I want to say a big thank you for the grace and thoughtfulness of all your videos. My canning efforts started in my 60's after watching hundreds of canning programs, your advice and gentle approach has given me much of my confidence to begin my journey of growing food and storing it a cupboard. This still amazes me, that I can grow something and use it months later. It has changed the way I prepare meals and given me the courage to grow more each year. Thank you.

I’m so happy to hear that you started canning in your 40s! I often feel bad that I didn’t learn sooner. But I just didn’t have the capacity when my kids were little. So I started learning in the past few years and now at 46, I am obsessed 😊. Last summer I was thrilled to count over 400 jars of food canned by me! Thanks for all of the beautiful and inspiring videos!

Gardening and preserving it is my peaceful time. It's a lot of work but i so enjoy it. I wish my children shared this love. I would feel better about tough times for them if they did.

I loved this video--thank you for making it! I started canning in my 50s and my family always asks why I do it. It's hard at times to explain why. I've worked in a large corporate setting for nearly 38 years and in stressful, managerial positions. Canning to me is back to the basics, fun rather than stress, simple rather than complex, and my family loves what I can (especially the blueberry jam in the middle of February). You have inspired me to keep going--thank you!

My garden didn’t do well do to my husbands massive heart attack. This was my 1st yr canning. So I do small batch canning and between canning dehydrating and freezing I did pretty good. All the small batch canning truly added up and I have an actual pantry built.

Rachel, I went into my Garden and harvest all my Dill today before the freeze is coming in.I got 3 cookie sheets with fresh dill I put them in the oven to dry on the lowest Temperature and the come out wonderful. Preserving my fresh herbs.

All your hard work sure paid off. I grew up with a garden and my Mom canned so many things. I don't have a garden anymore, but I learned a lot on canning from her. I buy from our local farmers that do not spray their plants. I am happy to support them as they are local to my area. I have even started to teach some people that want to learn how to can that have gardens or just want to stock up good food for the winter. Even give some as gifts! I even tried horseradish this year. It's really good, and gave some as gifts to those that love it. Love watching you and always learning. I have watched you for a long time now, and always learn something. I think the most important thing is only can what you will eat. Yes, try new things that sound good to you, but if it doesn't work out don't do it again. I am always cooking new things, and that's half the fun of it.

One day I’m going to run into you in the store and thank you in person! Because of you and watching your videos I made spaghetti sauce for the first time last year and it turned out great! I also made your ketchup and I’ll never go back to store bought. I made other things too from watching the videos, I don’t have much room to grow but I am satisfied with what I can.

I want you to know how encouraging your videos have been to me over the past few years. We live on a .10 acre urban homestead. When i went back to gardening, after leaving the office and long commute, I discovered your channel. Since then our two neglected 20 foot beds have come back to life! We added 7 more beds on the side of our house with the death of a huge maple tree. I’ve been canning, freezing and sharing. Learning about soil management from the No Till Growers channel also. It’s been a wonderful, albeit tiring journey. Thank you for what you do!

It was a fantastic jalapeño year in 2023. I have pickled jalapeños, jalapeño relish, and yes cowboy candy…lots!! Some years you have an abundance of a particular vegetable. So you just put it up and say thank you. I’m with you I won’t need to can jalapeños this year. Just enough to eat. This next growing year I’m concentrating on tomatoes and green beans. Had a really bad harvest of those items. The grasshoppers took out my beans. Tomatoes just burned up.

I am in my late 40’s and started canning 2 years ago. This year was my first in gardening and growing our own food. My husband has been doing it for YEARS and trusted me this year with it. It was quite nerve wracking but he was there by my side encouraging me and answering all of my questions. Oh, and also, I watched ALL of your seed starting/gardening videos. You were there too…by my side. My garden was so good to us this year. My husband says I can take over now 😊. I am pretty sure I will binge watch your videos again to give me a refresher. Almost forgot, I canned a lot of green beans this year. Other than using them for green bean casserole, what are other ways to incorporate them in our cooking? Again, thank you and your husband for your encouragement and inspiring all of us AND sharing your journey. ❤

As you know Rachel, I got back into growing veggies a couple of years ago and I haven't stopped. I am having so much fun and also sorting my mental health out at the same time. Like Todd I love my fishing so catching, growing and preserving is necessary for me. I still have tomatoes in the freezer ready to cook up and I have my new batch growing right now!! Therefore I have to get a wriggle on and use up the last of my harvest that's sitting in the freezer!! All good fun I have coming. Cheers and hope you and Todd are well. :)

I'm 50+ and I just started canning 2 weeks ago. I have watched dozens of videos. Sweet potatoes and beans are the first things I canned. I have been able to can collards chicken, pork, and apple pie fill and apple sauce and bone broths. My goal is to start a no till garden for next year. We are getting the ground ready for next season.

I’m so excited for a year in my garden planner, I just ordered mine 💕 I wasn’t able to have a garden this past year as I found out I have cancer and have been in treatment, I’m still battling but I am determined to have a garden this year and I want to be more intentional about what I’m going to plant and how I’m going to preserve it , some of which I have never grown before but I’m going to just dive in 😊 I love all your videos especially what’s for dinner when you are using from your pantry!!

I remember watching the first few videos you did about letting your gardens observe the Sabbath. I admired your desire to do it. And as this year has progressed I spent some time in prayer to consider it for our gardens as well. I’m happy to say my hubby has agreed, well, partially. We have 14 raised beds and they weren’t all started the same year. So half of the beds will observe the Sabbath this next year. But it’s a start!

I'll have to go back and watch your womans tea blend, sounds lovely. We moved to a little house to give the kids the big farmhouse this year so I had a gap year too(not on purpose like you but it happened). I just ordered a brand new canner from ForJars and I'm so excited! Got my lids ordered on the black friday sales and I'm ready to get busy this coming year. I sure hope my new no till garden is set up and bursting this coming year. We're in Alberta and my son is going to drive the tractor into the space to spread the straw on top so we're waiting till the ground freezes hard. It's a really weird winter this year. We still have bare ground and temps around freezing so no movement yet.

Come to find out my ma's side would can but I never knew this. I never canned up until about 3 yrs ago and I am in mid-50's. I have 8 raised beds, and this year was our most successful year. I am venturing into soups etc. to preserve and not so much in freezing things (we have 2 small fridge freezers that get full quite quickly!). It's just me and my partner, so we don't really can an overabundance of things, but enough for us to keep us in fresh food for at least the year or longer on some items. I am glad to see that you too, have canned something that wasn't a big hit and now will dial it back on a few things. We have done the same thing. I love your approach to life and all things. I am glad to have stumbled onto your channel a couple years ago!

I am envious of your pantry! I didn't get to have a garden last year because I was moving. Now, I'm supposed to get approval from the HOA to put in raised beds. So, I'm going to use towers and grow bags on my patio! I made ketchup with cherry tomatoes! I learned to can from the Ball Blue Book and my red plaid Better Homes and Garden cookbook! I made blackberry jam with berries I picked from a dirt road in Montana. We were living in a 10" x 14' camping trailer and carried water from a creek. If I can learn to can under those conditions, anyone can learn!

You did a great job. I too let my garden lay fallow. I have filled up one bin 3 high of empty jars and one half full. I will do inventory before I decide what I will grow next season. I am only feeding 1 so it’s taking me longer. I know I need to can more broth or use all my veggie broth. I planned well too for not growing last season. It may let me focus on other things next season.

Love it! I took up canning after I took up raised bed gardening during my 40's as well. Added a freeze dryer this year. Now I want infused oils and more tea stuff too. I found out I am allergic to corn which is in about all processed food so it has been on like Donkey Kong to make it all work

Cowboy candy recipe you will love! 16 oz cream cheese softened, 16 oz sour cream. 1 pint cowboy candy, 1 -2 cups shredded cheese, and 1 cup chopped cooked bacon. Mix well . Use as chip dip, spread in breakfast burritos, sandwich spread cracker topper omgosh the options are endless. U will quickly find u didn't can five years worth. Try it on a bagel ..... Yummmmm!

Rachel, a book on top of everything else. It looks beautiful. I wish I could make use of it but I can’t garden any longer. Love your recipes though. Bet you’ll have a tremendous harvest next year because the Lord will honor your desire to do right. Maybe another 2 year pantry.

This year was probably my largest canning year because we invested in a digital canner so that I could pressure can. Chicken was my first meat. I have learned so much from you and look forward to more. Thank you.

I can’t wait for Friday- when your planner arrives! I’ve somehow missed you were even doing this?! I start my tomatoes and peppers the week of Christmas so this is perfect timing for me!! I’ve really enjoyed seeing the complete process- growing, harvesting, canning and creating meals! Thank you so much for sharing your journey

I have taught myself how much is needed to not only feed a family of 4, but also allow my 4 adult daughters to be able to come shop in my preservation pantry if needed during hard financial times.

I had carrots that I didn’t care for and i mashed them up with potatoes like mashed potatoes. I can enjoy them now!

I hope I can get one of these books soon. I have so much. Salsa, which the others will eat, but very little other Tomato products. My garden didn't do very well this year. But it's ok. I watch for deals. I'm not picky about organic or not. Just trying to stock up for now. Ip got tickled about your pickle dilemma. 2 Yeats ago, I had cakes coming out of my ears, I've got so many pickles and we don't seem to eat them much. My dulls are floppy, but I don't care, I just love the flavor. I have found that relish goes faster here, so from now on... We got it all reorganized last week, so maybe I'll do better at planning next year. Can't have toomany garlic and onions, and the garlic never fails. It took me 3 weeks to process all of it this year! And if my onions don't bulb, I'll eat the tops. They're mostly for cooking anyway. Sorry, rambling. But thank you for writing a book like this. I'm saving this video, so I can order the book soon.

I am so excited for your Planner I ordered it to see if that can help me. What you shared really encouraged me. So I say thank you❤ This year I struggled but I'm hoping next year I can get on track better. I just have to ignore the naysayers and stay focused. I have so many people around saying just go by it. Don't try to grow it, Don't try to forge it. But I feel better when I eat better. And i'm gonna keep trying to figure out I can do little-by-little even at 65.

Thank you for all the tips you've learned along the way. I am just a beginner to gardening and canning (even though I have dabbled in water bath canning for a few years), but only have a small backyard so know that I will still need to depend on the grocery stores, but thrilled with little accomplishments.

Didn’t even finish watching. If YOUR selling a garden book, I’m in ! Couldn’t buy fast enough. Ugh and I hate to say this but thank you for putting on Amazon. Will be here Tuesday. Great video. I would put some safety railings on the front of the shelves to prevent anything from getting knocked off the shelves. You never know when the cat's are going to jump up there and knock things around. Just an idea 😁👍

Pickle rationing! Desperate times! Well done on your preparations last year. Impressive! I'm going to put your planner on my Christmas list. The only other thing on my list is a hand held, battery operated vacuum to suck up squash bugs and striped cucumber beetles 😅 I've meant for several years yo get around to assembling something like your planner, but I need to accept that I'm just too busy with the kids and garden ❤ Thank you for being a great friend to can with! I wish I could meet up with you sometime when you're on my side of the state at your cabin.
