It's still an assumption to say this is how older duels looked like, though. We can't say how they looked unless there's precise descriptions or images, of which there are few. This is further amplified by the fact that this is a specific type of Epee duel and I don't know if the combatants are trained.

Doubtless the "strong" were favored, but the offended person had the choice of the weapon, the place and the date; The duel remained a dangerous eventuality. It does not replace politics, in its noble sense. But the risk of the duel prevents cocky politicians from insulting their opponents for free.

Being too cautious in fencing is bad

It's actually not so different form the pacing of modern epee fencing, which (since the whole body is a target) is more defensive/strategically focused and has long bouts of feigning and footwork without any attacks.

You tend to grow a population of professional duelists, with very prickly honor and who ae happy to kill their outraged but amateur opponents. Men who kill for a living (think of the ex-army officers that abounded in Europe in the years after 1815), especially when they have trained with a sword for combat, are very likely to win over some soft middle aged banker to whom they owe money. Funny how honor works in that case.
