I make something pretty close to this, Nisha. I add cauliflower florettes, sliced carrots, diamond-chopped red capsicum and cubed potatoes, and sometimes shredded baby spinach. You know, to bulk it up "a bit"! Scrummy-umptious all on it's own, or with rice, chappattis, parottas, naans, even thosais! Sooo versatile, and oh sooo good!
Advice as an indian: *don't use garam masala at last* . Not only it will heat your body and increase acidity in your stomach, you won't even get as much of it's flavour as you will if you had mixed and fried it in the beginning with other base spices and veggies like here with onions. Garam masala, as the name says ("Garam" in Hindi means "Hot") heats up the body with its spicy and mixed flavour made from the mixture of 36 kinds of different hot spices. Frying it with other aromatics will mix it's rich flavour with the food well and will become easy to digest as well for your body. ❤

Our family recipe includes sesame seeds in the spice blend and I thought ours was the only one until I saw you added tahini. Shows that adding new ingredients doesn't deviate from the original 👍
This. Looks. Fantastic. And I feel you on the peppers. I made some home made penne alla vodka earlier today and rubbed my eye even after I washed my hands. I use chili peppers in my sauce. Left eye still has a slight burn lol
Indian cuisine is the easiest to explore for anyone trying to go vegetarian or vegan. You'll find infinite authentic recepies and make them as they are with little to no replacements of ingredients (diary products). And you don't feel vegan or like you are eating anything less than a regular meal and skipping out on anything tasty. A lot of the indian cultures are Vegetarian or vegan. So it's a big part of our cuisine and it's developed through ages with all kinds of recipes new and old.

That looks amazing. similar to some of the best curries I've thrown together when I didn't have much in the way of ready made food but a can of chickpeas and coconut milk in the pantry.
Not non-traditional. We make this curry in my region. But instead of coconut milk we grind the grated coconut after roasting with some spices and then add the whole thing to chick pea .
I know I will love this bc I love your BEAN DIP. By the way, can you make a play list of Recipes which does NOT require using Stove or Oven ? ______. I try NOT to use stove bc it make my Little Apt get too Hot during the Summers. TIA.
This is certainly inspired by chana masala but it would be inaccurate to call it that. It has several non traditional ingredients like coconut milk, tahini, leafy greens, different spices. My mom makes chana masala regularly and these taste quite different and this version is creamy, where chana masala is more like a thick gravy and tangy.

@@karinoshea3330 Np! I think red bell pepper would also be a nice addition. If you want to alter the flavor profile a bit more pumpkin might resemble texture.
