Pineapple Coconut Cream Pie
Ingredients:
1 (10 inch) pre-baked pie crust
2 X (20-ounce) can crushed pineapple, drained
2 cups of sweetened shredded coconut
2 cups of heavy cream
1 (14-ounce) can sweetened condensed milk
1/2 cup cornstarch
1/2 cup water
2 egg yolks
1 tablespoon vanilla extract
Whipped cream and toasted coconut flakes for garnish (optional)
Instructions:
In a large mixing bowl, combine the crushed pineapple and sweetened shredded coconut. Mix well and set aside.
1. In a separate bowl, whisk together the heavy cream, sweetened condensed milk, cornstarch, water, egg yolks, and vanilla extract.
2. Pour the mixture into a medium saucepan and cook over medium heat, whisking constantly, until the mixture thickens and begins to boil.
3. Remove from heat and pour the mixture over the pineapple and coconut mixture. Stir until well combined.
4. Pour the mixture into the pre-baked pie crust and smooth the top with a spatula.
5. Cover the pie with plastic wrap and chill in the refrigerator for at least 2 hours or until set.
6. To serve, garnish with whipped cream and toasted coconut flakes, if desired.
