Foodservice, especially _gourmet_ foodservice, is a very tough and unforgiving line of work that doesn't have a lot of room for error. A good head chef needs to be able to deal with that kind of pressure and not constantly make dumb mistakes.

Keep in mind that these supposed professional chefs are literally ruining and throwing away thousands of dollars worth of produce with their fuck ups.
