She’s vegan not vegetarian, but Rainbow Plant Life has a treasure trove of amazing recipes! So many unique ways to make vegan cooking not boring. My meat eating partner has enjoyed all the recipes I’ve made. RPL probably has a blog post specifically for her recipes that meat eaters would love so maybe start there.

She just started doing this meal plan service that’s like £12 a month, every week you get 4 recipes, a grocery list structured by where you would find the items in the supermarket, a meal prepping schedule and it’s been a game changer for us so far! Saved sooo much time on meal planning and cooking for the week

I just signed up for her meal plan. I’m vegan, but not very restrictive in what I eat beyond that. I’m trying to make dinners my very health conscious boyfriend will eat because eating separate meals every night is a drag. We’ve had 2 of the 3 meals for the first week and they’re really good! I can’t tell yet whether it’ll actually save me any money, so I’m definitely curious about that.

It's so refreshing to see someone have a normal diet. Yes, to the chocolate. Yes, to the cake. Yes, to the random snacks throughout the day. I always watch other people's and feel so guilty for eating what I want and enjoying food, but this is so realistic (for me), and as a fellow fussy eater, I salute you 😂 Side note: I also use Hello Fresh, and have you tried that Korean fried rice yet? Well done for your honesty and vulnerability towards your diet/ meat consumption, Hannah! As a vegan, I think you're doing a great job to challenge your eating habits in a way that feels manageable and sustainable for you, even as a picky eater. Any reduction in the consumption of animal products is positive progress, so try your best not to compare yourself to others. I also agree with others in the comment section - before I went veggie (and then eventually vegan) I was also eating meat up to 3 times a day and struggled to think of recipes that would be filling without the meat but I just started substituting a meat item for something else and kept the recipe itself the same (for example, making a chicken curry but swapping the chicken for chickpeas). Once I discovered the ease of small substitutes I felt waaaay more confident in experimenting with new recipes/ flavours going forward!

I actually started Hellofresh last year after seeing a criticism of it 😆 I think I don't tend to listen to adverts so much but that made me want to find out for myself of it was good or bad lol. Have to say though, I love it. I'm a chronically ill mum who also has food sensory issues and issues with memory and executive function - and it has been a game changer! It helps me so much with cooking and eating. I do wish it was cheaper, but it works out ok value for me as it stops me forgetting about food and wasting it or giving up and getting takeaway every week. I also found it has really helped me to eat a much wider variety of things as I can choose meals that are largely ingredients I like but with some additions of new things. I feel a lot healthier too. One complaint I have is that there could be a wider variety of veggie and vegan food. Like it's cool that there are categories for Family Friendly and Quick meals etc but that doesn't help me at all if they're all meat! I do think they need to work on their ethics and being more eco friendly but overall as a service I find it super good and helpful, personally. P.s. I also had the veggie burger from this video and it was amazing lol. Didn't use truffle though because truffle is an evil flavour and should be banned 😂
@pirlie

True, truffle is a bit evil! I think there are some HelloFresh like food service alternatives which do far more veggie options while being the same amount of convenient. Could be worth a google if they are available in your region. Good luck! 🤞

When it comes to trying to eat less meat I have some (unsolicited) advice as a meat eater living with a vegetarian. The missing protein is the issue and it can be overwhelming figuring out what to eat especially as someone who might have issues with new food and textures. Considering your protein source first and then deciding what to cook with it can help build a satisfying meal. So here is what I cook. 1. Eggs, they are a big part in my diet especiall as someone with some stomach issues as they are easily digestible in comparison to other options such as beans. And I do incorporate them in my dinner through quiches, Shakshuka (a Middle Eastern breakfast dish) and in salads. 2. lentils. I don’t know how much you like them or can eat them (because of your stoma) but recipes such as dhal (Indian lentil curry), lentil soups (can be blended if you do not like the texture) or as a meat replacement in Bolognese or cottage pie work great. 3. Chickpeas. I eat them way more frequently than beans in salads, as falafel, in Curries, and also in some pasta recipes. 4. Tofu. I know this is a tough one but not all tofu is created equal! Tofu making is similar to cheese making and as with cheese the end result can differ a lot in texture. My personal advice is to go to your local Asian supermarket and buy the fresh one that is in liquid. It tastes way better. The one I can buy in the regular (German) supermarket is dry, crumbly, has a weird aftertaste and can only be used as a ground meat replacement in more heavily seasoned recipes. The fresh one is softer and tastes better. Also consider trying fried tofu, also found at the Asian grocery store, it’s denser but not dry and has a bit more of a meaty mouthfeel. 5. Meat replacement. This something I think many non vegetarians do not consider beacause it means compromising on texture and taste in comparison to actual meat. The one thing I would still recommend are soy chunks. The dried kind only consisting out of textuized soy protein. They get cooked in some broth and can then be seared/fried or otherwise added. The one that has the texture of ground beef is the one where the switch is the least noticeable and could be a great addition to your pantry. The chunky kind can be used as a chicken substitute but it will be noticeable in the texture and it 100% has to be seasoned well but they are a great addition to my pantry especially because they do not have to be refrigerated and last a long time and are relatively cheap. I hope this can be helpful to someone. ☺️

Being aware of your meat consumption and trying to make changes is v cool! I am not 100% vegetarian but I don't personally buy meat (with the exception of chicken soup if I/my fam is sick). A nice filling veggie meal: curry. I make it out of chickpeas, potato, carrot, bell pepper, onion, ginger, garlic, tomato paste and eat with rice. Super easy to make (you can use a prepackaged curry powder or make your own mix). Other things that come to mind: lentil/mushroom shepherd's pie, pumpkin/squash soup- you can go with lime, cardamom, star anise, clove and coconut milk for a zesty soup, or potato and some celery + good veggie stock for a heartier soup. Add yogurt to eat. Tacos/burritos with well flavored beans + all the usual fixings, chili with bell peppers, onion, corn, beans... there are so many options for hearty veg food! It's just a matter of building a foundation of easy/repeatable recipes. You can def do it. I recommend pickuplimes here on youtube for some veggie inspiration- she is vegan but you can opt for butter, yogurt, milk, eggs if you want and still use her recipes as a base.

I can't relate as probably the opposite of a fussy eater (grew up in France and Norway and was fed everything! Including snails, mussels and so on) but appriciate the insight! A good quick breakfast I like is overnight oats as I can prep ahead for a week at a time. And then I just add some frozen berries in the morning and top with honey or peanut butter. 😊

Was looking for a comment like this. I also discovered that you can just soak the oats in hot water and then add banana and nuts after 10minutes, so my morning routine is to put the kettle on and make tea and soak the oats, go to the bathroom and then have breakfast.

I can recommend trying to use minced meat alternatives e.g. soy or sunflower. You just have to soak them in water or vegetable broth for about 10 minutes, squeez any excess water out, fry it and deglaze it with soy sauce. After that you can use it just like minced meat

@@morehannah As a lazy vegan, this is my go-to meal prep dish. You can even skip the "soak, rinse, fry" steps with vegan Bolognese, and just soak the "minced soy" in the tomato sauce (adding a little extra water). With the fine-grained stuff, I find they still get to a good texture that way, and frying a lot of it just takes way too long. But if you're not willing to compromise on taste (or trying to persuade Dan :D) you might be better off doing the full procedure 😅 For the chunkier variants, you have to do it the long way anyways.

I grew up and am a vegetarian, so I have a better background than some on nice meals, but I also love me a good plate of beige food. For me, there are a few ways to feel satisfyingly full, one is fiber, one is protein. For Fiber, as I don't really enjoy wholewheat stuff, I tend to use a lot of veggies, and I have psyllium husks, which I eat most mornings in some yoghurt with jam/müsli/syrup. Very cool to see them swell up, and understand, that that is what they do in my belly as well. For protein (as I don't eat meat) I use nutbutter (for dipping), legumes, a lot of cheese. My tips for cooking are basically "if you find a food you like, run with it": I'm in my sweet potato phase, in the last two weeks I made a dip out of them, ate several with a creme fraiche sauce, baked them with feta, had them as fries, and had them in a salad. Apropos: I always have a salad dressing in the fridge, because I cannot be bothered to chop veggies AND make a dressing, but I can manage one, so I eat a lot of salad when I have dressing in the fridge. My "plate" looks like this: one third salad (with veggies, sometimes mozzarella as protein), one third starchy stuff (rice, noodles, bread, potatoes), one third sauce/veggies/dips/cheese/everything else. Oh my god I just realised my imaginary plate is basically a veggieburger. With sweet potatoes. Ha!

Ah Hannah this video made me feel so reassured! I have ARFID (basically an extreme version of picky eating) and had an amazing CBT/hypnotherapy session to help me with it in July and it's so much better now! But all of those years I was so ashamed of avoiding more "grown-up" foods and feeling like all I wanted was a beige buffet (related hard to the six year old's birthday party) so thanks so much for making it just that little bit more normal ♥️

I've been vegan for six years and vegetarian for seven years before that, so by this point I've figured out how to build filling and nutritious meals. An important thing to remember is to add a dense protein source to every meal - think beans, lentils, tofu, nuts/seeds - and lots of fiber! For example, a combo that I have almost every day is wheat pasta (just because it has more protein and fiber but you can totally do white pasta if that's your prefence), garbanzo beans, and cooked broccoli with some kind of sauce. I get a lot of meal ideas from following anti-diet vegans who make meals that align with my personal tastes, so I would definitely recommend doing that if you want more vegetarian meal ideas. It takes time and practice, which is nothing to be ashamed of. Also, this video made me want cake 🧁

I would love to see a what I eat in a week, and I hope you keep having fun and enjoying the veggie meals! It is a lot different style of cooking. I think it was six months before I really had it figured out, but I think the key is to include fats. Meat tends to have a decent amount and then the natural veggie substitutes for protein like beans and whole grains don't. So you have to make sure when you make sauces and dips that you're adding olive oil or tahini or coconut milk or nuts so that you're getting stuff to satiate you. Or just buy meat substitutes that have some fat, but I know those can be expensive.

This is very relatable 😂 Being vegetarian is easy if you are able to eat cheese or eggs. Both of those are high in protein and will make you feel full. I cannot do dairy unfortunately but some healthier habits have been to eat fruit as my dessert/snack and dark chocolate if I’m feeling the need for chocolate. Peanut butter/nut butter on toast or oatmeal will also help with protein/feeling full. I also eat seaweed or homemade popcorn w/Tajin and avocado oil as my snack alternative to chips. What I’ve been working on this year is eating more varieties of veggies and probiotics as that’s good for your gut :)

hello fresh is not available where i live and i’m a little mad about it ngl. i think it would make life so much easier!! living alone, cooking for one feels a bit like a waste of time when you can get by with very quick stuff (a habit and mindset i Really need to get out of soon). super enjoyed watching this! eating “more healthy” doesn’t have to be all or nothing.

THANK YOU HANNAH. I'm picky too and it's so nice to see someone talk about it. There is so much shame surrounding picky eaters and people are so mean to us. I keep it as private as I can for that reason. I wish I could eat whatever I wanted, but I just can't. Thank you thank you thank you. PS - the fact that you'll eat salad is impressive though. I won't touch salad with a 10 foot pole.

My husband and I both have chronic fatigue. (The fatigue is not related to our diet). We are starting to get better, but we have to cook really easy meals. All are filling and vegan. Here are a few for anyone wanting some easy options: 1. Stir fry (a package from the store) + some stir fry sauce + some type of protein (usually chickpeas), + stir fry noodles. Make sure there is still oil in it or add a bit of oil (sesame is my favourite for this) or you may not feel full long. 2. Tacos! We usually use a can of black beans, corn, and onions as the main cooked filling (just cooked in a pan with some oil and taco (or fajita) seasoning and add whatever veggies into the tortilla. Good vegan cheese options for this include violife (cheddar) and cathedral city plant based (which tastes cheddary to me). This mix can also be added to rice (uncle ben's even has a mexican rice in a microwavable packet) and/or over some tortilla chips with one of the vegan cheeses above or real cheese if just veggie. Also, guacamole and/or tortilla chip crumbles can be added as desired. 3. Ready Indian meals. M&S store brand has a few vegan options. Since India has a long history of vegetarianism, most meals will leave you full and satisfied. 4. Pasta! Vegan pesto, peas, spinach, sundried tomatoes and vegan mushroom torillini with added chickpeas and/or nutritional yeast is so delicious to me. Also, red kidney beans, red pasta sauce, and whatever veggies are safe for you spinach, mushrooms, onions and occasionally peppers for us) 5. Soup (make sure there are some beans or lentils in there or else you won't feel full) 6. Nut roast: Artisan Nature makes a nutloaf that is only about £2.60 where I am (south coast of England). Easy to make and goes well with other traditional roast foods. Since it isn't as expensive as other options, it may be worth trying for discerning eaters. 7. Veggie wraps or bowls or whatever brings you joy. Safe veggies + safe spice that go together + some salt + some kind of oil + safe nut (I am fond of cashews). Put in some sort of container you can cover, and shake. Place on pan and roast. Put in wrap with whatever sauces you want and maybe some lettuce or something or eat over rice or eat over noodles, etc. If you skip nuts, add some beans or lentils. Also, hummus can be deliciously added. In general, you will fill full if you have fibre, protein, and fat. Try to make sure you have some of each, and you should be okay. If you are going fully vegan, you may want to also make sure you are getting protein from a variety of sources.

I loved this! I also love watching what I eat in a day videos, thinking oh this will inspire me, and then I just feel guilt that I'm not eating as healthily as everyone else because I'm also a picky eater (and annoyed about it). Its so nice to see someone making videos about food in a way that doesn't just set off shame thoughts, and see someone else who is also discovering how to change their diet in a way that works for them. Love the positivity of it all

Soooo many people happy dance when they eat. And it’s also contagious, kind of like yawning. If someone does it in a group, someone else almost always follows without realizing. It’s one of my favourite things to notice. For vegan food, Pick Up Limes is an awesome RU-vid channel. Their app is amazing.

It's just me, and I'm a lazy chef. I'll make a big pot or pan of something on the weekend and eat that all week for lunch and dinner, and have one-off meals on the weekends like a nice piece of fish with veggies. For breakfast, I eat Rice Chex or a muffin or toast and jam about 99% of the year. If I'm still hungry, I snack. :) Loved seeing your routine! Like you, I just drink water, but mine is almost always room temperature. X) Oh, and I love your new spice rack! :)

I can totally relate to the snack after your child’s bedtime. Since breastfeeding I need that sugar intake after I nurse my son before he goes to sleep. I started keeping chocolate bars in that house so I could munch on a piece right away. I don’t know what I’m going to do when I’m done breastfeeding since it’s my routine.

Yep I so relate. If I don't try hard my diet will just be toast for breakfast, sandwich for lunch & pasta or potato for tea - plus about 3 sweet snacks across the day. But I've realised how bad that can be for eating veg and if I'm not careful I end up having no vitamins or protein and it does affect my energy a lot now hitting 30. I'm so impressed how easily some people have a varied diet though - I wonder if it's upbringing as my family never had time to cook loads of meals throughout the week so I'm used to more ready prepped food. Also would like to eat less meat than I do, but worry as I don't like a lot of non-meat protein sources that much (nuts, avocado etc). Linda McCartney sausages and quorn picnic snacks are good ones to fit in though.

So I used to not eat any fruit or vegetables until I was about 23…now I pretty much eat any vege and some fruits. Still have texture issues with fruit and salads (tomatoes!). But having a baby is making me try more fruits now. For vege meals I definitely recommend vegetarian Indian meals; lots of veges, lentils and flavour!

My mum has such an array of spices, from good ol' basil, oregano, curry powder and the like, to some really weird ones, though can't remember off the top of my head. They're usually bought because my dad found a recipe in a paper, and showed it to my mum. They made the recipe once or twice then forgot about it!

Since having children, I also need snacks in the evening after the kids bedtime. I feel it's the only part of the day I can eat without any little person wanting some, so I really enjoy it! I had to cut back though coz I was going overboard with the snacking! 😅

don't feel guilty, forming new habits takes time! especially when you're trying to establish a whole new diet - it's a game of trial and error! it's a lot like exercise - if you go too hard you'll probably just fall off the wagon, but if you make small sustainable changes then they're more likely to become second nature and not a struggle 🥰 you'll find new faves!

i eat so similarly. my go too food is toast, but usually with peanut putter and cinnamon sugar. i have cereal when ever i'm able to get ahold of one that i can have [no gluten, corn, potato, or cane sugar makes finding cereal that tastes good to me incredibly difficult]. i have EDS and Gastroparesis and have to be really careful with what i eat, dinners are often a collection of snacks. recently my go too has been chicken nuggets and sweet potato fries. i'm currently eating cereal right outta the bag 😂

If you're interested in reducing animal foods, a couple easy swaps would be plant-based butter and Soymilk instead of cow milk for your cereal. There's a bunch of burger patties these days too so that could be an easy swap. Personally I like the impossible brand - it's got the most neutral flavor to me.

Ehhh... Let's say it like this, I just bought a freezer (shared flat with one other person and we only have one of those mini fridge things), so that I can buy frozen veggies and things so that I don't just eat instant noodles, toast and pasta with cheese. [basically thinking that with a freezer I can batch cook and have more meals on hand for days when I don't have spoons]
