Potatoes that fit the definition of curly fries from the 1824 publication of The Virginia Housewife. These 200 year old recipes never cease to amaze me. What I've concluded after the last 1.5 years of having this channel is that people back then knew how to eat!

When you go to Google and look up when were curly fries invented, or even when french fries were invented what you will get is when a food with the modern name "curly fries" was invented, not when curled and fried potatoes came about. Same with "french fries". The term "french fries" or "french fried potatoes" is Victorian yet diced fried potatoes were around much earlier than that, from around the 17th century (at least the mid 18th century for sure). It's the same with what we now call curly fries. Curled, deep fried potatoes have a history that may go back a early as the 17th century however the name "curly fries" is 20th century. While these foods may have had different names over the years, they are essentially the same concept and still delicious!

Yum! Early American curly fries/chips (as the recipe states) lookj delicious. Loved being able to hear the "crunch". Always love your period clothing, and you look adorable yet functional in them. The bonnet is a great touch. Great video!

I'm curious. How much time total do you think went into those curly fries? I'm thinking at LEAST 2-3 hours. I think folks forget how labor intensive it was to have good food vs something you just swallowed to survive.

Amazing me they would go to such lengths spiraling potatoes....but we all want variety in our meals....looks delicious, I love crispy. I wonder if they reused the lard? I also can imagine what their dresses looked like at the end of the day, a true testimony of hard labor...

You know something? Sometimes I think we would all be better off living this way again. Don't get me wrong, I enjoy electricity, air conditioning and modern medications, but somedays I would love to be in the middle of the woods just making dinner over an open fire. Somedays. God Bless 🥰

Potatoes are one of few foods that is still very similar to it's original state from the beginning. Most every other fruit or vegetable has mutated heavily other the last 100+ years. Either by nature or by human intervention. Of course potato-based foods existed. The fact that anyone (in the comment section) thinks they have to educate us on how early potato recipes were invented is mind-boggling. Potatoes are the cornerstone of human survival.

You can take lemon peel off in one spiral piece so I’m thinking that’s what they meant in the recipe. But I like your chip pieces also, will have to try it out!

It's really dangerous to carry that pot full of boiling oil. You should leave it on the ground and scoop the potatoes out that way. Move it as little as possible until the oil totally cools. You can literally fry your skin if you were to accidentally spill it on yourself.

Potatoes fried in lard taste different I feel sorry for people who haven't tried it before because it takes your everyday normal french fry and turns it into something beautiful. Really, it makes the flavor so much better they become addictive. Nowadays most people don't get to have that cause they have vegetable oil fried fries from fast food places. I think that Mcdonalds used to fry using lard but I'm not sure if they do anymore.

Perfectly-timed. A childhood favorite burger bar shut its doors for the last time this summer (Skip's Snack Bar in Merrimack MA), famous for what they called "Suzie-Q" potatoes, hand-cut curly fries, same way the did it since the 40s. ("Hand cut" might have been generous, I just think they used some kind of spiral cut tool rather than mechanical machine, but hey you need the hands right? XD)

Not a doubt in my mind that all of your cooking is "edible'. I keep catching myself wondering why Justine doesn't use this or that special tool for peeling and cutting the curls, but then I see that she does everything with one tool: a knife. She sits in the sunshine, cleans and peels potatoes then cuts the curls, finally going inside to cook them. That is all she needs, not a drawer full of special tools. Thank you Justine.
