Rule of thumb for these types of french pawn structures is that you dont want to block your c pawn with your knight in the opening. Black usually wants to push their c pawn to undermine your center so you want to be able to respond by using your own c pawn as a defender of the d pawn.
Nice game! Just as a note, when you have the knight pair, it's often beneficial to keep the position closed. Opponents bishops are restricted, but your knights can hop all over the board.
Because there is like mate in 10. It's good to follow stockfish but need to understand some of the lines are just wild and stockfish always think both players are going to follow up perfectly
