An Espagnole sauce is a flavor-packed simple brown sauce. It is a French mother sauce and a base for many delicious brown sauces. In this video, I will make two Espagnole sauces. One simple version and one full-flavored complex way. An Espagnole sauce can be a great addition for sauces such as the Bigarade sauce for Duck à l’orange or a Sauce Diable, as well as soups and stews. 0:11 Simple Espagnole Sauce Ingredients
1/4 cup or 32g Clarified Butter (unsalted)
1/4 cup or 32g Flour
5 cups Beef Stock
1/4 cup or 60g Tomato Sauce
8 Black Peppercorns
1 Bay Leafe
Few Sprigs of Thyme
4 Parsley Stems
Makes roughly 1.5 cups of sauce
2:49 Full-Flavored Complex Espagnole Sauce Ingredients
1/2 cup or 64g Butter (unsalted)
1/2 cup or 60g Uncured Ham
1/3 cup or 30g Carrot
1/2 cup or 100g Onion
1/2 cup or 64g Flour
8 cups Beef Stock
1 Clove of Garlic
3 Sprigs Thyme
1 Bay Leaf
2 Celery Leaves
3 Parsley Stems
1/4 cup or 60g Tomato Sauce
Makes roughly 4 cups of sauce

Excellent video! Any objection to throwing in the whole 8 cups of beef stock at once if I have a big enough pot for that and then reduce it to the 4 cups?

No-one browns the flour beforehand. A Great Grandmother, both Grandmothers, Mom and we kids that cook, do this. Cast Iron Skillet on low/med. When heated, add the flour and leave it alone. Shake the pan back and forth every now and again. WATCH THE FLOUR, LEST IT BURN! The color comes from the time in the hot pan. You can get it light, medium or dark brown, what color you wish. The flour taste is gone. Stores like flour, indefinitely. When ready, just add butter and the hard part of making Roux is gone. You are welcome from Southwest Louisiana and San Antonio.
