering if maybe because I don’t fill it up all the way mine is 24 ounces - Stanley - Apparently Stanley and thermos brand are the hottest/heat retaining And some people even say you should prep the thermos by putting hot water in it for 5 to 10 to 30 minutes What is the brand used here? And I wonder what I’m doing wrong When I just put hot water and ginger in there then it stays hot for a really long time
