The Oxford Dictionary's definition of ketchup is: "a smooth sauce made chiefly from tomatoes and vinegar, used as a condiment." There are other tomato ketchup recipes from this time period that used anchovies but no vinegar so they would seem strange by modern tastes. This was the closest real ketchup-y recipe I could find from the time period. Did you know that tomatoes (and potatoes!) are native to the Americas?

By the way! I'm excited about our next video coming out next week. We found an 1824 recipe for curly fries published in Virginia. You read that right. Curly fries?!? When you google "when curly fries were invented" it says that Arby's first introduced them but that's hilariously untrue and curly fries had already been around before the 1980s anyway when Arby put them on their menu so how can that be true. Curly fried potatoes were recorded in Europe as early as the 17th century. Though potatoes are originally native to the Americas it was European immigrants who passed on the technique of deep frying potatoes. Potatoes fried in lard started to became especially popular in the mid-late 18th century and may have even been sold by street vendors in France around the French Revolution but it's widely accepted that the Belgians (at least what would be modern day Belgium) are responsible for frying the first potato wedges.

Justine, the french fries were so perfect that I would forget about the pork steaks! Yum! Frying things on a fire is pretty tricky sometimes and you made it look so simple as usual.

I absolutely adore your sheer dedication to making these early american inspired videos as realistic as they are. As a huge fan of gastronomy Ive always been curious about how food was back then when all ingredients were all natural with no artificial stuff. To think of the amount of work that went into every single meal back then! Not just what we are seeing Justine doing in her cabin right now but the labor of chopping wood and keeping both those fires going, the fact that that hog would have probably been raised and butchered on that homestead or at least traded for with some other commodity made by one's own hands, the vegetables had be grown, and on and on it goes...this really makes me appreciate all my modern luxuries! We have no idea how good we have it, and yet this channel makes me pine for a simpler time...

I have enjoyed your videos for such a long time but rarely do I comment, they’re so helpful to me in terms of my anxieties as well as the fact I’ve always had an interest in colonial America. Soon I’m going to be a part of a reenactment group in New England that is Rev War based (I’ll be a working class woman alongside the 3rd Massachusetts Regiment) and these videos help me immerse myself in the general time period a bit better. How I love fried potatoes, otherwise called "French Fries" in the U.S.A., or "chips" over in Great Britain. The only ketchup I use is Heinz. I'd love to make your version, but I've always hated the seeds and "jelly" inside tomatoes. So I'll cut up and rinse the tomatoes of their seed and "jelly", then pat them dry before cooking.

Thank you for the video. A little advice about cooking your meat: add salt BEFORE (to keep water inside the meat = tenderness) and add pepper AFTER (to avoid burning this delicate spice) 😉

Wouldn’t it have been better to put the butter on your meat after you took it off the grill. I noticed much of it just slipped off into the fire. The french fries looked delicious.

I sometimes make my own ketchup with tomato paste, diced tomatoes, garlic and a few tablespoons of honey for sweetness. Blend it up, tastes just like store bought ketchup and much healthier especially because I use raw honey

oh my, those chips look wickedly crispy. Frying chips with Butter, um.... I guess its ok for me to eat half tray of home made brownies right now then cause it only has 1/4 butter in it LOL I cant imagine what those chips would have tasted like WICKED to say the least lol Porc is Porc, but that Ketchup looks fresh & easy & likely much healthier too I can make that so easily. but they had the right idea.

Then I so wanted you to bread the cutlets and plunge them into the hot fat for a little schnitzel, but I suppose we would have to wait for the German colonization of Texas for that. Then, I see that they have been making breaded french fries since 1823. I'm dumbfounded because I'd never seen them before not long ago, but out here (California) they call them "jojos" sliced in quarters the long way, breaded spiced and deep-fried. I thought those were a recent invention of convenience stores. They are good.

Seasoning for pork and chicken: salt/pepper/oregano/garlic powder. Steak takes just salt/pepper/oregano, all before cooking.

Were people really so wasteful back in the day? That butter you put on meat just slides away into the fire. Doesn't look right. Maybe you should use butter after you put that meat into a bowl or a plate? EDIT: ok, so the recipe at the end says "rub a bit of butter over". That makes more sense. You just chose to "put a lot of butter on top"

What's the point of the butter when it all falls in the fire? Using a whisk should work to spread it. It's done so quickly anyways that the straw shouldn't catch fire. The butter just seems pointless and wasteful. It was cool to watch the ketchup being made for back then.

There is a Peruvian dish like this called Lomo Saltado. The biggest difference being that the steak is more stir fried with tomato and vinegar.

Thank god these guys live where land is relatively cheap and where they'll be able to continue their fun hobby that lets people learn what the past was like.
