@@nisahahmad264 To make neeragaram which is also called ice briyani, soak left over rice in water overnight.In the morning add salt ,curd(optional) and mix them well and have it as a meal or drink with pickles or chutney

Raabdi is consumed as probiotic drink during hot summers in Rajasthan. Barley porridge (jau daliya) is cooked in chhas(buttermilk),like Kadhi, during evening time and left overnight. It is blended with chhas and consumed as a drink during mornings.

Keep Leftover Rice in a mud pot fill it with water,little bit of salt and Buttermilk and leave it for a day or two and eat that rice with pickle and drink that liquid..its our traditional probiotic recipe for Summer since my childhood.

Well, here in Odisha we have our 'pakhala' which according to aiims bbsr is a great source of probiotics and is one of few vegetarian ways of obtaining vitamin b12. It's a type of rice fermented for few hours or preferably overnight and mostly eaten in summers

Down South v have kooz ,which is ragi and rice mixture left to ferment and consumed, especially during start of summer, very refreshing and a must. Mostly during the month of Tamil month Addi, it is consumed.

In south we brine a lot of seasonal fruits and veggies, carrot, beetroot, raw mango, mango, bimbli, guava, plantain stem...I have even tried ivy gourd/tindora.... all of these are lacto fermented food

In Bengal peasants working in the hot sun use leftover rice covered in water and left to ferment overnight as a probiotic food. It is taken with salt and maybe a raw onion which cools the body.

Thanks. In Bengal we use fermented cooked rice called Panta bhat. Cooked rice with little water is kept overnight for fermentation. It turns mildly sour. Eaten with chilli, onion and a small bhaji.

Hi, as you probably know, people in northeast India (Nagaland, Manipur, Mizoram, Arunachal Pradesh, etc) eat a lot of fermented foods, namely fermented bamboo shoots (both wet and dry). I cook with them because they're delicious (with meat, fish, but also veg and in pickles), but I'm now wondering if they may be also be a good source of probiotics?

In olden days people used to soak leftover rice in water nd keep overnight and consume it next day along with dahi or some chatni. This rice is very good in probiotics. You can also mix dahi or butter milk to the rice nd keep overnight. It is very good for health.

Yes - you are 100% right! Being a South Indian - I have had this humble yet filling breakfast everyday non-stop throughout my school/ college/working life in B'bay till the age of 26! I have absolutely no regrets about any fancy breakfast. I could be free of hunger fr minimum (6) hours! Thanx to the good old meals - it's kept me healthy so far!

Sit cooked rice for 24 hours in water and eat that as breakfast or lunch in summer time. We call it pantavat in Bengali. I always make sure that each and every day as lunch i eat pantavat. Pantavat is full of natural probiotics. You can eat that with anything. i normally eat with kasundi ( a kind of bengali mustard sauce ), onion , fish fry and green chilli and some times with otherthings.

@@kirannathani9123 No need to let it sit for 24 hrs ( I prefer that cause I eat it a bit extra fermented rice ), let it sit for just the night. like you cooked the rice at 9 pm, let it sit for rest of the night and eat that rice at 8 am or 9 am as your breakfast and eat that rice along with that water.

It was told to use black carrot in the kangi but is purple carrot same as black carrot ? In US we see the purple carrot variety but not the black so please suggest if that the same.

Hi I have a doubt.dont the good bacteria die while we cook or refrigerate? Fermented batter of idli & dosa has probiotics in it but after cooking do we still have them?

Hi, That's a good question! There are some scientific studies have shown that 'traditionally steam cooked idli' does retain some beneficial probiotics even after cooking. Unfortunately, I could only find studies done on cooked idli (we do need more studies to prove this). But my own understanding is that there are bilions of probiotics in an idli/dosa/dhokla batter; and even though there will be some loss in numbers of probiotic bacteria during cooking, the entire bacterial load will not be lost for sure. Hope that helps!

Yup agree but probiotics and prebiotics both are important for a healthy gut. That's why breastfeeding is important for a Healthy Baby. breastmilk has prebiotic and probiotic properties that can modulate two of the main forces controlling the gut microbial community

You must add prebiotic with PROBIOTIC add onions with curd which is raitha... But still these are very few in CFU and no good compared with you must try sauerkraut, kimchi, kombucha, kefir bcos I tried all the Indian methods to no avail only these are more beneficial👍 Indian desi cow ghee A2 is another good source for gut health.. sauerkraut and kefir (they quickly replenish only with good prebiotic you consume) tops my list in food other than that you can take supplement

The idly/dosa batter would have probiotics as it is kept for fermenting. But, the batter has to be cooked.. Will the probiotics survive that?

Very skeptical of the claims made here. Surely the bacteria used in fermenting Idli and Dosa batter are killed when they are cooked! And normal pickles are made to so that bacteria don't spoil the food. If bacteria is surviving in those pickles then there's something wrong. Pro-biotic pickles are different. They are fermented and then refrigerated. The only believable suggestion seems to be Kanji.
