I'm somehow not at all surprised Josh was raised by a single parent because he's got that exact combination of creativity, determination and fretfulness, like "how am I going to make this work? I don't know but I have to so I'm going to."
I was watching him make the enchilada filling and I was like damn I cook that type of stuff a lot, then he was like just throw in spices and I was like yea that’s how I cook and then he was like this brings me to my child hood that single parent that doesn’t know how to cook and it was then I realized that I was raised by a single parent and took on their cooking style which was clueless cooking
@@jakedeforus6779I'm from an affluent two parent family, am an excellent cook today, and my mother cooked this way too. Most people that have decent culinary ability do this, it's bugger all to do with your upbringing, especially considering how easy it is to develop skills in the kitchen later in life.
Travis Hunt if you enjoy this style you should check out Barry Lewis, his channel is a lot like this and he does a lot of recipes that you may actually make along with some more ridiculous things like his giant food videos.
All these recipes look good. I'm a single mom of 2 struggling rn to find meals to make for my kids and sick mom. The ramen video and this one has given me some great meal ideas. Thank you for being your mythical best Josh and providing us with humor and comfort.
Guys, these “recipes with scraps” videos are amazing. They’re really weirdly reassuring. There’s no pretentious Farmers Market shopping list. Like making a real meal out of crazy scraps when you can’t find all the ingredients you’re used to. I love it. Also, realizing that Josh is hilarious now that he’s getting so much more screen time. Anyways, doing great! Keep it up!
Chili powder will actually lose its flavor when you leave it out. The restaurant I worked at kept our chili flakes and powder in the freezer, and only took it out in small amounts as we needed it. Same goes with hot sauce actually.
But did you see how he washed his hands? He put some soap on them and then just rinsed it off and continues washing with just water! Josh! I have no idea how he isn't dead yet.

I graduated as an economist 2 years ago, basically cov virus is bursting the bubble much quicker than it should, we are already in a recession so things are going to become worse, prepare yourself for it.
I'm preferring these quarantine videos over Josh's regular stuff. I feel like we get a more sincere glimpse into Josh - plus I love the practicality of these recipes.
"Actually it is a knife, this is MY knife!" I don't know why, but that line brought a tear to my eye. Probably the wholesomeness of it, combined with being a cook myself and I know how important one's own knife can be to them. My knife has helped me cook so much and that's very emotional. I'm rambling but idk had to share that.
I love how the recipes focus on concepts instead of giving exact ingredients. I felt empowered to make decisions about substitutions. I'm sure there are ideal ingredients to make the best recipe, but I definitely learned more about cooking by being able to make educated decisions. I made enchiladas last night and they came out fantastic.
one of the reasons i really like these videos-other than I Just Think Josh Is Neat-is that even if you don't have the exact things to make what he's making, it just kind of gives you an idea of what you can do. it's more about teaching the process of putting nutrient-dense meals together than a specific recipe, and that's almost more helpful.

Josh does such a good job of making the food look good, tasty and approachable. It really feels easy to follow with how freeform he keeps these recipes and that really helps to build your backbone for cooking anything and give you the confidence to make those decisions with ingredients, times, measurements, etc.
I never liked those beans growing up, and was straight disgusted when I saw my ex dump a can into some boxed mac-n-cheese. But then I tasted it. And i'll be damned, it works.
I love how Josh, the man who says frick as an adult, had such passion of his hate towards a cheese grater that he says "your gonna wanna keep cutting the cheese against you IKEA ass cheese grater." I'm dead. Love you josh.
I love Josh because he doesn’t expect everyone to have access to the same fresh/expensive ingredients that he might prefer. He’s a real person who learned to cook and wants to teach others. He doesn’t care how it looks or how others may criticize him, he just wants to be creative and find things that taste good.

My son was picky for a while. I did what my grandmother did and made him sit at the table until he was done. I made him finish it cold and he cried, but now, even if something isn't his favorite, he thinks it is a lot better hot than cold. End result is I really enjoy pretty much everything now. There are only a few things that I really don't like, so I want that for him.

You're really helping a lot of people with these videos, thanks. You should keep making videos with a similar tone for people after the quarantine. We need more down to earth and realistic cooking videos over these celebrity chefs giving us recipes with $120 in ingredients, 5 hour cook times, and requiring tons of skill that none of us will actually make.

I roll my dough into one large ball, then roll it into a log shape and cut/pinch off estimates to make 2 or 3 equal parts and continue dividing the pieces until I have what I need. 1 ball of dough = 1 log (divide into 2 equal parts) -> 2 smaller balls = 2 little logs (divide into 2 equal parts) -> 4 smaller balls = 4 little logs (divide into 3 equal parts) -> 12 smaller balls
