Awesome job man. I use the grill eye for temps. You can stick one probe in meat and the other inside the grill. Then you just watch temps for both from the couch 100 feet away on your phone. Thanks for sharing those looked great!

I cook sous vide most of the time or I'd get a thermometer system like that. I may still get one this season since I'd like to use the charcoal grill more often. Thanks for watching.

You should boil the water before adding it. You can warp the slow and sear if you don't

Those ribs were done at the 5hour mark as long as temp between the center bone around 207 they done

You need a grate probe, dome temp will be about 100 degrees higher than grate temp

Would apple juice work well instead of water to enhance flavor,?

No. Unless you apply the apple juice directly to the meat. If you put apple juice in the trough it will only evaporate water leaving behind all of the sugar.

Can the rib rack fit down inside under the grate level with the slow and sear?

No. The slow N Sear is shaped to fit on the top grate. It would be too big on the bottom rack.

@@Paisteboy yeah I checked myself. I bought the same rack at stines and tried it with my slow and sear and it wouldn’t work. It was worth a shot tho. I’m smoking three racks today 🤙🏻

The hot water should be added at the opposite end away from where you started the coils.

Wish they had a better rib rack than the one that we ever made. It doesn’t hold the ribs very well the flop all around in it.

That was an awesome first cook! In hindsight, you could have removed the done rack and finished the other two. The fewer the racks, the better the presentation. You can cook three or four and they will taste just as good, but they won't be as pretty.

The Weber rib rack sucks. I bought another brand off of Amazon that is 15 inches wide, made of 304 stainless steel, and it works great. Get a wider rib rack it makes a ton of difference. Also get nitrile gloves and glove liners. When changing the position of the ribs it works much better than tongs. Keep up the good work!

I'll try that sometime. These ribs were more available and on sale. I have a coupon for more of these same ribs so I'm going to do those at least one more time before getting some baby backs. Thanks for watching Dennis. Are you looking forward to snowmobile season yet? I'm going to buy the 2 up seat and backrest for my sled and take my wife to Old Forge. We should take a trip together with the wives.

It's all personal preference but baby backs come from a different part of the pig and are typically leaner as spare ribs have a higher fat content that will keep the the ribs more moist and have a better flavor profile.
