Mushroom Birria Base
Ingredients
1.5 Lbs Oyster mushrooms (more or less)
5 -6 dried Guajillo chiles
2 -3 dried Cascabel chiles
2 - 4 Arbol chile (optional for extra heat)
7 cloves garlic
1 medium onion, quartered
4 ripe tomatoes
1 tablespoon cumin seeds
1 tablespoon coriander seeds
1 teaspoon black pepper corns
1 teaspoon dried oregano
3 -4 cloves
1 cinnamon stick
1 lemon, juiced
Salt to taste
3.5 cups vegetable broth
For the Tacos:
500g (about 1 pound) oyster mushrooms, shredded
3 tablespoons olive oil
Salt to taste
Corn tortillas
Vegan cheese (optional)
Chopped onions, cilantro, and lime wedges for garnish
Instructions
Birria Sauce: Toast Chiles: Remove stems and seeds from the chiles. Toast them in a dry pan over medium heat until they start to puff up and release their aroma. Be careful not to burn them.
Reconstitute Chiles: Place the toasted chiles in a pot with boiling water for about 10 minutes until they soften.
Blend Sauce Ingredients: In a blender, combine the softened chiles, garlic, onion, tomato. Blend until smooth. Add left over liquid from soaking the chillies.
Simmer the Sauce: Pour the blended sauce into a pot. Bring to a boil, then reduce the heat and simmer for about 20 minutes to allow the flavors to meld. Adjust salt to taste.
Prepare the Oyster Mushrooms:
Cook Mushrooms: In a large oven safe pot, heat oil over medium heat. Add the oyster mushrooms and press a couple times on each side to sear and caramelize. Cook until they're nicely browned and reduced in size, about 10 minutes.
Mix with Sauce: Add enough birria sauce to the cooked mushrooms to coat them generously. Stir well and bring to a simmer for 10 minutes, allowing the mushrooms to absorb the flavors of the sauce. Then cover and pop in a 180C / 350F oven and cook an additional 45 mins. Remove from oven and allow to cool. Strain the mushrooms from the broth (save the broth) and separate according to which recipe you want to do.
Assemble the Tacos:
Mince mushrooms and sauté with diced onion
Heat Tortillas: dip the in the broth and warm the corn tortillas on a skillet
Spoon the mushroom mixture onto each tortilla. If using, sprinkle some vegan cheese on top.
Garnish with a side of broth with chopped onions and cilantro.
Lentils:
1 cup Green speckled lentils
3.5 cups broth/water
2 celery stalks, diced
2 carrots, diced
Teaspoon cumin
Salt and pepper to taste
Bring lentils to a boil then lower to a medium simmer until cooked soft
Crispy Fried Birria ‘Chicken’ Mushrooms
INGREDIENTS:
Birria broth marinated Oyster Mushrooms
3 parts all-purpose flour and 1 part cornstarch (3 cups: 1 cup for one batch)
1 teaspoon white pepper
1 teaspoon garlic powder
1 teaspoon onion powder
1/2 teaspoon salt, or to taste
Juice of 1 lemon
3 cups Plant-based milk
1 cup birria sauce (for dipping or tossing)
Instructions:
Dry Batter: In a bowl, mix together the all-purpose flour and cornstarch. Add the white pepper, garlic powder, onion powder, and salt. Stir to combine evenly.
Wet Ingredients: plant-based milk, lemon juice, ½ cup Birria and mix together
Dip and Coat: Heat oil in a deep fryer or a large pot to 350°F (175°C). Dip each mushroom piece into the batter, TWICE, allowing any excess to drip off.
Fry the Mushrooms: Carefully place the coated mushrooms into the hot oil. Fry in batches to avoid overcrowding, which can cause the mushrooms to stick together and not crisp up properly.
Fry the mushrooms until they are golden brown and crispy, about 3-5 minutes depending on their size.
Drain: Remove the mushrooms from the oil and let them drain on a wire rack or paper towels to remove excess oil. FRY TWICE
Serve: Serve the crispy fried mushrooms with a side of warm birria sauce for dipping, or toss them in the sauce for an extra flavor kick.

I agree! Where I live if you want a vegetarian or vegan taco or burrito you get some lettuce, tomato and onion. That is IT! No lentils or mushrooms .....I won't give them my business.

These look delicious. I’m rarely intimidated by kitchen techniques but this is like watching Michael Jordan play basketball. The rapid edit cuts make it look easy but I know better. Wish I had access to such great mushrooms! Frankie is the bomb.

Looks amazing - definitely will try these! WARNING though for those that don't work with dried chill's often - 100% wear gloves when you are removing the seeds. I didn't do that one time with Arbol chili's - touched my eyes later in the day and it hurt like heck. #2 - go easy on Arbol as they are very hot.

Hello, native Mexican here. FYI, not sure if it's mislabeled, but the chilis you had as "chile de arbol" were not those. Those were Chile Puya a hotter, smaller version of guajillo. Arbol is brighter red, thinner, hotter, and smaller. In any case, this recipe looks FRICKIN' amazing! A couple of drops of fresh lime in the consomme when served is the finishing touch. Will try today this today!. And LOVED to conversion of a chicken farm to a mushroom farm. ❤🐔

On the doco, We are what we eat, they showed a guy that was a chicken farmer. One morning he woke up, and said, I can't do this anymore. So he was left with huge empty barns. And ended up putting containers in them and grew mushrooms.

Its actually easy, especially if Mexican to be vegetarian. Hispanics also eat lentils, garbanzos/chickpeas, fava beans, green beans, etc. In Mexico they are usually cooked like pasta soups with a tomato, garlic, onion broth. And corn tortillas are also vegan. Cactus or nopal salad is super delicious. And soy chorizo was popular in Mexico before it was in the U.S. It might depend on what Hispanic country one comes from though. I know Argentines love their meat.

Your chicken farm to mushroom farm activism is truly an amazing idea. People love to say vegans hate farmers but that's not the case. We love farmers and want to show them and encourage them and support them in converting to a more compassionate and possibly more profitable way.

Derek! All I have to say is.. wow!! I'm an aspiring plant based chef looking to take it up a notch and get professional, and your channel is literally amazing! All in one. Professionalism. Expertise. I’m allergic to oyster mushrooms, please please!!! I’m begging you to try this in a future video, it’s freakin’ awesome: get dried shitake mushrooms from an asian supermarket, soak in boiling water, remove stems & blitz in a food processor: best “mince” you’ll ever eat, better than lentils, better than ALL of the plant based-crumbles, MUCH better than fresh crimini/ portobello/chestnut/button mushrooms. Serious “meaty” texture & no spores to defeat my immune system. 👊🏻💨💨 Much love Derek 🙌🏻🙌🏻🙌🏻💚

I like shitake mushrooms but they have a strong flavor. If I was making a vegan birria I might instead opt for jackfruit to give it that meaty beef texture.

ABSOLUTELY LOOOVE your channel! 😍You are so inspirational! I’ve been wanting to become up a vegetarian for a long time but you are inspiring me really take the big leap and actually do it! I love how “mushroom forward” you are and I love mushrooms so I know I can still have delicious and healthy meals now! Also, I absolutely love your dog! lol she’s so cute and I love that you treat her like gold! Just can’t say enough good things about you and your channel and I only wish more of your products were available here in Ontario Canada! Keep being amazing!! Btw, I was watching a documentary recently.. I forget which one but it might be called You Are What You Eat.. and there you were! I was so excited I told my boyfriend look that’s my favourite vegan RU-vidr!! Hopefully your project with turning the chicken farm into a mushroom farming business really takes off. So many steps, so much patience and attention to bring so much dimension and joy and compliment and love. I'm drooling...and that sucks because where i live i can't get many of the ingredients or i would be making this right now!!!!!!

Derek your dishes incredible! The ones I’ve tried are truly delicious. And it’s amazing that you turned your chicken farm into a mushroom farm. I just started a Lyons Mane crop in my kitchen! All because of you, I started growing mushrooms!

I just found this page this morning and i cannot look away. I am trying to start a new, healthier chapter in my life. I've recently lost another 20 lbs, but I have a loooooooot more to go and I love meat; so whenever I come across videos that show how to use meat substitutes like mushrooms and jackfruit, I get excited. Even for me that Im Mexican, its interesting to learn to cook birria ;) only people touched by God, knows how to hahah... thank you for bringing back this delicious meal to my menu :) here in mexico I only find setas... but they look a bit like those oyster mushrooms you use. Are the mushroom nutricious? I havent checked that out. Saludos Derek, I love it how you enjoy cooking and tasting :)
