Hi from England Becky, Today was my youngest son's 23rd birthday and tomorrow my wedding anniversary so we had a family get together. The weather was lovely a beautiful English spring day. My daffodils and snowdrops are in bloom. I cooked up a storm for three days fretting as I usually do that there isn't enough when there was. I'm tired but a happy tired foods all gone and now it's me time. Feet up pot of tea and Becky to watch. Baklava is my absolute favourite treat. I usually make a batch of it every month. The best part is my husband doesn't like it, so it's all mine. Melitzanosalata is just nirvana with pita breads and quite easy to make. My family love Greece been many times. Crete is beautiful the people are phenomenal the food is just divine. Such a beautiful country. Those pita's looked lovely but have been one of those things that I've always just bought but after watching you I might just have a go at making my own. You're an absolute ray of sunshine. The delight you take in the simplest of things is phenomenal. Enjoy

What memories you bring back Becky. When my brother and I were children living overseas after school we would walk into town just as these glorious pita breads were coming out of the oven. We would walk back not really talking, but happily munching on these hot pitas. Thank you for the memory.

Your comment about nutmeg in the meatballs reminded me of a friend who moved to the US from Lebanon. She was surprised we used cinnamon in sweet applications. She had only known it in savory dishes. The culinary world is so diverse.
I had some coworkers come from India to the U.S. and they were grossed out by mint with chocolate in the Girl Scout cookies😂 so funny, they only had experienced mint in savory chutneys and so on.
I always put allspice with meatballs, breakfast sausage and beef stews and people go wild for it. It's not a flavour a lot of people will recognise in a dish but it really adds something
My Daughter just made a meatloaf too, I will tell her about this too so maybe she might want to try it too and know she will like the Greek meat burger you she made.........
To get the diamond shapes on your baklava, you want to slice vertically like you started with, but then you make the next cuts diagonally and it will give you diamonds instead of squares

My first husband was Arabic, so I had to learn how to cook Arabic food.. we would have different parts of his family and / or friends over a few nights a week. Boy, was that under pressure cooking.. but they always ate good. And most wanted food to take home.. before I knew it, I was teaching some of the wives how to cook..
My husband is from Egypt and we live in Egypt now and hummus is a refrigerator staple anything you use mayonnaise for they use hummus. My husband makes it the same way you just made it sometimes Depending on how much he is making he will use vinegar but he always boils the chick peas

I had a friend/neighbor whose family was Greek. The holidays were the best🙌🏻 They always sent over Baklava and other treats💖 When I married her mother sent over some beautiful linens she acquired from Greece. One of my best friends, family came to America from Yugoslavia💖 I was one lucky teenager 🙌🏻💖

Becky to get your triangles on the baklava make the long cuts from the short side to short side of the 9x13 and then start cutting in the corner from short side to long side of the pan if that makes sense. Keep cutting this way until you reach the corner that's catty corner from where you started.
My neighbors always say caddy corner. We grew up saying kitty corner. We laughed at each other then looked it up in the dictionary. Both have the same meaning! 😁
You can cut them in any shape you want for me. I'll be happy to eat them. I had seen someone cut them in diamonds but couldn't begin to tell someone how.
My parents are from Palestine and Jordan. My grandmother used to cook wonderful food for us, and I remember her making homemade pita bread which we enjoyed after school. It was delicious!!! She taught my mom to cook just like her😀We were 5 lucky children!

The easiest way to get the "diamonds" is to make your first cut diagonally corner to corner then equally spaced across the dish, turn your dish, go diagonally across corner to corner again and then make equally spaces cuts again. 🙂 Everything looks sooooo delicious!!! I grew up near a bakery that made pita bread. My mom worked an overnight shift and would stop on her walk home at 7:00 in the morning and bring home still-warm pita bread. It was SO delicious! Watching you bake that bread just brought back all those tasty memories!
Becky you passed an excellent oportunity to try some amazing eggplant dishes 😊😊 Let me tell you, i grew uP hating eggplant. It Is very different to other Vegetables, but as an adult i got to try moussaka, that Is a kind of casserole with all meditarreanean goodness and it changed my mind. You can eat them stuffed, a la parmeggiana, pickled (we have a récipe in argentina called escabeche de berenjena) and even Made into a spread called babaganoush that Is hummus like. Ps: in my family we peel each chickpea for hummus (we are syrian and lebanese) to improve texture. It Is very silky. Im the official chickpea peeler at home 😊

My aunt that has passed away taught me how to cook rice perfectly every time by, Get a baking dish & add your water or stock to it. Like 1 cup rice (long grain) to 2 cups stock & cover & bake for 40 to 45 mins in the oven at 350 F , I swear its perfect everytime. Your dinner looks wonderful. I really miss the Beauitful Green States. I now live in Victoria TX. Big change.
When you’ve run out of tasting spoons, try using a slice of carrot or lettuce leaf, whichever vegetable the dressing will be coating. I have always been intimidated to try baklava, but this gave me the confidence to try it, so thank you. I wanted to share that the best tzatziki sauce I’ve ever made is with my freeze dried cucumbers (I grated and freeze dried a ton this summer.) They rehydrate in the yogurt, it never splits or gets watery, and I have cucumbers to make fresh all year. I think you will like it. Natalie

Greek food is delicious! I actually had Greek take away today😊 I also lived in Greece for a short while and their food is amazing as long as you eat where the locals eat. Not the tourist areas! Also, if you like Levant style mezze like Hummus, try Muhammara. It’s made with grilled red bellpepper and is sweet, spicy, nutty and overall soooo delicious!
Cooking the chickpeas first is key to having a smooth hummus. I made it without cooking them first until I saw on America's Test Kitchen to cook them. It made a big difference on the smoothness.
Sourdough is so easy! I always thought it was going to be difficult but Kim Wadsworth inspired me to try it. We have been enjoying a loaf of sourdough every week for the last few weeks!
The onions in the meatballs can be fried before added and it’s so good! Also adding shredded veggies (pumpkin, zucchini, carrots etc) takes the meatballs to another level😋

Hi Becky! My name is Patty and I have been making Baklava for almost 40 years. My tip for you is this.. To get the diamond shape is simple, cut it diagonally! Start in a corner and go to the opposite corner and work outward from there.

Becky, just a thank you for teaching this old dog a new trick. I must making hummus for a large family dinner, 13! Appetizer. I used tahini to help ground up cans of chicken peas, and ground and ground, cooking them is the answer, I now know what I’ll do next time. It was smooth but I know it’ll be even smoother. Delish!
I love mittle eastern/ arabian food and most of these things are more arabian, not greek. The Baklava from my turkish friend was just so great.. but so sweet with the honey-rosewater syrup on the top. ❤ so nice to be reminded.

Carrot siracha hummus has been the best hummus I've ever tried! We found some at Publix, and then decided to make it ourselves, and wow, how good it is!! If you're into different hummus, definitely worth getting a recipe for it! Cant wait to finish watching this, I love Greek food!

Allow your oven a few minutes in between to get back to temperature(everytime you open the oven door the temp goes down). That will allow the cast iron to get back up to temp too. 😊❤
Oh my Becky, I just made the chicken, pita and Greek salad for dinner and a home made coleslaw, it is divine. Wish I could share a photo. Kids love it too, bonus.
I think this qualifies more as a middle eastern meal rather than a greek meal (humus, pitta, tahini, baqlawa, grilled kofte and some of the spices like cilantro, nutmeg and cumin) skew hard towards Turkey, Lebanon, Israel, Palestine, Jordan and Egypt. The greek salad and tzaziki are a little more authentic, so let's just settle on Mediteratean for a common denominator. Still, as a North American interpretation of anything happening on this side of the planet, all thumbs up 😊 most of us here at the far end of the Med fon't bother making our own Pittas, so kudos to you for going for it. It just needs sweet mint tea or turkish coffee to for this to feel like home to me

Becky, from my many years of cooking tortillas and pita bread, I can tell you that only having about 2 rolled out at a time and doing an assembly line makes a difference. You are correct with that assumption. The older lady that taught me out to make tortillas told me "in Spanish" to never roll out ahead of time.

Becky, once the bread puffs up in the oven...it is done. I have been making pita bread my whole life. I would have rolled all the pitas, then started with the first one. Start baking. Puncture, the edge of the bread and put under the linen. Makes wonderful sandwiches. You can also toast a couple breads and use in your salad like croutons. They look beautiful. Awesome job!!!
