It's been a while since filmed a whole, typical Homestead day, on the weekend. We'll start by making some breakfast, and freezing some eggs. All the animal waterers were frozen this morning, so that will need to be addressed. Our two chickens are currently producing more eggs than we can currently consume, we're going to try freezing them for the first time. If you know what frozen eggs are best for, let us know down in the comments section. We also have a new challenge this year - refilling our pig waterer. They don't go to butcher until January, so we're going to have to come up with a way to fill their 40 gallon waterer, without hauling buckets all the way back there. I think we're come up with a good solution!

Back in the 70's we had our 1st flock of chickens, I was giving eggs away. Then a week or 2 before Thanksgiving they quit laying. The following year I took one egg, beat it up and poured it into an ice cube tray section., a perfect fit. I beat up a bunch of eggs, filled all of my trays.with the eggs, froze them, popped them out and stored them in Ball Freezer Containers, later we had freezer bags. I now use my Food Saver. We use them for breakfast, baking and whatever we needed eggs for in our recipes Have a blessed day, stay safe and healthy 🥰👍👌🙏🦅🔔🗽🇺🇸

That was with a $2700 Harvest Right Freeze Drier.... (whoa) ru-vid.com/video/%D0%B2%D0%B8%D0%B4%D0%B5%D0%BE-j2Z56JFObqI.html but.... i liked their results (for eggs, onions, peppers.) They powdered the freeze dried scrambled eggs. Then showed that 2 T egg powder to 1 T water reconstituted 1 egg. I loved the concept for shelf life without electricity. Not for sure about meats or other foods? My biggest nightmare is a black out and inventory in the freezer thawing out.

I turn my jars upside down when I store them. They stay cleaner on the inside and are easier to wash when needed for canning next year. Certainly your boxes stored on top does the same thing. I store my jars on the opposite end of my canning shelves from this years canned goods. Next year my canned goods fill the empty spaces I used my jars. And yes i rotate the food. 1st in, 1st out

Like even organizing the jars in your basement....ha! Like anyone had time to organize jars and raise kids :)

I froze whole eggs once and didn't like the texture of the yolks. Now I scramble them first then pour into whatever I'm freezing them in. So if I crack 6 eggs and scramble them, then I will pour evenly into 6 silicone muffin cups or whatever container you want, then once they are frozen, I put them into ziplock bags like you did. I use them for scrambled eggs, baking, or quiche. hope yours do better than mine did when I froze them whole.

I've been doing that for years! The trick for using them in baking is to take them out the evening before you bake. Time wise say 8 to 10 hours and put them out on your counter, not into the refrigerator. One thing I wouldn't do with them is to try and make meringue with them. Good luck 👍.

I have found that if you scramble the eggs with a little salt before freezing, they turn out like fresh. You don't taste the salt and it keep the yolk from being lumpy. Another note - I cut three sides of the plastic from new boxes of jars right at the top edge. I wash and sanitize my jars and lids. Once they are completely dry I add a lid and ring to each jar, put back into the box and pull the plastic over the top. Because I can be forgetful, I also tape a slip of paper that says CLEAN under the plastic before I stack them. Now I have ready to go jars for either canning or freeze drying. Makes everything so much easier for me.

I don’t have chickens..... but when I catch a good sale on eggs, I will crack the entire carton into either a plastic Mayo jar or coffee creamer containers add a smidge of milk and shake it. Then place in the freezer. Handy to take camping this way too so you don’t have to worry about breakage, quicker to get breakfast made and since they are frozen they help keep the cooler cold. But this is for an entire family’s breakfast.

Wanda at Deep South Homestead wisk 2 eggs and freezes them and uses them mostly in recipes. Could ask her if she uses them as scrambled eggs. I'm not sure.... I only use 2 tablespoons of sugar in my sandwich bread. I don't use a breadmaker, but if you like I'll share my recipe. It makes 3 loaves, but occasionally I'll make the 3rd loaf different either by adding seasonings like garlic and herb, or make cinnamon roll bread.

Not 100% sure how old this video is but we have found buying the longest Flexi hose that you can get at your local home depot, Menards or Lowe’s is the ticket to winter watering. Take the hose down with you connected to your water source drain it after each use it folds completely up into a 5 gallon bucket which you can easily store in a laundry room utility sink.

I have read numerous sites and posts on freezing eggs. The way that seems to work best is to whisk egg in dish with 1/8 tsp salt. I freeze mine in silicone muffin "pan". The salt keeps down on the gelatinous texture of the yolk. They work fine for scramble or baking. I vacuum sealed mine. You can also put in ziplock bags. They thaw well putting bag under cold water. I was amazed at difference salt made in texture.

@@anniegaddis5240 Dear Annie, I hope you are taking this not too lightly. One of my friends (45) got infected by her husband who thought all of this was a hoax and refused to wear masks. While he had a very mild course and still making jokes about it all, she came down with it, first with very mild symptoms, too. Day eight everything went downhill, her fingers turned purplish, same with her lips and toes; she started feeling really dizzy and she was advised to go to the hospital immediately. By the time she got there, her oxygen saturation was down to 50% and she was gasping for air - she had developed several blood clots not only in her lungs but her extremities as well! ... I still wonder how her husband told their kids that their mother, my friend, passed away from a hoax. 😢💔💔💔 She should still be with us because she had no pre-existing conditions, lived a healthy lifestyle, was not obese, did not smoke ... except she caught Covid! P.S.: Our daughter (22) also came down hard with it! I hope you will never have to experience this kind of gut-wrenching fear when you know your child is very sick and you are not allowed to see her!

My conveted "investment" of canning jars didn't all arrive in proper boxes - stacking was becoming hazardous. My hubby ordered some replacement canning boxes from U-line, complete w dividers and box flaps, so I can safely store and stack all those odd sizes. They are so sturdy and well worth the cost! I always pack my jars upside down hopefully to better help protect the rims. Can't wait to get to my repacking task! Water and cold temps doesn't look like a fun chore. Glad hubs didn't zip his beard in his jacket. Thanks for great video and well wishes!.

I blind my eggs in a blender and put one cup into plastic sandwich bags and freeze flat. One cup equals 4 eggs. Thaw the night before and cook like normal. You can't tell the difference between them and fresh scrambled eggs even a year later. Freezing whole eggs did not work for me. I only make bread using honey. My wife is allergic to sugar. I don't change my anything with the recipe. Mine calls for 2 tbsp of sugar and I use 2 tbsp honey. Works perfectly.

I separate my eggs in lots of 4 mostly because my pavlova recipe requires 4 egg whites, I put them in a small freezer bag and use them for my pavs, meringues or royal icing, take them out of the freezer and completely thaw before using. You can also freeze them individually in large ice cube trays. The egg yolks need to be whisked lightly then add a 1/4 tsp of salt or sugar to every 4 eggs to stop them gelling, I use the yolks for custards or anything requiring just yolks but if you want scrambled eggs or an omelet combine the whites and yolks and enjoy.

They do work great for baking once thawed though. I haven't tried doing it just to eat them as scrambled yet, as I usually save them for baking if I can't get to the store. I liked doing this now because they may have a limit in the stores at some point again! I take them out of the freezer the day before and put in a little zip lock bag to thaw in the frig. as they have to be thawed first. No matter how hard you try to mix the yolk you can't mix it well after they have been frozen if you don't mix it before putting it in the freezer. It doesn't take long to mix one egg at a time and put into those cute little muffin things. That works great! You'll get there next time you try to make them, it will work fine if you just scramble them first!

I've found I don't like the texture of the yolks when I freeze them whole. What I prefer to do is to mix them together well first. I do a couple at a time, and put in ziplock bags for baking, making omelets, etc. I also use a dozen eggs in the mix when I make food for my 2 Shih Tzus. So, those I crack 12 at a time, mix them together, then put in a gallon bag. I lay the bags down flat, squeeze as much air out as I can, then freeze on cookie sheets. They stack pretty well when done. Or, you can stand them up in the baskets in your freezer.

What did you hunt? Re: freezing eggs - it's my understanding that the eggs should be beaten before frozen . Otherwise the yolks are rubbery and don't mix well. I tried your pickeled coleslaw -what a great adaptation!

I've found scrambled is fine but to make a regular fried, sunny side up style egg, they are rubbery.. Frozen eggs are a godsend, especially when you consider how pale the yolks of store bought eggs are...I guess the high bug content in the diet of home raised chickens, makes the difference.

hi guys with regards to your eggs i THINK when you freeze them you should either separate the whites from the yolks or whisk each one of them before you freeze them as a single unit, i could be wrong - ive not had chickens for years

Still hoping we see you come in with a deer! Our son went hunting this weekend and got one. We have puny deer here in Alabama, but it is still nice to have the venison.

I scramble my eggs b 4 freezing and they are perfect for baking and I make miniature western omelets. I found when you freeze them whole all you can do is fry them hard because both the white and yellow gets weird. They do look cute up in the freezer frozen whole. I also double bag them. Haha! Todd you are sneaky but cute. Just wanting some fresh bread from the wifey. Rachel you little angel you, haha! I knew you'd get out of doing water bowls to make Todd bread. Thanks for the reminder Todd, I need to put up my hose for the winter. What a great invention for flushing the hose. Wow Rachel your loaf of bread came out nice, I agree there are just some things you can not substitute. Yummy Rachel Supper looks amazing...enjoy and have an awesome evening guys!

You will have rubber balls when you freeze those yolks. Mix the heck out of them and then freeze. Laura You can feed those rubber balls to the two chickens. Lol

Frozen eggs are good for any type of scramble, baking, using anywhere an egg substitute would be used.

I’ve seen a few videos that said you need to mix the white and yolk ( like whipping them up for scrambled eggs) before you freeze them otherwise when you thaw to use the yolk is rubbery

I froze eggs 2 ways. I scrambled them and did 1 egg in each freezer container. Then I froze 1 whole egg in each. When I thawed out the scrambled eggs. Those did ok for scrambled and frittata. But when I thawed the whole eggs. The yolks become like gel. They were yucky. So from now on just doing scrambled. 🐔
