600ml water (2.5cup)
1 dashi bag
3-4 tbsp miso
dried wakame
▷Tamagoyaki (Japanese rolled omelette)
3 eggs
3 tbsp water
1/2 tsp dashi powder
1 and 1/2 tsp sugar
1 and 1/2 tsp soy sacue
▷Seasoned salmon
2 salmon
salt
sake
3 tbsp mirin
2 tsp soy sauce
▷Dressing for salad
1tsp soy sauce
1 tsp sesame oil
1 tsp vinegar
sesame seeds
Day2 chicken rice bowl breakfast
▷Pickled cucumber
1 cucumber
salt
1 tbsp sugar
1 tbsp soy sauce
1 tbsp sesame oil
▷Chicken rice bowl
■seasoned minced chicken
150g (5.3oz) minced chicken
1 tbp sake
1 tbsp mirin
1 tbsp soy sauce
■seasoned spinach
150g (5.3oz) spinach
1/2 tsp sugar
1/2 tsp sake
1/2 tsp soy sauce
■seasoned egg
2 eggs
1 tbsp sugar
1 tbsp sake
1 tbsp mirin
1 tbsp soy sauce
▷miso soup
300ml (1.3cup) water
1/2 dashi powder
dried wakame
spring onion
2 tbsp miso
Day3 seasoned cod breakfast
▷seasoned cod
2 cod
salt&pepper
sake
olive oil
15g butter
2 tbsp soy sauce
Day4 egg sandwich breakfast
▷asparagus &paprika side dish
5 asparagus
1 paprika
1 tsp sesame oil
1 tsp mirin
1 tsp soy sauce
salt
sesame seeds
▷carrot side dish
2 carrots
1 can tuna, drained
1.5 tbsp mayo
1 tsp soy sauce
1 tsp vinegar
salt
▷wakame soup
400ml (1.7cup) water
1 tbsp dried wakame
1.5 tsp Chinese chicken powder
2 tbsp chopped spring onion
salt
1 tsp sesame oil
▷egg sandwich
2 toasts
mayo
salt&pepper
3 eggs
2 tbsp water
1/2 tsp dashi powder
1 tsp sugar

★About seasonings
--Substitute for Mirin and Sake--
If you can’t find mirin or sake in your city, you can substitute them like this👇
For 1 tbsp mirin use either:
1 tbsp sake + 1/2 tsp sugar
or
1 tbsp white wine + 1/2 tsp sugar
For 1 tbsp sake use:
1 tbsp mirin
or
1 tbsp white wine
It won’t be exactly the same, but still works 😋

These look fantastic! What I love is that you’ve taken simple ingredients that are relatively easy to get. Any challenging ingredients could be simply replaced by something else, and all of these would still turn out amazing

Wow! They all look delicious! I've tried your simple miso soup a few times and it always turns out good and makes me happy. I've bought a tamagoyaki pan and so far, I'm not very good at it, but practice makes perfect! Thank you for sharing wonderful inspirational breakfasts with us!

I made seabass for dinner tonight; whilst I was cooking, I was thinking I could save the smaller fillet and have it for breakfast tomorrow, Japanese style! I clicked on RU-vid to watch something whilst I ate, and your video was here, showing us all about different breakfasts, a wonderful coincidence! If I have the energy, I might try making the tamagoyaki to go along side it, with some seasoned salad, pickled tomato and rice!

I never liked mayonnaise until I tried kewpie mayonnaise. It really is the very very best and taste totally different. Thanks for the recipes love the egg sandwich

For the vinegar, regular white vinegar or rice vinegar? I recently learned that we have a Japanese Grocery store in our city. It's not the typical Asian market. They specialize in Japanese products. I make Shokupan at home but they sell the real thing there so I had to try it. Honestly, it's hard to tell the difference other than I can taste a little more salt in the one I bought at the store.

I'm talking out of my ass as I've never lived in Japan, but in Taiwan (where I used to live) and Korea (where I'm living now) the elaborate breakfasts are more of weekend thing. On weekdays it's often some combo of eggs, rice, and the soup from last night's dinner. In Japan I imagine natto is in the equation too 😂

What would you recommend to replace salmon/tuna with? I like Pangasius would that work in these recipes?

Hi! I have a question. I wanted to buy the bonito powder you often use in your recipes, but I could only find dashi no moto in the supermarket. Can I use it instead of normal dashi powder?

Yes! Dashi no moto is same as bonito powder :) They translate different ways depending on the supermarkets.

Thank you for the comment! Are you in Japan? I always buy it from Kayanoya. It's a very popular dashi brand but a bit expensive and they don't sell it in the supermarkets. You can buy it from their shops or online ☺️
