Because you dont replace the thousand of plants and mushrooms varieties that were hosted in a100 years old forest and will dry out without it in the next 2 years after the shaving with replanting just 1 single variety of a tree.. you get a plantation, which is very close to a corn field if you look at the diversity of species it contains.. its very boring to have a walk in a corn field.

Life diversity explodes! Even the large species - ungulates, bears, felines, etc. - find the sunny meadows and briar patches irresistible! Wild food sources become abundant! You don't. You are replanting a lot of treas for every one you take out. Also you don't clear-cut an area but leave some treas uncut sand replant so you get a variety of ages in one area
