To be honest.. on my recent visit abroad I just purchased a second hand local one and it worked just fine.. my suggestion for you to buy any standard brand that also has sourdough option
You can use chakki ka whole wheat atta. You can omit milk. The mixing of yeast and salt if you are making bread immediately does not matter. This is another myth. It has nothing to do with sinking of the top of the bread. That has more to do with the excessive moisture/ water or over proofing of the loaf that rises too fast and collapses. In contrast the salt may actually prevent this rapid rise and following colkapse. This video is full of rubbish information. The measurements and results are definitely ok, but not the explanation.
