My son has always enjoyed making meatballs with me, but occasionally I use the Italian style meatballs for subs. I just put them in the crockpot with sauce. I like mine open faced with Provolone in top of a garlic toasted bun. Happy Mother's Day!

Our favorite meatball recipe is meatball stuffed manicotti. I just stuff one or two meatballs into each cooked manicotti, place in marinara sauce, top with cheese and cook until heated through!

OMG, I could just kiss you right now! Even though I always make homemade meatballs, whenever my hubby runs to the grocery store for me, he brings a bag of frozen meatballs home! Apparently, “the sale was too good to pass up!” So right now, I have 3 bags of those little guys taking up precious space in my deep freezer, but thanks to you, not for long!!! Years ago, when I was working full time, I got tired of the usual packed lunch or greasy fast food. I was watching some cooking videos and had a genius moment. I bought some 3 and 4 cup glass containers. These are oven and microwave safe and come with plastic lids for freezer and fridge storage. On the weekends I would make casseroles for the freezer, rotating which type I would make. It’s easy to double the recipe and bake the extra in these smaller dishes. I always make them single serving size. Once cooled I cover and freeze them for a quick lunch option. Doing this provides me with yummy lunches that cost less than drive through for both my finances and my health. I began adding extra veggies which made a difference on my dress size. An added bonus is that I have a few extra minutes of rest on my lunch break that used to be spent driving and waiting in line.

Love meatballs! The commercial ones contain something that gives me killer heartburn. Can't use them. But there is an alternative! ❤❤ I purchase my super lean ground beef when it's on sale. I mix that with ground turkey, chicken, chopped onions, seasonings, bake them, freeze them on a cookie sheet pan & bag them when frozen. Voila! Meatballs when you need them! ❤❤

They even make different kinds of meatballs Italian homestyle. This is such a creative idea. I know the kids will love these. You are always so thought-provoking. I did put pineapple chunks in there. Yummy! I didn't have sour cream but i had ranch dressing so i used it. Wow these are really great recipes. You really get us moms. We live in the country so we can't go out to eat so often. You make some meals so easy and fast. My family loves you. You are always welcome at our table. God bless you and your family

I’m so glad I found you. I’m elderly so I’m glad I will be able to freeze.when I have leftovers like the holidays I make unbreakable plates with food,then I freeze.when frozen I vacuum seal the plates so I never was anything.when I make a stew after eating I put the rest in quart mason jars and throw in the freezer. Or if I have enough I will use my Nesco canner.

You can also make your own homemade meatballs, Diane. I definitely have a homemade meatball recipe that I have made in the past. You can find it by googling my name, Julia Pacheco homemade meatball recipe and it will pop up for you there. But I bet you have a great one that you make! I just came across your channel today when searching for 'what to make for dinner' :) I'm feeling really inspired and am making a riff of your meatball enchilada casserole using what I have... I'm just using ground meat (1/2 lb each ground pork and beef), I have a can of those Bush's fiesta black beans, and that's really all I changed... my family is sure to love this deconstructed taco Tuesday dinner - thank you!!
