Kidney-Friendly Potatoes: A Lower Potassium Option for Chronic Kidney Disease

Ingredients:
Potatoes or sweet potatoes (~700 grams worth- this is ~ 1 extra large and 1 medium or 2 large potatoes or 3 medium potatoes)
Low/no sodium seasonings (info for what I used below)
Avocado oil (if you're going to roast)
Directions:
1. Wash and cube your potatoes
2. Place in a pot of water and bring to a boil
3. Once boiling, drain water and replace with fresh water
4. Bring to a boil again for ~10 minutes
5. Add potatoes to a mixing bowl, toss with oil and seasonings
6. Place on a baking sheet and bake at 400 degrees x 20-30 minutes
Nutrition info per 2/3 cup portion (makes 6 servings)
93 calories (without oil)
2.5 g protein
6 mg sodium
21 g carbs
1.5 g fiber
245 mg potassium
65 mg phosphorus

After the 2nd boil place them in cold water and refrigerate another 16 hours. This will get the potassium down to only about 15% remaining.

I believe kugel uses grated potatoes right? If so, you can grate them and then double boil. I haven't tried it and don't know exactly how it would hold up, but you can always give it a try!

Doesn’t skin contain a lot of potassium?

Most of the potassium is in the flesh of the potato. ~25% is in the skin. So removing the skin would remove some potassium. But would also remove more fiber. Either way is okay based on the individual person's preference though!

After pre soaking legumes or lentils, can you double boil them to reduce more potassium?

Excellent video, however please address the study that showed a 70% potassium reduction achieved through boiling the potatoes FIRST, then leaching them for 12 hours.

If one is making chowder, do you still double boil in water or could one add potatoes to the chowder after first boil and bring to a boil a second time in the chowder?

You could definitely do that. But if you don't drain the liquid it cooks in, you don't lose as much potassium (since it is leached into the water). So you would remove some potassium with the first boil. And then you would obviously be consuming the chowder liquid with the second boil, so you would still be getting some of that potassium from the potato in the chowder liquid.

What amount of potassium would you suggest for someone who has stage 4 ckd and takes prescription potassium chloride? Increasing potassium? And what are,good sources of potassium in addition to potatoes

Hello! Potassium intake is typically in ranges. People with no potassium restriction can be anywhere from 3500-4000 mg/day. But if you have CKD and are on a potassium supplement, you want to make sure labs are being drawn to monitor potassium blood levels. Especially if increasing potassium in food too while on a supplement. Higher potassium food sources besides potatoes are bananas, avocado, tomato, kiwi, brussels sprouts, artichokes, spinach to name a few.

Soaking (over night or for several hours is better than 1 hour) does help remove some potassium! Not as much as double boiling does since the heat, and removing the water from the first boil allows for more potassium to be removed.

yep! it works on sweet potatoes too. The most potassium is lost with double boiling with tuberous veggies.

Nope! You can peel the potatoes of course, but if you like the skin then you can eat it.
