So in today's video I will be showing you two ways to lower the potassium in your potatoes or other root vegatables like yams.
The first method is the leaching method. Were going to to peel all the potatoes. Now we can cut the potatoes. You can slice or shred your potatoes so that they are properly leached. You will leave them to soak for at least 2 hours.
The second method is double cooking. It's exactly what it sounds like. So, double cooking starts the same except this time you will only boil it for 10 min and rinse. and then continue cooking!(:
This boiling technique decreases the potassium in potatoes by 50% to 70%
