Wow, I've never soaked rice, I've never rinsed it, I've never added lemon, I've cooked it until 'done'and not left it to dry out. No wonder mine looks like a big soggy, clumpy mess. Yours looks like grated coconut Steven. A rice masterclass, thank you, I've learned a lot from that. 💖

Hi Steven I went away and followed your instructions for cooking the basmati rice. I was going to question you regarding your comment about checking the rice after a minute and a half but I thought no lets just follow this recipe to the letter. I washed basmati (it was tilda) 4 until it was clear. Poured i and a half appx litre of still spring water into rice after soaking rice for 30 mins. Brought water to the boil turned heat down after 3 mins simmer and within 3 mins rice had expanded and was ready. I now wont have to bring rice to the boil then simmer on low heat for 13 mins and take off heat and leave for another 13 mins .(you have saved me all that effort and I have a fluffier lighter rice. Again many thanks for sharing and saving my quite a long ceremony every time I cook rice. Your rice and now my rice is as good as any indian restaurant. P.S. i ONCE SAW AT THE BACK OF AN INDIAN RESTAURANT THE CHEF TOSSING THE RICE INTO THE AIR FROM A LARGE CIRCULAR SEIVE i NOW KNOW HE WAS GETTING SOME AIR INTO THE RICE

I tried it last night with some chile con carne. I know I slightly over cooked the rice, but my fiance said it was the first time I did not screw up the rice and had no idea..lol Your method is sound, thanks

Hi Steven I cook the absorbtion method but yours is the best cooked rice I have ever seen which means I have now got to go in the kitchen and try your method My rice comes out pretty good but not as good as those long lengths of rice which look so appetising well done and thanks for sharing

I think it's amazing how NONE of the manufacturers of rice tell us this! Or maybe we're misinterpreting their instructions. It took me about 5 years to properly refine my method to this exact same way, man but that's after 15 years of cooking and invariably failing with rice. Good video.

You are a genius! I have tried to cook rice for years, and it has been terrible more often than not--underdone, overdone, gummy, etc. I developed a real rice-phobia! Followed your instructions to a T, and it was perfect. Hoping it wasn't just luck, but I doubt it. I think you've probably just given me a foolproof method of cooking rice!! It was tender, each grain separate...perfect. Maybe the lemon juice is the secret? I don't care, I'm just happy I can finally make delicious rice. The only thing I might change next time is to add more salt than suggested. But thank you for a wonderful video.

Hello Steven, I always rinse the rice at least 3 times. The fourth time, the water is very clean, so I let it sit for half hour in clean water, considering that the rice absorbs it. I love the way you cooked and cooled the rice. Super.

Wow..wow....Your instructions were WONDERFUL (not yelling) I cannot believe it. LOL to myself. I have never had my rice taste like this so fluffy, not nasty and perfectly cooked!!!!!!!!!!!!!!!!! After COVID-19 (and company!), I am making this for my visiting children to their surprise...Mom can make basmati rice after all LOL. Thank you..New subscriber!!!! ...I was in Trinidad and Tobago..moved to Ontario, Canada and have lived here for almost 50 years!.. putting some white oil in the boiling water will help to prevent sticking of rice. You can also add whole garam masala to have great essence.

That's a myth like it is with pasta. Oil floats on top of the water so it doesn't really do anything. A better way is to heat some oil in a pan and fry the rice a little first and then add the water.

nope.... oil just suppresses frothing, doesn't help with sticking part as it just floats on top.

This is actually the best method and healthy too as you are draining away the starch.. in measured water style, the starch stays with the rice. It can make u fat if u eat that regularly, but that depends on the rice.

Hi, they have come up really very well. I am just wondering if you know how much aged were the rice. I am trying with new rice i.e. milled from the crop that was harvested in November, and they cook all mushy.

Perfect rice will always be a challenge. Great vid tho - binge watching your channel at the mo! Is there any particular reason you use a colander and not a sieve? Gentler on the grains??

I love this rice more than I love any other. Wild rice is good though but its apples and oranges, compared to other white rices its far superior with its flavor and aroma, I like how they age it too, sticky rice has its place for deserts desserts desssssserts, but I don't like deiserts, and this rice is the ticket, a lot of people are blind to the concept but you clearly are not, thank you for your participation to enlighten people on the lightest of rice.

Is soaking the rice beforehand really necessary if you are using the excess water method? I have only ever rinsed and soaked the rice if I've used the absorption method, I must admit I do find the excess water method the grains do remain more seperate, but it doesn't emulate as much what you find in the Indian restaurants. Have you done a comparison with rinsing and soaking or just boiling the rise using the method of cooking that you've shown here?

It was a while since I made this video. Soaking rice for 30 minutes or even overnight help the rice cook evenly and reduces cooking time. I pay quite a lot of money for my rice so its important to cook it to optimum levels. Cheaper rice has less variables but I buy the best and respect the cooking process to get the best results.

Hello Steven, this is perfect way to cook basmati. Also if we add a spoon of refined oil while boiling, it will help to separate each grain to not stick together. Also I wonder which brand rice you used in this video? Bcoz picking up an authentic rice is also matter's. Thanks.

So if it cools in the colander for several minutes after cooking, how do you serve it hot with an entree? Do you warm it up somehow? If so how?

traditional south Indian rice measurement - using hands 2 grips of rice is sufficient for one person (portion increases depending on the size of the person's hand).

Generally use a vessel to give as much surface area to the rice as possible, that's the key to draining.

the biggest pan I have is 20 gallons. Maybe suggest the ways you will serve it. I'd think in a little pile with a pat of butter some salt and pepper. I don't normally eat rice as a stand-alone side. It's either in a paella or for sashimi or some other dish where the rice plays a supporting role.

As it's basmati I wouldn't recommend shaping it in a mould like alot of other rice dishes from various countries. Direct serving is best for basmati, if it's cooked well it'll look great plonked onto a plate.

Am looking forward to trying out this method, as my rice cooking is hit and miss. Most things I can cook pretty well, but rice? I think it all depends on the mood of the gods.... Any tips on cooking brown basmati would also be appreciated - as it always turns out under-done or a mushy mess.

Vampire Jack great! Wash brown rice thoroughly and add plenty of water and cook slowly for 20-25 minutes and take out post ala dente and leave stand for 10 mins after draining 😎

Wow …washing this video ,I made the a better basmati than the usual .The first secret is big pot ,so that every rice is heated properly.I didn’t use lemon but it came out nice .

I watched your video last week and I made the rice (my first attempt ever at rice). My wife said it was beginners luck haha. I made some last night but modified it a little by adding more oil and adding cumin seeds and salt at the very end after its finished. Came out perfect again. My wife is impressed thanks to you.

Thank you for showing us how to make basmati rice. So let me get this straight you don't have to wait for the water to steam the rice all the way for the rice to cook? Do I just drain the water before the rice becomes al dente?

Always take the rice out when it's about 90% cooks. The remainder of the cooking will occur because of the temperature and steam.

Black, brown or red rice takes longer so a little more water and lower heat

Carol Valiente hi, that's because it is par boiled/easy cook rice. If you're not 100% sure how to cook rice for perfect results it is ok to use as it is hard to mess up with it. But after watching this video you won't need to use it as you'll now know how to cook rice rice perfectly so only buy the white stuff :(

As long as it's 1121 hybrid basmati (kainet) rice it doesn't matter what the brand is. It's the best.

Nit if you don't want it to dry out. Just microwave some with a lid on for several minutes or steam it over a simmered pan of water in a colander with a lid.

mundo b49 as long as it's a higher called '1121' it doesn't matter. This is a rice with the longest grains in the world. Read the small print on the packet and you will find. Some brands like; Dawat or Kohinoor do 1121 😉
