it's taken 3 months of me trying to convince my mum to accept me as vegan and she finally has I can now expand my vegan options and not have to be ashamed that I have different beliefs to my family, thank you so much for helping me find quick easy and cheap ways to stay vegan without the help of my mum I genuinely couldn't have done it without you
My favorite breakfast lately has been an everything bagel topped with hummus, sliced tomatoes, and little sea salt & pepper. So quick and delicious. I can't get enough of it.
I figured I should add a reasoning: the way you make fluffier muffins, non-yeast breads, pancakes, cakes, and other baked goods is by limiting the development of gluten. Gluten makes things chewy and elastic-y, like seitan or yeast bread. The way to limit gluten development is to avoid disturbing flour and liquids together. By disturbing, I mean mixing batters. The more you mix, the more gluten forms. So, back to sugar being a wet ingredient! Sugars dissolve in liquids. Therefore, if they are pre-dissolved in a liquid (coconut sugar mixed in the with banana mixture), you don't have to mix as much to combine your ingredients! Less mixing, less gluten, fluffier products! :)

my fav is super chewy thick porridge with chia seeds, cinnamon, pumpkin seeds, some good ole peanut butter, a few dates/prunes/raisins/apricot or all of them with a big glass of plant milk- my fav is cashew
You should check out a lot of Thai recipes. A lot of Thai people are vegetarian/vegan and since they've been cooking that way for so long they have great recipes. (My mom is from Cambodia, the sister country, so she's made some of these for me)
ZUCCHINI OATMEAL!!! 🙌🏻 my aunt has given me 3 huuuuge zucchinis from her garden & i was kinda getting sick of just putting them in pasta and making zucchini bread 😂

My absolute FAVORITE breakfast is rolled oats cooked with almond milk+water, then i top it off with fresh chopped strawberries (I love getting them from the farmers market but they're getting more expensive now, so frozen works too!), chopped pecans, and a liiittttllee bit of almond milk and brown sugar to sweeten! 😍😍
You have easily become my favorite RU-vidr over these past few months. Your videos are so organized, well thought out, and informative!! I went vegan for a month not that long ago and it really wasn't that hard for me since meat and dairy creep me out honestly. I've been researching how to do it more sustainably for the long run and your videos are SO HELPFUL. Your meals are fairly quick and easy, which I neeeed. (I'm the worst cook lol). It always makes me sooo happy if you put something in the pot and I see a bit left in the little bowl, like onions or patatoes. And then I see the next shot and you put the left overs from that bowl in de pot. Idk, just makes me feel good that you don't wasted that food!

my favorite weekday breakfast is oats! oats with berries, oats with banana and peanut butter, oats with turmeric and ginger... can't go wrong! and super filling for work/school~
I just started graduate school and have over an hour commute, so anything to save time in the morning really helps. I'll definitely have to try all three of these recipes!
My current breakfast obsessions: 1) Peaches n cream vegan oatmeal! Quick oats cooked with water and stevia, cinammon, splash maple syrup, fresh peaches thrown in pot last to warm up, and almond milk added ontop when in bowl 2) Avocado toast! Spelt bread toasted, avocado mashed with lime juice, black pepper, salt, and crushed chili pepper flakes 😄😆
I love adding banana to everything, so my favourite would be a smoothie with banana, cacao powder and berries topped with millet flakes and almonds 💓 (btw millet is so underrated. It has protein and detoxes our bodies, you should try it! Sometimes I switch my oats with millet flakes)

I just wanted to say thank you for all you do!! You have made transitioning from a meat eater to vegan so easy. I am vegetarian now, although I eat less and less animal products because your vegan meal ideas are so delicious. You've definitely helped me keep my diet interesting 😊
I made these wraps yesterday and added some smoked paprika and cinnamon and baked the sweet potato then also did some mushrooms in the pan and did a big ol batch and was able to get 10 wrapped up and ready to go in my freezer. They're so delicious so thank you!
When I lived at home I loved bagels and cream cheese or smoothies in the morning... when I went to boarding school it was eggs, potatoes, and oats, and fruit (just a lil bit of each, of course!).
My personal favorite weekday breakfast is coffee and some kind of pastry, so like toast or a cinnamon roll or a croissant. I'm really into the breakfast burrito thing though so I'm glad you included that recipe in your video!
My dad made these awesome breakfast burritos growing up (bacon, egg, & cheese). I have yet to recreate them, but with tofu scramble, vegan queso, salsa, and Sweet Earth's vegan bacon I could make a better version. I could also dip the burrito in some guacamole! YES! My mouth is salivating already. ☺️💕
I always come back to this video because omg the deliciousness. Who could dread waking up in the morning if that's what's waiting for you? Everything is mouth-watering. As a kid I loved the raisin bran cereals with milk. All sugar and barely any nutrition hahaha but it kept me hyped until lunch for sure. Thanks for sharing Caitlin!
Got super inspired and made the oats for my kids breakfast tomorrow it's midnight and I'm hanging around my kitchen trying to make your recipe. They look so yummy!!! I think my kids are going to love them.
I have never had sweet potatoes in a wrap, I think I am missing out! So going to try that with the next wrap I make. But I do have sweet potatoes quite often for breakfast to make a pumpkin pie spiced smoothie. I use frozen banana, baked sweetpotato, vanilla soy milk, and pumpkin pie spice. Sometimes I add pea protein powder or make a smoothie bowl with pepitas on top.
If I wasn't already subscribed I would have subscribed just because you used a novo amor song as the background music. I love novo amor so much! Also I will definitely take inspiration from these recipes

I LOVE kite hill cream cheese, my newest obsession! I found an amazing oil free sprouted garlic bagel to put the chives one on and it is so good! That said my newest breakfast obsession is def the Dr McDougall waffles! I can make up a big batch and freeze them, then toast them in the morning! My daughter loves them just plain, and I like a touch of maple syrup, plain, or w fresh blueberries! My other fav fast breakfast is the blueberry #2 recipe from McDougall's site. Also 4 year old approved. When I have a bit more time, a potato, pepper, onion, and tofu scramble hash is SO good, can even add salsa and make it into a breakfast burrito!
I'm definitely going to be making some burritos!! My favourite breakfast is two apples chopped into chunks and mixed with a teaspoon of cinnamon and sometimes a small handful of raisins or sultanas if I feel like it, microwaved for 2 minutes then stirred then microwaved for another minute and topped with some nuts if I feel like it (you can cook it on the stove but it's quicker for me on school mornings to use the microwave). It's so tasty and warming, especially as I live in Wales so it's often too cold for overnight oats or fresh fruit. I'm trying to change it up a bit though and eat more savoury meals like tofu scramble during the summer while I have time, so the breakfast burritos are going to be amazing once school starts back!
My favorite breakfast used to be an edited breakfast taco. It was basically an omelette with spinach, mushrooms, peppers, and tomatoes stuffed in a folded blueberry or chocolate chip waffle. I don't know why, but now whenever I want that I make a vegan version that tastes just as good but I think my adapted taste buds have outgrown that obsession 😂
My go-to breakfast is vanilla chia pudding I make the night before! I love to top it with blueberries, sliced strawberries, and cacao nibs. I also noticed I feel full longer when I mix in a bit of cereal as well. 😋 I think I'm going to try your oats recipe from this video!
Adding zucchini is genius! I add shredded carrots to my overnight chia pudding and it's great so now I will add a little zucchini (with skin) as well and it will be healthier than carrot zucchini bread ☺️
Thank you so much for your uploads! You have made my vegan transition so much less intimidating! My go to weekday breakfasts rotate between oatmeal, smoothies, and granola with cashew/almond milk! I'll definitely be trying out these three recipes from the video though!

I make a batch of quinoa porridge (quinoa, water, almond milk, applesauce, maple, chia, cinnamon) and heat it up throughout the week then top with nuts and berries. It's a good alternative to oats since my tum doesn't handle them well... And it'd probably be great with that blueberry jam.
My favorite breakfast was a chocolate croissant from the nearby bakery (SO GOOD) on Sundays. Since going vegan I've been on a life long mission to find the perfect vegan croissant no matter where I go LOL
I love watching your videos so much, they always inspire me and since you semms so happy they give me hope that better days/times in life will eventually come. I think it's great you took the brave step of leaving college for RU-vid, just because you seem more calm and look like you are exactly where you should/want to be. My favourite breakfast has always been pancakes with maple syrup, but on weekdays I ate these surgary Kids cereals due to the lack of time. Since I'm trying to eat healthier for many years now I'm mostly eating toast or oatmeal for breakfast, but when I can I love making myself potatoes with siracha and a few salad leaves in the morning (in the microwave - although it's a weird breakfast I know). I have to get up at 3:30 in the morning to make it to work, so breakfast is normally a smoothie or coffee and a muffin/granola bar/whatever to go. Occasionally, I'll have a Lenny and Larry's Complete Cookie as a reward for making it through the week. 🙃

I really liked these recipes!! Well, I'm from the coast of Ecuador so my ideal breakfast is a traditional one: baked/grilled (asado) plantain(green) w/ roasted chopped peanuts and salprieta which is a mix of corn and peanuts and you press the plaintain on that and it is wonderful. You should totally google it! It is a super traditional breakfast from Manabí (the providence where I'm from) and vegan! Lots of love!
My go to favourite breakfasts are probably either toast with peanut butter and fruit on the side or a bagel with margarine and tomato slices with plenty of pepper on top :) I'll have to try making oats with zucchini sometime!
I tried the chunky monkey banana bread muffins and they were Delicious, I didn’t have some of the ingredients but I was so so excited to make it so I made it anyways Lol, I left out the nuts and baking powder and flax egg and they were great!
On a weekday morning I'd usually eat yogurt with some granola! I've recently started cutting off dairy products from my diet, and am trying to find a good substitute for yogurt! We don't have many vegan substitutes where I live and it's really important for me to get my prebiotics :( love your videos! I don't think you even realize how much u inspire me to try new and interesting plant based goods. I used to think it was all about the salad. u showed us it's definitely not just that!!
