FYI, I’m not sure if you know this but if you place the lid foil side down so it won’t stick and lid will hold up better. Then you write on the paper side whats in that before you freeze it! 😊
When I make meatloaf, I cook a tiny mini burger, just to check the taste. I add lots of eggs and sauce in my meatloaf mixture. Best part is leftover meatloaf makes the best meatloaf grilled cheese. Your stuffed shells lid, white side up. I know ppl love eggs in their ricotta cheese but u will have a spongy cheese, no eggs equals creamy cheese. I’m commenting while watching..🥰

...My youngest Daughter did not like Meatloaf , until she was around 19 years of age... but I would make it anyway, lol.. What I did , I just cooked some of the Meatloaf Mixture , in a skillet for her...and she ate that ,like it was just " crumbled Ground Meat, " .....yepppp. lol.. I often added fresh chopped Spinach to my Meatloaf ...they thought it was " Parsley ". ( because i added a small amount of Parsley as well) ..So that worked... lol. Now. ... she likes Meatloaf, with Mashed Potatoes . I do tell people that your children's taste will change when they get older... things that they really don't think that they'd like, they will eat when they become older . LOL.
Plus your meatloaf you can use your muffin tins to freeze individual portions. You can use the regular muffin tins or the deep muffin tins. Then when frozen pop them out place in freezer bag. When you want to bake pop bake in pan add your tomato topping and bake. It cooks so much faster and is nice to have premade!😊
Love the idea of the mini meatloaves. Hubby LOVES meatloaf... I will eat it but not crazy about it. This way he can have it whenever he wants - for lunch or dinner, and I can have something different!
I’ve never added the meat to my ricotta before that’s interesting. I do like to stuff shells or manicotti using a disposable piping bag it makes it quick and easy. Ziti is always a winner
My husband and I LOVE the mini meatloaves!!! It's just the 2 of us, so I don't make a bread pan size meatloaf. And I use stuffing mix. A 1/2 package for just the 2 of us is enough and I use a half pound of ground beef, to make 2 mini loaves. If you have a bigger family, use a pound of beef or more and a whole package of stuffing. That way you don't have to use any spices. The stuffing has enough. And I don't put an egg in it. It will hold together really well. The cooking time is about the same just to make sure that the inside is done. 🙃🙃 I got that idea from one of the RU-vidr videos. ENJOY!!!
Amber, this was a great one! I love the idea of cooking some meat & combining it in the shells vs straight ricotta. Girl, have u ever made homemade ricotta? Its divine! Its delish on a toasted bread bite with apricot jam & some Gouda Cheese - such great appetizers. I encourage u to look up recipes for homemade ricotta + just be sure its regular milk not ultra pasteurized. Love the Ziti Recipe too - it would be great to bring to a family with a sick Mom or smaller size for an elderly disabled friend too. Thanks much!
