Heidi, after getting notifications from SO many channels, to find nothing but a short, I want to say THANK YOU - thank you for putting in the time and effort and thought and caring to provide so many VIDEOS, EVERY DAY!!! In the busy season I can't even find time to watch them daily - I can't imagine how you find the time to PRODUCE them daily - but I am SOOOOO glad that you do!!! I have learned more from you, I think, than all the other channels I subscribe to combined. You are a tremendous blessing, and I wanted to take the time to tell you I APPRECIATE YOU!!!!!

I have a candy-addict early teen. I’ve been converting her to dehydrated fruits with pineapple, kiwi and apple her current favorites! I know it’s still “sugar” but a much better alternative and hopefully a gateway to long-term healthier snacking for her:).

Here in Australia we are heading into our summer. I dehydrated heaps of coleslaw ages ago so on nights when I'm home late from work, the house is hot and I don't want to cook I just get some coleslaw pop it in a bowl add whatever dressing I want, get out of work cloths have a drink then coleslaw is re hydrated and ready to have with other foods.

I’ve got five trays of blackberries dehydrating. It’s a bit of a sticky mess but i persevere. I’ve finished and powdered one batch already. I have not tried it. I got so many berries that i needed to do something. I think i’m going to do your pumpkin dehydrating, too. I have too much in the freezer and fresh pumpkins waiting for processing. We don’t eat a lot of fresh pumpkin so this is a great way to make it last. I wish i had your energy, though! 😊😊

Last year I submitted a photo to your dehydrating collaboration, one jar of apple slices & one jar of carrot slices - that was all the dehydrating I'd ever done. Now, thanks to you, I've dehydrated apples, oranges, lemons, limes, mushrooms, potatoes, carrots, cabbage, basil, thyme, parsley, oregano, borage, comfrey, raspberry leaves, strawberry leaves - I'm sure there's more, but that's what comes to mind. I don't have an outdoor kitchen, and I don't have air conditioning - canning in the heat of summer does not interest me, and isn't easy for me to move outside the house, but it's a simple thing to set my dehydrator up in the garage or on the patio table, or even the edge of the back steps. I recently purchased farm fresh eggs, but at a farmers market, so they had to be washed - I'll be trying them next, and who knows what else! And I love it! The budget is mighty tight right now, and I have a couple other things higher on the priority list (your vacuum chamber, for one) but I'm going to try to put aside at least $20/month, and will eventually buy a second dehydrator. For the first time in my 3-years-so-far journey, I feel like I made good progress on the preservation front.

Many dehydrated, powdered items can be incorporated into non liquidy dishes, too. I sprinkle powdered greens, veggies, mushrooms on steaks, chicken, or pork chops. Yum!

I've also started dehydrating more over the last couple of years. I actually have a pot of split pea and ham soup on the stove right now, and I didn't have any carrots (fresh, canned, frozen), but earlier this year when I'd bought some carrots at the farmer's market, and I dehydrated them. So, I grabbed a half-cup of those and they're perfect. Running to the store isn't just a two-minute drive here. So, if I needed carrots, I'd travel 40 minutes one way to the store.

I started dehydrating last summer, and I really enjoy this food preservation method. I don't yet do any canning, although I want to learn how to can. I make a lot of soups in the fall and winter, and it's very convenient to have shelf stable vegetables already cut and ready to use. Sometimes I'll actually prepare dehydrated ingredients in a jar for soup in a jar meals. Very convenient! When dehydrating mushrooms, I'll powder those up and then make an umami seasoning, which is very tasty!!

I found that my frozen diced and sliced carrots dehydrated beautifully. I tried both raw and raw/blanched carrot diced pieces and the blanched ones are definitely better looking. Slices have to be pretty thin to dehydrate here in AL humidity. Hope that helps.

Heidi, look up recipes for shucky beans or leather britches to see how Appalachians eat dried green beans. In our house we eat them by the bowlfuls with a piece of buttered cornbread. 😋 Edit - if you find them bitter, give them a preboil for 15minutes, drain then add fresh water and seasonings (for us that means pork). Gets rid of the bitterness.

I heard you mention in your pumpkin video that if the peel is tender you will dehydrate it. Have you ever dehydrated the firmer skinned pumpkins? Miss Heidi, you are THE dehydrating guru. I stopped dehydrating for awhile because I had trouble knowing when something is finished and I've over "cooked" so many things. I did do some milk, cheese, and eggs along with vegetables. I powdered the milk and the eggs. I think they're ok, but haven't tried them yet, but I have some cauliflower and broccoli that looks so unappetizing and the cheese has a strange texture. lol However, I WILL be eating them. Do you have any advice for getting the time and temperature right? Thank you for all you do!

@RainCountryHomestead
@RainCountryHomestead 8 месяцев назад
That is because you are doing it backwards: 1) cook the meat, 2) freeze the meat 3) dehydrate the meat. It must be in that order. It is ok if the meat was frozen to begin with if you are trying to clean out your freezer but you still need to freeze it again AFTER cooking and BEFORE dehydrating Also, you only need to thaw the cooked meat enough to spread it on your trays. I hope this helps!

Has anyone dehydrated soup..as jn chicken noodle or tomato or mushroom soups? I like making soups and if I can dehydrate it and just add water to reconstitute that would be awesome.

I’ve only dehydrated broth, but I think some soups would be fine dehydrated. I don’t think I’d dehydrate anything with pasta in it, though. It would probably turn to mush when rehydrated. Maybe just dehydrate the soup and then cook the noodles when you’re rehydrating.

I love dehydrating foods, not just for me to use in my cooking but also for my major mitchell who absolutely loves it. I do have a question though, when dehydrating herbs in the dehydrator is there a temperature you shouldn't go past? Reason I ask is cause the Dehydrator I have tells me what temp to use for what and I have found that using the temperature they say takes a good 24 hours to dry.

No, cook up, freeze, then dehydrate. This trick is for those who do not have a freeze dryer and do not want one or cannot afford the expense

Great video Heidi! I have started dehyrating vegetables and moringa leaves. But, I keep the jars in the freezer. I live on the coast in South Texas where it is so humid. Should I worry about the dehyrated food getting moldy? Is there something I could do to keep them safe?
@RainCountryHomestead
@RainCountryHomestead 8 месяцев назад
If the jars are vacuum sealed, you would not need to store them in the freezer as sealing them would prevent moisture from getting into the jars

First thank you for all you advice on way you dehydrate. My family thinks I go overboard partly because they get tired of it running all season once the garden is ready. lol but I have a questions about rhubarb since you are the first that has mentioned dehydrating it. I have a bunch in my freezer because I didn't want it to go bad and wasn't able to use it up so I bagged it and put in the freezer. I know once it thaws it is very watery but wondered if you would still consider dehydrating it once it has already been frozen?
@RainCountryHomestead

Yes and I have done that too. I simply strained off the liquid and put on my trays

Heidi, I am a long time subscriber and love your videos. You may have talked about this before but if so, I can’t find it. I dehydrate a LOT of cheese but found that anything with an additive flavoring (like pepper Jack cheese) goes bad in a matter of months versus plain cheddar and other plain cheeses which are good for a long time (some of our dehydrated cheeses are 4 +years old and still very fresh). We found the same outcome with our freeze dryer, although we now pretty much only use our dehydrators. The freeze dryers were a good fad but the dehydrators are our workhorses in food preservation. Anyway, just wondered if you had found a way around cheeses and foods with certain flavoring additives going bad? Thanks

I did recently dehydrate some pepper jack cheese but have not done anything with it yet, not even powdered it up. So I really have nothing to say at this time about it.

I didn’t realize cheese could be dehydrated!!! May I ask what kind of dehydrator you have and how you go about dehydrating cheese? I have a simple Cosori machine. How do you slice it and at what temp do you set it?

What do you think about dehydrating salsa? I have a pile of half-green tomatoes, tomatillos and onions. Mix together then dry, or separate? Diced? I'm thinking it would recontsitute into a nice thicker salsa. Comments everyone?

I have some dehydrated ground beef & ground chicken still in sealed jars... Meat was fully cooked, drained the grease, rinsed it with really hot water before dehydrating. Stored in mason jars with moisture absorbers and vacuum sealed them and keep in dark cool room (not cold like a fridge, just closing the fents, so no heat coming in in the winter and the AC is on in summer so its cold then). I have been told and from my research I get mixed info... I was told it can be kept on the shelf only for a couple weeks, if storing longer it has to be ikept in freezer.... My point with dehydrating is to keep food on the shelf as there is not enough freezer space... so is my dehydrated meat unsafe to eat? Its been close to 16-18 months
@RainCountryHomestead
@RainCountryHomestead 8 месяцев назад
It does not matter if it is meat, fruit, vegetables or other, dehydrated foods can last for many years. Do not believe the fear mongering, especially with the excess measure you take. I never use oxygen absorbers and while I keep mind in the coolest room of the house, I do not always keep the door closed so some heat can still get in but it never gets hot. I have opened jerky that was seven years old and it was still as good as the day I put it up

Thanks. May I ask if the meat would have gone bad, would I know by the smell or is there also a risk of botulism like with canning? The meat looks like when I just put in jars, smells like when I just put in jars, just have not yet tasted it...
