Today I tried to combine 2 things I love the most! We are talking about Hummus and Steaks! Yes, that is correct... How does hummus pair up with steaks? Specially Dry Aged for 24hrs, I ran this experiment and here are the results.

Guga, I'd really like to see you do an aging test. Dry age vs. wet age vs. oil age. I don't know if oil aging has ever been tried, but since many of the items you've "dry" aged in were fat-based (butter, mayo, tallow, lard, etc), I think it makes sense to see what would happen if you submerged a cut of meat in a whole container of olive oil for 30 days.

I do not know about beef with oil/fat age, but my grandmother would fill a 5 gallon bucket half full of fresh lard, then place about 10 chickens in the lard, so they were 100% submerged. She would cook approx. one per week, and the last was as delicious as the first. She did hog shoulders, hams, rabbits and squirrels the same way. When a bucket would empty, she'd slowly heat the lard to 350 degrees for around 5 min, strain through cheesecloth, and reuse multiple times.

probably not much different from other oil (fat) based aging processes. will probably absorb some of the smell and taste of the oil but then again, when cooked at searing levels they will be overpowered. oil is fat, and because any aging of uncured meat has to be refrigerated it wont be much different than any other wet aging process where there is no oxidation present (because, under oil there is no oxigen) and there won't be the characteristic flavor increment and concentration because there will be no moisture loss.

@@jokerproduction What gives the various salts a different tastes. Is the other items that got merged with the sodium chloride. For example: Kala namak or black salt is another version of the Himalayan pink salt. However, this salt is heated to extremely high temperatures in kilns along with charcoal, harad seeds, amla and more to infuse certain therapeutic properties. So it would taste somewhat different than say the pink salt. As well as from other salts.

2 things: 1) Isn't this more of a marinade rather than dry age, since it was only on for 24 hours and you left it on the steak while it cooked? 2) As you've found in the past, putting oily things in the bag tends to dilute the flavor, so maybe if you did a steak where you "dry aged" it in hummus and then removed the excess before putting it in the bag, it might be more flavorful

Hummus is a great filling food. I usually eat it with an onion and lemon juice. Cut the onion in 4 along the stem, peel layers from a quarter and use it as a scoop for the hummus. Squeeze lemon on it to break the onion bitterness.

One thing I noticed with this experiment Guga, you didn't remove the hummus after dry aging it for 24 hours, instead you cooked it in the bag...I thought you're supposed to remove it? That may have made a difference 🤔

It shouldn't make a huge difference I think, he put way more hummus on the 2nd steak. And it's only dry aged for 24 hours instead of like 30 days.

The second one isn't "dry aged" though. It's not the same as the third. It says "cooked with hummus". So removing it before cooking it would defeat the purpose of that test.

For anyone who’s trying to make Tahini at home you should know that Tahini sauce is not simply sesame seeds in a food processor. It actually contains flower and vegetable oil as well as pealed and toasted sesame made in to a paste. It’s a very nice condiment and I highly recommend trying it with dates as a desert. Or in one of my favorite meals by mixing a couple table spoons of tahini with a couple table spoons of yogurt, the juice of a lemon or half a lemon if you don’t really like sour stuff.. some olive oil and a couple minced garlic cloves. Throw that mix on top of some cooked fava beans with diced tomatoes and chopped parsley and top with some more olive oil, some sumak & cumin spices and bon apetite!

Legit question because I don’t know: what would happen if you put a steak in one of those dry-aging bags and then covered that in whatever? Because it’s a membrane and not totally sealing off the steak.

Well, the steak would dry-age. You'd have to get rid of the outer bark resulting in a smaller final steak, which is why people dry-age a whole roast and then cut it into individual steaks.

The Umai bags let moisture out, but not in. So if you put the whatever on the outside of the bag all it would probably do is impede the moisture escaping the bag while not allowing the flavor of the whatever on the outside to get into the bag.

@@Joe_for_real but would it totally seal it off or would the outer crust absorb the moisture out of the steak? Would it end up like a regular dry aged steak? Would it dry it out more/ more pellicle? Would it straight rot because the membrane is totally blocked and the moisture can’t escape?

It would be the same as packing the steak in a regular sealing bag. It would end up just spoiling rather than dry aging.

I recently made a burger, and realized I had run out of mayo when it came time to prepare the bun. I used some humus instead, and it was awesome. I realized then that humus is good for more than just celery and carrots.

Great video as usual. One thing I love about your videos is the superb camera work, it is excellent. I'd love to see your sound, or hear your sound be as good. Your audio tends to be distorted, which is likely caused by your mics redlining. If you do a test of your mic levels prior to recording and ensure that the volume doesn't hit the red, (even when Guga talks really loud) you'll get great audio as well. Like I said, though, your videos are great and I love them. Keep up the good work!

I've done hummus-crusted chicken breasts in the oven... simply amazing. Just salt, pepper seasoned, then crusted with hummous and sprinkled with thyme. Your welcome!

The aftertaste is the fresh garlic. It's more pronounced in the third one because you marinated ahead of time and it infused. If you haven't tested it before try the differences with and without salt in the bag when you cook steak (salt the unsalted one when you cut, preferably with a nice finishing smoky finishing salt).

Guga can you do a comparison between a standard sous vide guga steak with a butter basted sear And my method of steak in the oven at 200 degree until you reach desired temp then butter baste sear? I have a sous vide and learned so much from you and I swear I prefer the low temp oven method best. I came up with it before I have a sous vide and once I got the sous vide I was disappointed!

Hey Guga! Since you like hummus so much you must try hummus b lahmeh which simply mean hummus with meat.. it’s the same hummus you make at home or you can just buy your favorite brand and put in a plate then pan fry some minced beef, with some all spice maybe an onion if you like and finish with pine nuts. Then take that as it’s still hot and dump it over the hummus and enjoy with flat bread! It’s one of the best simple dishes from my home town and I hope you like it 😊

you should try dry-aging with a kombucha paste made with flour or another idea with a fermented food is to put saurkraut into a food processor and make a paste to dry age with

youre doing it the correct way guga! the traditional way to eat hummus is called "wiping", and its called that because you need to see the plate after you dip the bread in it.

How about a fresh okra vs. pickled okra marinade and or age on a tough cheap cut and t-bone. Like pineapple its enzyme rich but with pepsin.

I think for the aged one you should have scraped the hummus off before seasoning and cooking it, because you probably scraped most of the seasoning off after the cook.

Hummus is my favorite, especially when you pair it with deep fried chicken breast. And also great with BBQ in bread. Ps: you should always dep the meat in hummus, I can't eat meat in any other was. Sliced thine Cow meat with onion and a good amount of seasoning on a skillet is they best way to go

Love your vids! Always entertaining! For the dry-age steak, I think if you washed the old hummus off, it might've tasted better. Think about it - it's hummus that's been out, uncovered, for a day...there's no way that it'd be good! Anyways, keep up the experiment! LET'S DOE IT! 😁😁😁

You usually remove whatever you used for the dry age before cooking, but today you left the hummus on... Should this be tried again but with the hummus removed first (also, could you dry age it longer if you reapplied the hummus every day or so?)
