In this video, I show you how to make the most incredible donuts in the world!
INGREDIENTS:
Dough:
Milk (1 cup)
Yeast (8g / 1 tbsp)
Sugar (60g / 5 tbsp)
Egg (1)
Egg yolk (1)
Tanzhong:
Flour (1 tbsp)
Water (6 tbsp)
Flour (450g / 4 cups)
Salt (4g / 1 tsp)
Butter (80g / 0.5 cup)
Glaze:
Icing sugar (600g / 3.5 cups)
Water/Milk (1/2 cup)
Vanilla (1.5 tsp)
Salt (0.5 tsp)
DIRECTIONS:
Dough:
1. Mix your milk, yeast, sugar, and eggs thoroughly until all the sugar is dissolved.
2. Mix your flour and salt and whisk until well combined.
3. Melt your butter until its slightly softened (if taken directly from the fridge)
4. For the tanzhong paste, add your flour to a pan on low heat, add your water and mix vigorously until a thick, smooth paste is formed.
5. In a bowl, add your wet ingredients. Use a hand mixer or a stand mixer, or a spatula if done by hand. Start the kneading process and slowly add your flour mixture until a rough dough ball forms.
6. Then steadily add your butter in phases waiting until it's all combined and then finally add your tanzhong paste and mix again.
7. Knead this dough for around 5 minutes in a stand mixer, 8-10 minutes with a hand mixer, and around 15 -20 minutes if done by hand.
8. When the dough isn't sticky anymore, it's ready. Take it out into an oiled bowl and cover it with a cloth and let it proof for around an hour or until the size is doubled.
9. Punch out the gas, flour your counter top and drop your dough onto it.
10. Flour the top and roll it out until it's about an inch thick. Use your large mold to punch out circles.
11. Cut your baking paper into squares and flour it generously to avoid sticking. Add your dough circle onto the paper and then cut out the inner hole with the smaller mold. Repeat for all your dough. The smaller pieces can be mini donuts or added to the regular dough.
12. Let these shaped donuts proof for around 45 minutes or until they puff up.
13. In a large pot, heat your oil to 150 c and drop in your donuts carefully. Cook them for 2-3 minutes on each side or until the color is golden brown and then remove them on a wire rack to chill.
Glaze:
1. Add your icing sugar to a large bowl and then add your hot water and mix aggressively. You can add more water if the consistency isn't right.
2. Take your cool donuts and dip them into the glaze and using two forks, flip them to coat all sides.
3. Remove from glaze, shake to remove the excess, and let solidify on a wire rack. Repeat for all your donuts.
4. Serve them warm (or chilled) and enjoy!
