This video demonstrates how to make no-knead multigrain bread in a “poor man’s Dutch oven” (PMDO) and long covered baker (LCB).
Bread making doesn’t get any easier than this… no mixer or bread machine (I’ll make it in a glass bowl with a spoon)… no-kneading (Mother Nature will do the kneading for me)… It doesn’t get any easier than this.

The recipe (for those who would like a quick summary): 1. In large bowl, mix: • 16 oz (i.e. 475 mL) cool tap water • 1.5 tsp salt (use less if you are salt-conscious) • 1/4 tsp instant yeast • 1 tbsp sesame seeds • 1 tbsp flax seeds (ground flax may be healthier) • 1 tbsp EVOO (extra virgin olive oil) • 3.5 cups whole wheat flour (or 2 cups bread flour + 1.5 cups whole wheat flour) • ½ cup oats 2. Cover bowl with plastic wrap, then let it sit (i.e. proof) 8-24 hours at room temp (e.g. overnight) 3. Oil/grease bottom pan 4. Mix dough a little (to de-gas/pull/stretch the dough, but whatever you do, don’t call it kneading!), making sure to scrape the sides/bottom. 5. Sprinkle oats on top of sticky dough, roll dough ball around so that oats mostly coat the surface. 6. Transfer to bottom loaf pan, cover it with same-size top loaf pan and use two metal binder clips at each end to secure the top and bottom pans together 7. Let dough sit (proof) in pans for another 30-60 minutes 8. Preheat oven to 400F, move top rack to lower third of oven 9. Bake for 40 mins at 400F with top on, then another 3-15 minutes with top off to brown the crust

Didn't have rolled oats on hand (as I thought), so substituted polenta flour. Will let you know how it turned out. Also used unsweetened applesauce in place of the oil as I know that works.

Hey Steve, I live in Nicaragua and I had never made bread before. I made this bread yesterday and baked it today. It's fantastic! I didn't think it would turn out because of the extreme heat and humidity here, not to mention I made the dough in the middle of a rainstorm. My bread is beautiful and delicious. You are my hero!

Hello Steve. About 3? years ago I wanted to start making bread and I watched a ton of videos yours included. It was YOU that gave me the courage to make my first loaf. Now I make all kinds of bread no knead and kneaded. I spend all day sometimes on cold New England days baking bread it just brings me GREAT Joy. I truly have you to thank for this. I have not made bread in a couple months now and I have the itch so I popped in for a refresher but to also take the time to Truly Thank You whole heartedly for starting me on my baking journey. Love it. I don't know if it is "cheating" but I mix it using a stand mixer and dough hooks; a little disabled, so I do what's easy. A suggestion: I use "atta", or Indian whole wheat flour. It develops gluten well, and is a bit finer grind than most "western" whole wheat flours. It may need a little more water as it absorbs well. Maybe subjective but I think it gives a nice structure and good loft.

I'm in the US so I'm not sure you can find atta here easily, but any finely ground, red wheat flour with a good protein content should work. I found a good recipe that also "cheats" by soaking the entire whole wheat flour content of the recipe with all the water, THEN adding the rest of the combined ingredients together. So, 16 ozs of water + 1.5 c whole wheat, soak for at least 4 hrs. Meanwhile, combine the rest of the DRY ingredients. Once the WW flour mash is ready (no matter how long it's been soaking), add all the other ingredients to it, then continue with the recipe as indicated. Trust me, you'll get an AMAZING loaf of bread. Fluffy and flavourful. I've got fatigue and pain issues so I've left my mash soaking up to 2 days, so I've had whole wheat loaves that have had a very faint taste of sourdough, but only I've noticed it. My kids (the grown men and my grands) have inhaled it so there wasn't much discussion about it. The grands in particular haven't even commented on the fact they were eating whole wheat! They thought it was dessert! 🍰 🤣 💯 And it ALL began with Steve, the rocket scientist...

2021-03-21 💗 🍞🥖Steve Gamelin taught me to bake my own bread. I have been making them for almost three years, I mix with dried garlic powder, all kinds of dried herbs, curry, nuts, seeds etc. but also, cinnamon, honey or with extra sugar then you get sugar bread :-) No one makes bread so fast, simpel and much easier as 'Steve from no knead bread'. Steve, I made this bread last night, baked this morning. My loaf looks exactly like yours and tastes great!!! I didn't have pans to make a PMDO, so I just placed a shallow pan of water (about 1") at the bottom rack to create steam for the first 40 minutes, then removed the water for the last 10 - 15 minutes. I think that worked well.

I stumbled on you about a month ago because I love bread, but I don’t have the counter to knead and roll out. Very limited space. You have really helped and I want to formally thank you. In this time of crisis, I may only have 3 rolls of toilet paper but I have about 50lbs of flour (bread/all purpose) to make my own breads. You have given me the confidence I need. The elderly often have bad teeth or false teeth. If so the will find it hard to eat. If you brush butter on after baking it will be softer. I personally like chewy bread over soft. But my husband likes soft. If sharing with the elderly try baking more small loaves to share. My husband and I are 73 & 78 and we don't eat a lot of bread before it goes stale. So I have to freeze it sliced than take out a few slices to thaw for breakfast or lunch.

You are such a practical baker Steve! And I really enjoy your videos 😊 Today I am taking some sourdough starter that is obstinately refusing to rise and I'm incorporating into this recipe. The starter is 50/50 flour and water, with about 1/3 of the flour being rye. So it should make a nice loaf!

It is so clear that this Mr. Steve is one of the best presenters of bread-baking. He is down-to-earth, clear and, recognizes that many of his audience may be intimidated by the thought of baking bread and also don't necessarily have sophisticated tools. So thank you for making bread baking accessible. I have just one (I hope) tiny request. If you are still making new videos, would you consider covering your bowl with something other than single-use plastic? Tea towel, pot covers, re-usable plastic or silicone? I know I don't have to explain why and I thank you if you will consider this request.

@@EDTMKT I use a lid from my pots and pans. An overturned plate would work. I also have a set of silicon covers which fit different size bowls. I never use plastic wrap for that job

Thank you so much for the super easy and great tasting no-knead bread recipes! I love to cook and I do all kinds of cooking for my family but I've always been intimidated by bread making, particularly using yeast, proofing and kneading. I was gifted a bread machine a few years ago and used it a couple of times but never thought the bread tasted that great nor did I like the weird shape it created. During the COVID-19 lockdown, like everyone else, I became interested in bread making. After searching long and hard to secure bread flour and yeast that were out of stock everywhere, it was finally time to make bread! I came across this video and was impressed by how easy it seemed so I gave it a try. Wow! The best bread ever, especially considering what little effort I put into making it! The poor man's dutch oven is a brilliant idea! I've made the multigrain whole wheat bread several times now as well as the cinnamon raisin bread and they are both great and come out perfect every time! My family loves them! This is easy enough that I can incorporate into my routine and continue to bake fresh bread a couple times a week. I can't wait to try your cinnamon rolls recipe! Again, thank you so much for sharing these wonderful recipes!

Thanks for this recipe. With the way things are going these days, this is one of the way to not run out of food. Atleast we can eat nutritious bread to keep is filled, if we can't afford most other food items.

just baked this up this morning and it is absolutely delicious! I am new to bread making and this was my first whole wheat loaf, the poor man's dutch oven worked perfectly and I got a beautiful crust! Thanks so much for your lovely, simple, informative videos, Steve!

Found a work around for the PMDO when Steve’s method didn’t work for me (clips kept popping off). I used heavy duty aluminum foil and tented the loaf pan by completely surrounding the pan. It worked out fine. The bread was delicious

Honestly, I dont even use clips. I just place the second bread pan on top and have it sit there with nothing holding it. I've never had a problem and my bread has turned out perfect every time

@@DreginyReacts Hello. What is the typical humidity in your area and how long do you put it at counter top before baking? Ours is 84-89F and when I tried Steve's 16oz cool water, 31/2cups flour, 11/2 salt, 1/4 yeast which is all too common in his videos, mine didn't shape as dough and was too wet. 😔 I baked it after 15 hours in kitchen counter top. It turned out cooked on the outside not on the inside. 😔😔😔

@@arvi8843 I like Steve's recipes, as HE makes them. But they are always too sloppy to me. I've been using European recipes (and some American ones) that weigh out the flour and liquid. They always work well for me. I am learning about hydration and going to try some of Steve's recipes with weighing water and figuring out the hydration level by weight, for no-knead bread. Best wishes. "Baking with Jack" has a video about figuring hydration.

I just had to let you know that I tried this today and just love it!! I baked it as a free form boule and though not for sandwiches, delicious nonetheless! My husband even likes it and he’s a “white bread” die hard. Thank you!!

I need to learn how to bake my own bread. I love how simple your technique is for beginners . The empty store shelves due to the corona virus had me worried i wouldn't find bread for my family. Thank you so much for this very easy recipe, Steve. I just tasted it fresh from the oven and it's wonderful! Even my husband (a Frenchman) was impressed! The only change I made was to add some poppy, chia, and sunflower seeds along with the the flax and sesame. I'll be making this a lot and I'll be buying your recipe book.

How was it with the other seeds? I just made it with ground flax seeds and sesame seeds did it end up more dry by adding additional seeds

I appreciate when you tell us 'why' you do something. i.e. dusting with flour in order to handle easier. When instructions are given with a 'why' explanation it certainly makes it easier to remember.

I tried this recipe and it was amazing! Only difference- I slightly ground the flax. Otherwise flax just goes out of the body as it comes in. I baked it in a regular bread pan (no cover) and it came out perfect and delicious. 😄

I was wondering about the flax seed too and decided to crush it a little as I know it just passes through if one doesn't. But I don't like a fishy taste, how was your bread in the taste department Gila?

Thank you Gila for sharing your experience with a normal pan without a lid. I don't have a dutch oven and currently only have multiples of my mini loaf pans. So I thought I couldn't make this without buying another large bread pan. I'm really excited to give this a try now!

yes definitely that is one thing that he seriously needs to do. How the heck do we know if we've baked it correctly well I mean obviously sometimes it will be easy to tell but seriously, he needs to cut a slice and show
