Regular chicken salad
1/2 rotisserie chicken with meat picked off
3/4 cup mayonnaise
1 tsp white wine vinegar
1 1/2 celery stalks peeled and diced
2 green onions thinly sliced
2 tbsp chopped dill
1 tbsp chopped tarragon
2 tsp onion powder
2 tsp Dijon mustard
1/2 tsp garlic powder
1/2 tsp kosher salt
1/2 tsp black pepper
Curried Chicken salad:
1/2 rotisserie chicken with meat picked off
3/4 cup mayonnaise
1 tsp white vinegar1 1/2 celery stalks peeled and diced
1/3 cup diced red onion (soaked in ice water for 20 mins)
1/4 cup golden raisins (soaked in 1/4 cup water + 1 tbsp apple cider vinegar)
2 tsp curry powder
2 tsp Dijon mustard
1/2 tsp kosher salt
1/2 tsp black pepper
Chicken Pot Pie:
1 rotisserie chicken
1 medium sweet onion diced
2 large carrots peeled and diced
1/3 cup unsalted butter
1/3 cup all-purpose flour
2 cups chicken stock
3/4 cup whole milk
2 tsp freshly chopped rosemary
2 tsp freshly chopped thyme
1 tsp kosher salt
1 tsp black pepper
3/4 cup frozen green peas
1 egg yolk with 1/2 tsp water for brushing
1 frozen all-butter puff pastry sheet
Chicken Tinga:
1 rotisserie chicken
2 1/2 cups chicken stock
1 pound fresh tomatoes
2 large guajillo chilis
4 cloves garlic
1 tsp salt
1 tsp black pepper
1/2 tsp ground cumin
1 tsp fresh or dry thyme
2 tsp Mexican oregano
3 tbsp chipotle peppers
2 tbsp oil
2 medium onions
Serve on a tostada with sour cream, onions and cilantro

I read somewhere that at a Costco board meeting one of the execs recommended raising the price of the rotisserie chickens and the $1.50 hotdog/soda deal. The CEO responded, “Over my dead body.” 😂 Love Costco

I make a "chicken soup kit" with these birdies, 'cause winter is coming, with colds and flu, and it comes in REALLY handy. Simmer the seasoned carcass, strain the stock, cut up the meat, freeze the stock and meat separately, and when we're all sick, I'm not up to cooking, and we NEED chicken soup, you can have home-made, with potatoes/noodles/dumplings, vegetables, whatever you're feelin'. (Or you could just drink cups of the steaming, delicious broth that you made.)

The curry chicken salad, you can substitute the mayo for sour cream, add a bit more curry and you have a good curry sauce for some nice rice or even oven crisped potatoes! Delicious!

I have watched forwarded so many of these recipes to my wife over the last 2 yrs, they are insane! She likes that most of his recipes are not overly complicated and I like they taste incredible! I can honestly say once you try a few of his recipes it makes going back to ordinary dishes difficult. Best cooking channel there is hands down!!!

Made the chicken pie for the missus today, had to venture out in the rain to get some carrots but it looks immense & smells so good! Didn't use rotisserie chicken just roasted some chicken thighs. She's having a shitty day at work so hopefully this will cheer her up!

Good for you, Man. Doing something nice for your wife, is one of the best feelings in the world. Sorry that she's having a Bad Day. I know how it is. Windows Updates messed up my computer, and my damned keyboard wasn't sending right keystrokes. Tried everything, but after a reboot, all is back to normal. Thought my GMMK KB failed. Sad day if that happened.

I love to use it in salads, tacos or just eating it as it as is. Once Im down to mostly the bone I boil it, pick out all the bones and make chicken soup/ chicken noodle soup. Love the price on this because I get so many meals out of the same chicken. That pot pie looked delicious!

Costco rotisserie chickens are just the best. My cat can tell the difference between Costco and other supermarket chickens.If I buy a precooked from another supermarket she doesn’t bother herself. As soon as I turn up with a Costco chicken, she is right there ready for her chicken.

I grab one of these almost every time I go to the grocery store. They're extremely versatile. I usually eat the drumsticks immediately. I use them for a lot of chicken dishes when I'm in a hurry. Soup, dumplings, salads, pasta, essentially any place you would normally use chicken.

Fellow dudes who're just learning to cook: *do not* use a glass baking dish for the first recipe, or if you do, don't refrigerate or freeze it before putting it in the hot oven. Most glass dishes will explode into a jagged powder of ruin and danger if you do.

Controlling temps is 70% of cooking. For instance, Cast Iron. It spans the entire temperature range. For steak, surface of the sun. For cornbread, heat it for at 450 until the fat just starts to smoke and add the cornmeal. For most other meat, hot but not too hot, cook the middle. And for eggs, extremely hot side walk temp. You could walk on it barefoot if you had to, as long as you moved your feet real fast

@@Quiteclueless incorrect and dangerous advice. Tempered glass still shatters when quickly going from extreme cold (as in a freezer) to hot (as in an oven). The difference is that tempered glass fragments aren't as sharp. (PS: I'm a sous chef. I've learned these things by direct experience.)

I made a simple meal out if leftover Costco chicken the other night..cooked some mushrooms and deseeded summer squash with some shallots in a little oil..added some diced heirloom tomatoes..oregano.. threw in my shredded chicken to warm and finally stirred in some premade couscous. A glug or two of EVOO and served with lemon wedges

One of the cool ways I've seen that leftover chicken skin used (especially since it's seasoned from the store) is to dry/crisp it up and either pulse in the food processor or chop up, then use them like bacon bits. Glad you showed the stock making, I'm always shocked at how many people throw away that flavor they already payed for because they have no idea what to do with the bones/scraps.

Yeah. We buy a rotisserie chicken specifically for making stock. The meat is just a value add.

@@mhicaoidh1 I can see why. Quality stock is what? $4-6 a quart (cheap stuff is 2-3)? So getting 6 quarts of stock from a $5 rotisserie and $2 in veggies/spices is a hell of a deal for so little work.

Personal tip, soak raisins in white wine, in italy we usually soak stuff in wine and if the wine is good, an incredible flavour came out

I made the pot pie last night. Other than using dried thyme and, yes, adding a stalk of celery I followed the instructions closely. It was delicious. Before baking make sure to taste the filling for seasoning. Mine was great but could have used a little more salt. Thanks, dude!

I kinda wish you printed your cookbook. I’m not an E book guy and would love to buy a hard cover version like some of the other cooking channels I watch. I hope one day you’ll decide to print it! Great vid though

Sonny, Definitely gonna try these recipes! They look yummy! Our family's go-to with rotisserie chicken is a sandwich. We use sourdough bread, mayo, lettuce, tomato, and avocado. This is money on night's whhen you don't feel like cooking. Another favorite is chicken enchilada. Thanks for all of the great recipes and entertainment! John McHatton

WORD!! These all 4 truly look SCRUMPTOUS!! I esp LOVE me some Chicken Pop Pie!! the salads are crunchy & flavorful, And, I really DIG lots of veggies and fruit. And, there is that in the other recipes.

Awesome stuff. I sometimes buy the rotisserie chicken and make a chicken curry pie, sounds strange so some people but I swear by it. Family love it too.

Yes, grapes cut in half to the chicken salad! And some type of nut: slivered almonds, chopped pecans, chopped walnuts, or chopped cashews!

I roast my own chicken for caesar salad and I load it up with veggies like pickled red onion, grape tomatoes, cucumber, and sliced almonds. I also reserve the drippings to mix with garlic oil to make chicken fat croutons. It's stupid good. If you guys make any of these that don't use the fat consider making the croutons though you'll probably need three rotisserie chickens worth since it looks like there's only a few.

The nice thing about Costco for me is the buck fifty hot dog. It gives me energy to make it to the back of the store to buy the rotisserie chicken. I'm trying out the curried chicken salad right away.
