When he had Claire try it a few episodes ago, he mentioned it helps to talk during filming, so I'm guessing he narrates as they film, and the voice over is an edited and rerecorded version of that.

He probably records first and then has it playing as he does the filming

Amiel says things out loud during filming, it's just easier to master sound when it's recorded separately. I think he has said he rerecords his reactions - so his gestures are genuine just not very real lol
