In Shirou's defense, he said that as a direct comment on the absurdity of the fact that he's been repeatedly killed and then not died from it. He's *trying* to state an obvious fact when he says it.

Saber tries to act alot more feminine and stays home and barely fights at all, but it might be because Shirou accidently created a loop because how he destroyed the grail and stopped the war. Short version is Shirou blew up grail, an spirit named Avenger popped up and possessed him and Kickstarted permanent loop of the 5th holy grail war. Turns out Avenger is the first "Antihero" who magicians tortured and sacrificed 6 or 7 thousand years before and named Angra Mainyu (embodiment of evil) so they wouldn't feel repercussions of their magic. Shirou might also be a fragment/reincarnation of Avenger but without the emotional trauma of being Angra Mainyu. Most of this loop takes part inside a dying magicians mind that Avenger made a reality as he can control the Holy Grails power to some extend and after Shirou breaks the loop of death and war, Avenger just revives every one, except Kotomine because f*ck Kotomine Kirei, and gives everyone the memory of winning the war and just coexisting in Fuyuki City. There was a show and fandisk version of the game by the same name that was pretty much slice of life because it happens after the loop is broken and every Fate Stay Night character lives and interact daily.
