Makes 1 large tray
Hands-on time: 15 minutes
Hands-off time: 60 minutes
INGREDIENTS
2 tbsp SPAR Brand Canola Cooking Oil
1 cup popcorn kernels
3 cups (660g) SPAR Brand White Sugar
METHOD
1. Line a medium-sized baking tray with baking paper and set aside until needed.
2. Heat the Masterchef 24cm Casserole and SPAR Brand Canola Oil on the stovetop, set to medium heat, and heat the oil until hot.
3. Add the popcorn kernels and immediately cover the pot with the lid. Allow the popcorn kernels to pop entirely or until you hear a 2-3 second pause between each pop. Remove the pot from the heat and let the popcorn cool with the lid off.
4. Place the Masterchef 18cm saucepan onto the stovetop and heat over medium heat.
5. Add the SPAR Brand White Sugar and ½ a cup of cold water. Allow the syrup to simmer until the sugar crystals have completely dissolved and a golden-brown colour is achieved, or for about 8-10 minutes.*Chef’s Tip: Don’t stir the caramel during the cooking as this slows the melting and recrystallises the sugar.
6. Working quickly, pour the caramel onto the prepared baking tray and sprinkle the popcorn onto the caramel layer. *Chef’s Tip: To clean the pot, add water to the sticky pot and simmer over low heat for 3 minutes. This will make cleaning easier.
7. Allow the popcorn brittle to set for 1 hour before using the handle of a spoon to carefully break it into shards. Serve and ENJOY!
