Ingredients for Pethe ka Halwa Recipe
Medium ash gourd (petha) 1
Sugar 3/4 cup
Green cardamom powder 1/2 teaspoon
Milk 3 cups
Mawa grated 3/4 cup
Cashewnuts roughly chopped 2 tablespoons
Ghee 2 tablespoons
Rose water 1 teaspoon
Fried cashewnuts 6-8
Method
Step 1
Peel, quarter, remove seeds and grate the ash gourd and keep it soaked in water.
Step 2
Heat a non-stick pan, squeeze the grated ash gourd to remove excess water and put into the pan.
Step 3
Add sugar and mix well. Add green cardamom powder and mix. Add 2 cups milk, mix well and continue to cook till most of the milk gets absorbed.
Step 4
Add remaining milk, nix and cook, stirring continuously. Add mawa and mix.
Step 5
Add cashewnuts and cook, stirring continuously.
Step 6
Drizzle ghee along the sides of the pan, mix and cook till thick. Add rose water and mix.
Step 7
Transfer into a serving dish, garnish with fried cashewnuts and serve hot.
