I have a few cream cheese frostings. This is the one you'll want to use if you need a stable frosting to hold up tall or large layer cakes. It acts very similarly to Swiss meringue buttercream. Many bakers have messaged me that this is a dream for cake decorators... but it is a more lengthy process than most cream cheese frostings. Did you know that if you want to separate a yolk from the whites, apparently you can rub your fingers on a garlic clove and somehow this makes it really easy to pick up the yolk without egg whites??? I have no idea how this works and I thought you might be interested. Thank you for the wonderful videos!

There's a very good reason my husband and kids don't want to eat cinnamon rolls anymore. I spent a year working on the recipe and they got sick of them. Everyone else loves them & asks for them ask the time, but my family? Nope! 😂 Thank you for doing this trial & error. I'm excited to try a cream cheese frosting that is stable.

Cream cheese frosting will always be THE elite frosting to me 👌🏼 the tang balances the sweetness perfectly. Buttercream just tastes like oily sickly sweet sugar 😅

I discovered your channel not too long ago and I love your dedication to cake experiments, the chlorophyll glow in the dark cake is my fave. Now, something that has been in my mind for years is how to make a red velvet cake without artificial dye, I've tried to do it several times but I've never been satisfied with the results.

Thanks for sharing this method. Love the "as I scientist, I have a pretty high tolerance for failure". I am an artist....same. My solution for a cream cheese frosting that stood up to tall cakes and summer days is to make half cooked frosting and half cream cheese and blend them together. Family and friends love it. Now I will be trying yours.

Does this hold up in tropical weather. I did a cake with a cream cheese recipe recently. It tasted great but it surprisingly melted. It was different from other recipes I've tried. Is your recipe stable to withstand tropical weather?

You can use a counter top roaster, or for smaller cakes a rice cooker/instant pot works too.

Is there a chance ambient temperature or height hae anything to do with how runny cream cheese frosting is?? In my country cream cheese is quite hard so that's why most people don't use it in cakes a lot: it takes too long to get soft! Most times I've had to microwave cream cheese in order to use it in any recipe. The fact that is "known for being runny" is so weird to me!!

Any time I try to frost a cake the crumb layer starts pulling the cake with it. Like I freeze the cake layers for 4 hours than frost it but the crumb layer starts taking chunks of the cake with it. I've expiremented with freezing for longer even up to 8 hrs or adding more frosting but it keeps devolving into a mess. I've taken baking personally in as my new foe in 2023 because I can cook so well but bake so badly.

Your buttercream is too stiff if it's pulling away your cake. Also try to just add the bear minimum of bc to seal the crumbs. Put back in the fridge and then it will be super easy to frost once that small coat is solid. Hope that helps.

Hi! I have a question about your mini cakes, but didn't wanna reply to an older video. Is it possible to use a normal cake recipe? Or since the cakes are smaller, would they burn in the oven (at the same bake time.) I really wanna make these. But I don't really have THAT much knowledge as a baker.

For the most part, it should be ok. I've used box cake, regular American-type cake recipes (cream butter and sugar etc.) and my chiffon cakes. I've also used brownie recipes as mini cakes. Usually, the only thing you have to modify is the timing, think of them like cupcakes - so my advice would be to look for a cupcake recipe you really like, and it should directly translate to a mini cake recipe, timing and temperature-wise.
