Mmm that actually sounds like a really good idea! My problem with vegan pizzas is I believe the rich protein component is essential, and hummus could totally fill the role of cheese or a cream sauce.

Oh my goodness. I just made the hummus pasta tonight. I used a different pasta, added mushrooms and a can of diced tomatoes. Topped each bowl with some parmesan cheese. Possibly one of my new dinner favorites!!

When I make my homemade tomato soup that's exactly whzt I have been doing, adding a can of chick peaor even white beans, kidney beans, any kind of legumes really does the trick, never forget the grilled cheese here, mandatory !! I will sure try the hummus with dill, sounds so so good !!

Being middle eastern and growing up with hummus, it’s hard to think of eating it any other way besides the traditional way, but dang girl!!! Hummus pasta??? So innovative!! I have to try it!
I just made the one pot pasta and loved it. I used storebought spicy hummus. I did not have spinach and kale in my fridge, so I used mushrooms and peas. It whas so creamy and full of flavor. Thank you for these recipes, I'm vegan since two months and didnt like beans and chickpeas, this whas one chickpea recipe that I will make over and over again. I will try the soup soon :o)
Little tip ! If you want your hummus to be perfectly smooth, add 2 or 3 icecubes. Trust me on this one, I'm Lebanese and I've seen and made hummus all my life. Try it and tell me about it !
Haha I'm sure but try it just once and tell me about it ! Of course you add the icecubes while the hummus is being blended so that it all blends together.
Thanks for sharing these recipes! I love making batches chickpeas in the instant pot for salads and hummus but definitely get tired of veggie snacks and often throw away leftovers at the end of the week. I made the pasta dish tonight and absolutely loved it! Excited to try the tomato soup as well.
So for the hummus pasta (the last recipe) I didn't add the spinach or any leafy greens (i didn't have any) and I added half a cup of half&half (cream and milk) and half a cup of shredded white cheese and boiled that in the half way mark of cooking my noodles.. Then added shrimp! It was actually so delicious!!!
I made the Lean Green One Pot Pasta and we all loved it. It was delicious! One thing... What kind of vegetable broth do you use? I used Kitchen Basics and the pasta came out brown.

I made the tomato soup tonight with grilled cheese on the side. It was sooooo delicious! I may have gotten carried away with the red pepper flakes (at least that's what my 5 year old said 😁). Souper tasty (see what I did right there?)! Hee hee! Something that was yummy and not very labor intensive, that I actually feel good about feeding my family! Thank you!
