Bajan Fish Cakes
Ingredients
1 lb deboned salted cod
1 scotch bonnet pepper finely diced
2 green onions finely sliced
6 sprigs of fresh thyme (remove leaves from stem and discard stems)
1/4 cup of finely diced parsley
2 cups of flour
1 tsp baking powder
1.5 cups water
2 tsp onion powder
1 tsp garlic powder
Salt and pepper to taste
2 potatoes boiled and mashed
6 cups of oil for frying
Directions
1. Fill a large pot with cold water and place your salted cod inside water. Turn the stove onto
high and bring the pot to a boil. Once the water is boiling, take the pot off heat and strain.
Discard the liquid and set the cod aside to cool.
2. Once the cod is cool enough to handle, shred it.
3. In a large mixing bowl add shredded salted cod, herbs (parsley, chives, green onions, thyme),
onion powder, garlic powder, salt and pepper, mashed potatoes and water. Stir ingredients till everything is well mixed.
4. In a separate bowl mix flour and baking powder.
5. Add bowl with dry ingredients to wet ingredients and mix until well combined. You are aiming
for a wet mixture that you will spoon into the oil.
6. In a pan suitable for frying, heat 6 cups of oil at medium to medium high.
7. Once your oil is hot scoop spoons of your fish cake batter into hot oil and cook until golden
brown on each side. Flipping them throughout the cooking process.
8. Once golden brown, remove fish cakes from oil, place on a paper towel to remove excess oil,
and enjoy!
Heather’s Sausage Pasta
Ingredients
1 kielbasa
2-3 roma tomatoes
4 (or more) cloves of garlic
4 green onions
2 cups red wine (bold and dark wines work best, we usually use a syrah)
2 15 oz cans of tomato sauce
1.5 tsp liquid smoke (we use a hickory smoke)
Directions
1. Slice kielbasa into rounds aprox 1/4" thick or less. Put Kielbasa into a large pot on medium high heat.
2. It is VERY important that some pieces of kielbasa are blackened. Stir occasionally to assure even cooking. Turn heat down to medium after kielbasa is properly cooked; aprox 10 minutes.
3. While kielbasa cooks, remove skins from garlic and mince. Quarter, seed, and dice tomatoes into half inch pieces. Thinly slice green onions, separating the green from the white portions.
4. Once the pot has been at medium for 4 minutes, add the minced garlic and let it cook until aromatic and give it a good stir to incorporate it into the kielbasa.
5. Turn the heat back up to medium high and add the red wine. Allow the wine to come to a boil for aprox 5 minutes.
6. Add the tomato sauce, stir to combine. The sauce should be a burgundy color (not tomato red). Add more wine if you think the color is off.
7. Immediately add the diced tomatoes and the liquid smoke
8. Add salt and pepper to taste, keeping in mind the kielbasa will already add saltiness to the dish.
9. Allow to cook uncovered on medium high for about 30 minutes until the sauce is thick and tomatoes have broken down. (This will splatter everywhere and make a mess of things. It's worth it!) Stir occasionally.
10. After it's cooked for about 10 minutes, add the white green onion bits.
11. Serve on top of pasta. My brother (creator of the dish) would say linguine noodles are the right noodles, Kelli would say that doesn't trap enough of the sauce so she prefers penne. Pick your fav and run with it!
12. Garnish with the green onions tops!

Beryl, how do you even do that? Your content is so feel-good and heartwarming, yet it never, ever feels too sappy, kitschy or exaggerated. This episode takes the cake - most YT creators would just shove the sentimentality down the viewers' throats, but somehow this was so authentic I just cried. Please, please, never change. I wholeheartedly agree. I had a very difficult day with possibly life-altering consequences health wise. The last thing I would have wanted to watch would have been something cheesy and sappy. What I got was heartwarming and uplifting human connection, and a reminder, that there is happiness to be found even in small things like a shared meal with someone you love.

The Filipino couple reminded me so much of my recent visit to my parents. My mom has rapidly advancing dementia and my dad is struggling with this first stage of losing her. Multiple times he mentioned missing her cooking, as she can't do it anymore - and it's because they have been together since they were teenagers and no one knows each other the way they do. Everything my mom fixed for him was made with her love, and that can't be replicated. Food is love.

I'm from Coimbatore, Tamil Nadu but now live in San Francisco. And watching Abhinaya put deep fried croutons in her biryani took me back to the meals at my elementary school canteen. I hadn't seen deep fried croutons in biryani outside of Tamil Nadu and had entirely forgotten about it. But this video took me back to my childhood ❤

You're a food ambassador Hon! Your channel brings the world together by ignoring differences and focusing on our similarities. I love the fact that you don't come off as a chef who makes no mistakes. You admit when you didn't do something correctly or even when you don't like something. Beryl you're a gem! I would watch anything that you focus on here. I like when you take a staple item like rice, eggs or cucumbers and show how they're made and used (like medicine or to show love) in different countries. 😊

The line from the Britsh couple, "I love you so much, that I would peel shallots for you" made me laugh out loud. It's similar to a game my husband and I would play when we were a young couple. We would try to one up each other with outrageously silly responses. 💞❣️❣️❣️

Oh this one was so sweet! It’s beautiful to see everyone’s love expressed in these simple interactions! My husband is from Northern Ireland and I’m from the west of Scotland. We met in the military 15 years ago and got married ten years ago. My mother had a stroke and moved in with us and our two children in 2017. Hubby and I are both paramedics so to keep things easier for childcare we work alternate shifts. So I work Thursday to the following Wednesday then he works that Thursday to the following Wednesday. That way there is one of us home every day to help my mum and look after the kids. So we really don’t get much time together at all. We have to book holidays from work to spend time as a family. But that means that when we are off together we make the effort to cook together. Usually nothing complicated but good steak, baked potatoes and veggies. It’s how we say we love and miss each other whilst still being stupidly busy. Also being typically reserved Scots/Irish we’re not big on verbal declarations! But cooking his steak how he likes it is my way of letting him know he’s always in my heart and mind.

I really liked this video. It is an inspiring twist to your beloved format (don't EVER abandon what we've grown to love). Your usual format includes the recipe originator describing it. Great. Love it. This kind of 'extended' format should be included 'every-so-often'. I appreciate the effort it takes to coordinate this across time and distance. So, you know, every-so-often; perhaps with varying themes. Love how you mixed it up for us!

Beryl!! As you say at the end, this clearly looked like a labor of love but it totally came through the screen. I loved the extra angle of seeing you cook the dishes in your kitchen and, while I’m sure hiring crews around the world isn’t always an option, it was such a wonderful little spotlight into some special people in this community. The sharing of the fishcakes with your neighbor hit a chord with me. During the Depression here in England in the 1930s, my grandparents were barely scraping by, and it wasn't much talked about but in the 1990s my grandmother opened up about it. It turned out that my grandfather would often make fishcakes to stretch what fish was available (they lived in a fishing town) and if there was enough left over, he would leave some on the back wall for the lady who lived next door. I can't imagine the poverty, but the reference to his act of kindness has always stuck with me. Excellent episode, and some wonderful stories and people.

Love love love love this episode! Thank you! So many ideas for dinner with friends. I think an episode that focuses on two serving or single serving meals would be nice. Being single, it’s difficult to find good homemade meals that are fit for one (or two so there are leftovers the next day) that don’t overwhelm you with food. I rely so much on over processed frozen meals, takeout, or cereal, and I’m sure I’m not the only one. Thank you again for an amazing channel.

It's wild how literally every video you produce is the best video I ever watch. This is like a favorite TV show now and I always look forward to the next episode! And this one was so amazingly special, heaven knows we need all the reminders we can get that there is still beauty that exists in humanity, and your videos are perfect for that purpose! And what better medium exists than FOOD??

Beryl, i'm literally crying the entire time i watch this! great job! it reminded me so much of my relationship with my boyfriend, we've been together for 7 years and we met in our highschool. we were highschool lover. He loves to cook and I can't cook at all. He loves to give me new dishes to try and even take me to new restaurants around town. This episode definitely makes me feel nostalgic. I love this, and I love you.

Beryl, hiring professional videographers to film this really took this video up a notch. The change in camera angles, even in your kitchen, felt refreshing.
