This Episode was recorded on November 23rd, 2022.
Guests: Robert DeSalle & Ian Tattersall (authors of “A Natural History of Beer”).
Dr. Rob DeSalle received his Bachelor’s Degree from the University of Chicago and his Ph.D at Washington University. He is a Curator in the Institute for Comparative Genomics, where he leads a group of researchers working on molecular systematics, molecular evolution, population and conservation genetics, and evolutionary genomics of a wide array of life forms ranging from viruses, bacteria, corals, and plants, to all kinds of insects, reptiles, and mammals. Dr. DeSalle has worked closely with colleagues from Cold Spring Harbor Labs, New York University, and the New York Botanical Garden on seed plant genomics and development of tools to establish gene family membership on a genome- wide scale.
Dr. Ian Tattersall is a paleoanthropologist and an emeritus curator with the American Museum of Natural History in New York City. Currently, his major research focus is on how modern humans acquired a unique style of thinking, and how we managed to dominate the planet while other human species went extinct.
Dr. Tattersall and Dr. DeSalle put their joint expertise together to create the book: “A Natural History of Beer.” The text peruses the historical record and traverses the globe for engaging and often surprising stories about beer. The two authors explain how we came to drink beer, what ingredients combine to give beers their distinctive flavours, how beer’s chemistry works at the molecular level, and how various societies have regulated the production and consumption of beer.
